They have recommendations for the tea pairings with the various courses but you can choose your own and there's one heck of a selection. The staff is knowledge and will give you recommendations on what (if anything) to add to your tea to really bring out the flavor as far as cream and sugar goes. We did the non-alcoholic service and the food and tea were both amazing. There was plenty of food in the three courses. They have limited ability to accommodate dietary needs, but were able to do this for just one member of our party without forcing the others that ad no restrictions to that particular menu item. It didn't matter though, it was all delicious. Anyway, this was an excellent experience and I highly recommend it.
