What prompted this was a small sliver of Campo de Montalban I picked up from the "odds and ends" bin at Whole Foods, that happened to be perfectly paired with a bourbon-barrel aged heirloom cider I also bought there, it was a lot like the Spanish cheese Mancheco but more rounded for me with a little funkiness in addition to the nutty taste. Anyway, it was one of those peak cheese moments. Several other Mitica cheeses are on my go-to list, so all I can say is Thank You!!!
