The environment and vibe has the potential to be really good. We came on the night of their 1 year anniversary and the service was unbearably slow. We ordered drinks and our ice was melted and the beer felt warm. When the food came it tasted like it sat under the warmer for a few minutes before it came out. Brussels were AMAZING! We came on Friday to have dinner (after enjoying a drink in the pub attached to the hotel) and were told by the VERY CURT hostess that they only allow people with reservations in 1887 on Fridays and Saturdays. OK. I have only been here (several times) on a Friday or a Saturday and have never had a reservation, but apparently that has changed and the hostess was quite a rude person about it. So we headed to the pub and had the 1887 menu. They do not give you complimentary bread in the pub (I don't know why, since you are ordering off the 1887 menu). Otherwise it is the same food. I had a tenderloin with the included garlic mashed potatoes and asparagus. I would think if your standard sides include asparagus you would learn to prepare it correctly and not the droopy mess they serve. The mashed were amazing (although a very small portion). The steak was supposed to be medium rare (pink with warm center) and I got well done (no pink) - although the cut of the meat was good so it was still tender. Still, it isn't hard to do medium rare. Ironically my husband ordered well done and got medium well - some pink. So don't expect them to get temp right. The bartender and the waitress (Ashley) in the pub were outstanding. Very friendly and working hard with a smile. The staff at 1887 need an attitude adjustment. If you now require reservations, maybe enter the 21st century and get on Open Table - they require you call the restaurant to get a table. I will start off by saying it's such a cute place. The hotel is really nice and the restaurant reflects their classy vibe well. The staff is also very friendly and just made the lunch better with small talk. The food is pretty mediocre though. The gyros weren't bad just a little dry, but $21. The salmon salad was the issue, the lettuce was very wilted and even had a few rotten/slimy pieces. For $25 it's just annoying not getting quality ingredients. read more

First off, I'd give the ambience of the hotel and the remodel of this historic building a 12/10. What a nice gem they have restored and brought to the Canon City community and tourists alike. We loved everything about the hotel, the main lobby, the side bar, the restaurant and of course the bonus being the Speakeasy in the back! Living in Pueblo we have nothing that matches the vibe of this place and you feel like you're at an upscale restaurant in Denver, so if you're looking for that feel this is the place. We had drinks in the main bar before dinner and they were good. The bartender was very friendly and flexible with our orders. We then went to the restaurant for my birthday dinner. First off, the bread and butter they give you is top notch. I loveeeed the butter and the bread had everything seasoning on it and it was very fresh. We had to ask for another round! Salad came next which was also really good and fresh, and the balsamic dressing was tasty too. I ordered a filet that may have been a bit overdone for medium, but it was still good and the potatoes and asparagus were pretty good too. My husband had the prime rib and said it was an 8/10, so definitely pretty good too! Our table also had the salmon which was very good was well. I think the only negative was the slow service in the restaurant. The restaurant wasn't packed, and there seemed to be a lot of waitresses, however none of them were very attentive to our table, and we had to call them over a few times for assistance. Going to an upscale restaurant you expect the service to match the meal and the environment. Pro tip - walk through the bookshelf into the Speakeasy for a night cap. You won't regret it. It is a great place with wonderful drinks and a great feel in the war room. The service is great! In the restaurant was again not a disappointment at all. Our server was Tagean, she was great, very knowledgeable, efficient and friendly. We ordered the crab and spinach dip followed by the wedge salad. Final was the green chili pork. We enjoyed all. Very tasty. The surroundings of the old proctored of Canon City are great. All the details that are in the restaurant and speakeasy as spectacular. We were there on Christmas Eve '25 and there seemed to be a lot of movement with the 3-4 servers I saw. Ambiance is just as you might suspect for a historic hotel, dark, nice cloth napkins, very expensive steak, bison and salmon. We also enjoyed his polite and engaging conversation about the restaurant and the St Cloud Hotel , where we will be staying this summer. A bit sad that things appeared to be not up to par. We were patient, but I saw other people who seemed to have troubles. It did take awhile for drinks and food to come out, but we were just enjoying each other's company and the atmosphere, so despite the apologies we were just fine. However, it was almost like they ran out of things. My first drink came out half full. I wouldn't have noticed it I hadn't gotten another. I also ordered olives in my martini. Normally, that is a green olive, which I did get in the first half drink, but I got a black olive in my second drink. It was not pleasant. My husband and I both ordered a side salad. He really liked his dressing, the ranch dressing. He said it was very think and creamy. My dressing, blue cheese, was like water and had almost zero taste. Odd since blue cheese can curl your hair. We both ordered a filet for dinner. It comes with mashed potatoes and asparagus. It was really delicious. My husband really likes bourbon peppercorn sauce, to the point that I've made it for him and he typically orders it with filet when it's offered. Our waitress said it doesn't look like it, but it is the bourbon peppercorn sauce. However, I have never seen white bourbon peppercorn sauce. Based on all their troubles tonight and the fact that it had not been white before, I suspect they didn't have or didn't add an ingredient. Then we ordered dessert. I had the flourless chocolate torte and it was so amazing. My husband ordered the brownie with ice cream and decided on the cherries and candied walnuts add on. Thankfully, they didn't charge for the full add on. My husband said there were 3 cherries and no candied walnuts. He was a bit disappointed, but felt better after he realized we were charged an extra $1 rather than an extra $4 for the add on. Also, it's huge! So if you have someone to share it with or you have a big appetite, great! If not I wouldn't do it. Our waitress was nice, but I think she was exasperated and overly busy. It has to be hard to have to keep apologizing to customers. We weren't offered pepper, which is a pro for just putting salt and pepper on the tables, nor were informed of any specials. Maybe they don't have specials, but the soup of the day wasn't given, which is a special. Despite all my above complaints, we really enjoyed ourselves. If you aren't sure whether to go, do go. The atmosphere is really beautiful, the food is very good, and the service is stellar. Just not sure I'd go on another holiday, as they don't seem to be prepared enough to handle it. read more

My family came here to celebrate our patriarchs 86th birthday and we were very disappointed. Every steak dinner we ordered, whether it was ribeye or sirloin, was inedible. All the steaks looked like they were precooked in a boiling water bath then thrown on a grill until the edges were burnt. Every steak was overcooked, under seasoned and dry. The asparagus spears were not prepped at all as the woody ends were not trimmed. How does a "quality restaurant " like this mess up asparagus this badly? Incredible historic restoration. The restaurant, bar and ESPECIALLY the speakeasy behind the bookcase are fantastic. The interior designer who did this deserves awards. After a day of being tourists at the Royal Gorge, escaping to the cool and calm of 1887 Historic Eatery was a welcome surprise. The restaurant is a part of the St. Cloud hotel in downtown Cañon City and has been meticulously restored to honor its past. The menu had plenty of variety for our lunch visit and provided a great alternative to the typical fare one might find in a tourist town. My girlfriend had the Duck Tacos and I had the Gyros platter. We swapped plates and both enjoyed these items. They were fresh and tasty and came with some very good fries. The attention to detail was impressive (black flatware to go with the restaurant's decor) and the service from Ben was top-notch (glad to see they were actually committed to training waitstaff, Chesney). The name prepared me for a Gold Rush saloon kind of experience but this was actually a classy (almost elegant) outing. We went to 1887 tonight for our anniversary. The cocktails were on point! We had the crab dip for an appetizer and it had a nice smoky taste. I had the filet and my husband had the salmon both were delicious. Brenna was our server and she was very attentive without being overbearing, the manager also checked in.
