When we arrived, all of the tables inside were full, so we selected a table outside. There were three tables outside We sat down and then the server came out to tell us that there was a table inside available. Great! We sat down at the indoor table and we were both excited to start this new experience. It appeared that the staff did not speak English well so we just figured we can go and start building our bowls. The bowls are kept inside a heated or sanitized glass cabinet located next to the front entrance. Grab your own individual tongs also. There are two main coolers.. There are veggies and proteins on the left-hand side. Pointing out that many of the labels are not in the correct spot so don't be mistaken with the item that you're selecting. The cooler on the right hand side has a sliding glass door so only one person can select items at a time. Make sure your eyes aren't bigger than your actual appetite because the weight adds up quickly. If I could do it all over, I would probably decrease my noodles because it was too much for me. I picked the Ramen, which came in one preset serving. Next up, take your bowl to the counter and let the staff know which broth you would like. I selected the classic bone broth mild Spice level. My friend got the medium, and I think it was a little too spicy for her and normally she could handle spice. After they took our bowls back to the kitchen, we visited the sauce bar and made a small bowl of sauce and toppings, green onions, and cilantro etc. When we returned to our table, there were two water cups for us brought by the staff. My broth was decent, and I like being able to select my own toppings with the vegetables and meats that I enjoy. I added a little bit of the sauce mixture that I made. Came in on Veterans Day around dinner time, it was our first time here. My party came at 5:45PM and waited half an hour to even get our food. Other tables experienced the same thing, with seating being delayed, clearing the tables, getting to go boxes. Each table would have one person's order sent out and would wait 7-10 minutes before the whole party received their bowl. They were severely understaffed, with 2-3 people working and one kitchen staff doing the dishes. I also saw the staff were not very hygienic, with touching their face and not using good hand hygiene in par with the standards of the food handlers permit. They should've stopped accepting the online orders because that added more congestion to the wait time. The malatang itself was good. This is the dry pot that I've been craving since leaving NYC. I've had other dry hot in the area, but some of them were filled with so much sesame paste that it overpowered the entire dish. These are their places did not provide the classic Mala flavor that I'm used to. It's your classic pick your own, weigh, and prepare based on your request.
