Half my salad had not just wilted but borderline rotten greens.
    Kinga B.

Absolutely unacceptable salad. I got a salad to go that cost around $25 . It was mostly inedible due to rotten ( not just wilted) greens . Salmon was very overcooked and dry . How is even acceptable or allowed by food industry to serve such crap and charge for it. Disgusting. I'm actually pissed . I don't recommend this place.

First off, I'd give the ambience of the hotel and the remodel of this historic building a 12/10. What a nice gem they have restored and brought to the Canon City community and tourists alike. We loved everything about the hotel, the main lobby, the side bar, the restaurant and of course the bonus being the Speakeasy in the back! Living in Pueblo we have nothing that matches the vibe of this place and you feel like you're at an upscale restaurant in Denver, so if you're looking for that feel this is the place. We had drinks in the main bar before dinner and they were good. The bartender was very friendly and flexible with our orders. We then went to the restaurant for my birthday dinner. First off, the bread and butter they give you is top notch. I loveeeed the butter and the bread had everything seasoning on it and it was very fresh. We had to ask for another round! Salad came next which was also really good and fresh, and the balsamic dressing was tasty too. I ordered a filet that may have been a bit overdone for medium, but it was still good and the potatoes and asparagus were pretty good too. My husband had the prime rib and said it was an 8/10, so definitely pretty good too! Our table also had the salmon which was very good was well. I think the only negative was the slow service in the restaurant. The restaurant wasn't packed, and there seemed to be a lot of waitresses, however none of them were very attentive to our table, and we had to call them over a few times for assistance. Going to an upscale restaurant you expect the service to match the meal and the environment. Pro tip - walk through the bookshelf into the Speakeasy for a night cap. You won't regret it. Overall a really good spot and I highly recommend it for anyone living in the surrounding areas or tourists passing through! Well done Canon City.

Had a Mediterranean salad with chicken piccata and steak that was perfect. Finished off with a flourless chocolate tort. Everything was excellent. Then had a great alcoholic free drink after the meal in the speakeasy. Was really worth it.

This is wonderful place to enjoy a step back in time in a beautiful place. The remodel of this old hotel and restaurant is amazing! To start out...We Entered the bookcase to the speakeasy. It is a great place with wonderful drinks and a great feel in the war room. The service is great! In the restaurant was again not a disappointment at all. Our server was Tagean, she was great, very knowledgeable, efficient and friendly. We ordered the crab and spinach dip followed by the wedge salad. Final was the green chili pork. We enjoyed all. Very tasty. The surroundings of the old proctored of Canon City are great. All the details that are in the restaurant and speakeasy as spectacular. We highly recommend not only the restaurant but a stay at the St Cloud Hotel. It is worth a trip to this small city that allows for a wonderful experience.

Shocked. The place is 5 star completely. Had the bison steak and got to visit the hidden bar! Don't forget to ask about it !! Jeremy is the manager that will come around to visit at the end of your meal and one of an amazing place. We are world travelers and have been pleasantly shocked to find this place. Higher end with expectations exceeded. !! Thank you Tegan for great service and the hidden bar tour !!!

We live in the area and decided to stop by for breakfast one day. I loved the chicken and waffles, a very nice batter with a crunch on the chicken and a light sweetness to the waffles. This is a very unique experience in this beautiful hotel. I highly recommended ask for a tour of this historic hotel you won't be disappointed. Be sure to check out the pictures on the walls and visit the bar!

I saw this place on the map, read the reviews and gave a chance! We were not disappointed! The food was amazing. Everyone loved what they ordered. Our friend said the chicken sandwich was the best ever, my husband had the Butternut Squash Brussels salad and I had the mini Gyro Tacos. Complements to the chef! Definitely recommend. Service was great and friendly! Reasonably priced! Great ambiance.

Loved everything about this place! Had an amazing perfectly prepared steak dinner, served by friendly staff in the expertly restored 1887 restaurant, we also had before dinner drinks in the lobby bar and finished up the night in their secret War Room bar.

The bar located near the entrance. And remember to ask about the War Room.

Plenty of horseradish but I especially like the chopped celery. My New York strip was tasty and cooked exactly to the temperature I ordered. The "European" flight wine paring was perfect. Service was great. Evan was polite and attentive despite doing double duty as bartender and server. However, for reasons unclear to me but a very common experience, it was a very long wait between the time I received the dessert menu and the time someone took my order. This happens too frequently, once the entree is delivered the server forgets the table. When it finally arrived, the fresh berries and cream dessert was disappointing. It seemed like the berries had been frozen rather than fresh. When I observed this, a server said it was because they were macerated in alcohol over night. I ate only about 1/3 and thought it should have been removed from the check after I complained, but it was not. Otherwise, an excellent experience but not as good as it should have been.

We always sit at the bar and these are the few annoying things that happened the last few times we came. -we didn't get silverware until 5 minutes passed after our steak was delivered. -the owner was arm wrestling one of his friends, around 7pm, a full restaurant trying to enjoy their dinner, turning this into a frat house/sports bar with yelling and carrying on. This actually shocked me snd was the final nail in the coffin for me. -ordering a dirty martini and it actually having cinnamon liquor in it. Lol. The bartender didn't set up his own bar and blamed it on the staff from earlier in the evening. No biggie, but this bartender seems to fumble a LOT. Just own it Bro, we've been served by you many nights, and you aren't our favorite for a reason. We've been going to Cowboy Star for the bar service. Just a step above. It's a bummer, we used to LOVE this place.

Everything was perfect. Excellent atmosphere. Gorgeous at sunset. The elevated / staggered booth sitting is interesting and very private. Everyone in the restaurant can see the mountains. Food was all hot and INCREDIBLE cooked to perfection (unlike previous reviews we did not have a problem with this.) We ordered 1/2 dozen oysters, elk tenderloin (our favorite), aged Waygu steak, scallops, waygu tartare, mushrooms, and whipped potatoes, along with 3 out of 5 desserts. Plating is excellent now compared to earlier reviews and pricing did not bother us. Plenty of parking including handicapped. Staff / service was excellent giving us a rundown of the menu immediately/asking for dietary restrictions. Everything came out well-paced, again we did not have any problems unlike previous reviews. Waitress was a little nervous but giving her grace since it was the first week! Free appetizer, dessert truffles, gift, and upstairs dessert/drink upstairs were a wonderful touch. It seems they have worked out some kinks - we were blown away! We will be back soon!!

We had a…read morereservation for a party of 7 and were initially seated at a table for 6, but after asking the host, they did move us, which we appreciated. Drink orders were taken right away, and everyone received their drinks except my fiancé. He eventually just ordered a different drink instead. We placed our food order around 7:15, but the appetizers came out one by one instead of together, which already set the tone for the night. Our main courses didn't arrive until around 9:00 PM, almost two hours later. On top of that, two of our dishes were completely forgotten and had to be re-rung and brought out even later. We didn't plan on spending over two hours at dinner, but at that point we didn't have much of a choice. The food itself was actually very good, but not for the price. For a party of 7 where everyone only had one drink, our bill came out to over $1,450, nearly $210 per person. At that price point, there really isn't room for this many mistakes. It was also very obvious that the restaurant was understaffed. One woman was running the entire top floor by herself, taking orders and making drinks. That's not fair to the staff or the guests. Overall, the potential is there, but the service and staffing need major improvement, especially for such an expensive dining experience.
