Maybe the Newton water vs. Sudbury water in the dough theory or maybe I am just being an over anal analyst of the dough? Either case both locations have great pizza. I would test the water at both locations and see affects on the dough and which water had better preferred pizza dough qualities ? Maybe then filter the water or Bri g a 5 gallon jug of the better water for the dough ? Maybe the dirty Boston water or New York water in Bew York bagels theory? Or maybe who cares ?
