I called looking for Maryland blue crabs to surprise my MIL and he was honest on the phone, saying that he had them, but they were only medium sized. He promised they were sweet and worth the drive. When we arrived at the shop, he greeted mom by name and joked with her, putting her at ease. He was more than generous when he threw in a few extra crabs on the house and gave us a bag of his special crab boil! It was like going back in time, shopping on the proverbial Main Street when your vendor knew your name and remembered your history. He took mom's number so the shop could call when they had jumbo blue crab, there was no "you call me to check". I also bought a red snapper on the spur of the moment because it looked so fresh...and it was. The prices are reasonable but more than that, Mike is honest. I heard from Mike that the "softies" were in. We were a little busy but managed to get there just as he was closing. He saved a dozen Florida beauties for me. I got them home and set up the usual live well for them. Cooler with a ice and a spacer to keep the crabs around 50 degrees. We cleaned and cooked them the next day. One has died and seemed a little bit off so we didn't cook it. No matter, it was a small one and the other whales made up for it. Wanting to try something different, we cleaned them and then set up a charcoal grill. Not too hot - around 350-400 degrees (otherwise the legs burn). No flour or salt, just plain crabs. If you ever watched Iron Chef you know that quality ingredients speak for themselves. We did 4 minutes per side twice around, basting with unsalted butter at each flip. Yes, they can be cooked for 16 minutes if the fire is low and the texture and juiciness are better than high heat. For serving, we decided on garlic Texas toast, homemade tartar sauce, and a dash of Mike's Baltimore spice. I'm uploading a couple of in-progress cooking pix but, unfortunately, once the sandwiches were made they didn't last long enough for pictures. I came today and ask for Wild Caught. The guy said $34/lb. When he showed me the salmon. It clearly was farm raised. There is distinct difference in color with wild caught. The fatty tissue on wild caught is very thin or you don't see it. This is based on the quality of the wild caught salmon. That wasn't wild caught. I'm not an idiot.
