The chicken was perfectly seasoned and crispy, the catfish was tender on the inside and fried to perfection on the outside and the shrimp were large and not over cooked. Cathy definitely has her seasoning game on lock. And last but not least we ordered the cajun pasta with chicken and shrimp, added mushrooms. I would opt out of the chicken next time because it was chicken chunks that seemed to be out of the can, so it had a fake texture. The grits were creamy and had a lot of Cajun seasoning, which I thought worked really well. They weren't quite as cheesy as I personally would have liked, but the flavor was still delicious, with just a little bit of smokiness. I also appreciated that despite all the seasoning, the dish wasn't too spicy for me. The shrimp was cooked to perfection, and the overall texture of the dish was spot on. We paired the shrimp and grits with a grilled cheese flight from Steve's Meltdown, another vendor at The Foundry, and the two ended up going surprisingly well together. This wasn't quite the best shrimp and grits I've ever had, but I'd easily put it at number two, which is still pretty high praise. I did not realize that I could have ordered it cold, to heat up when my party was ready (there is a place on the website to notate that, hopefully this helps someone) I did not mark the correct box and my Jambalaya was hot at 3 pm when my party was at 8 pm. The pork chops we're dry and the meat tasted old. I think they need to change their meat supplier. The mashed potatoes taste it like I had a ton of garlic powder. In my opinion a restaurant should never use garlic powder but instead use fresh garlic in their dishes. It's really easy just to throw cloves of garlic in the potatoes as you're boiling them. Or roast them. I was burping up garlic for several hours after I left. You can often judge a soul food restaurant by their mac and cheese. The mac and cheese was baked but the cheese sauce tasted like nacho cheese sauce. Or some type of ready-made cheese sauce. And they just mixed up the cheese sauce with some elbow pasta, threw some American cheese on top and threw it in the oven. It was not the worst mac and cheese I ever had but it was definitely not good. The restaurant was very clean and I like their decor. Ray came out talking to customers and checking on their satisfaction. He was nice and I didn't have the heart to give him bad news.
