At the very least, add/build a tall bar where guests can stand and be served. 2) Give a more generous tasting size (AT LEAST DOUBLE) so that guests can actually taste each wine... 4 drops is NOT enough. 3) Don't ask guests what they want to try, just give them a taste of everything. If necessary, try a "3 for free or $3 for all" fee structure where each guest can choose up to 3 wines to taste for free OR they can pay a $3 (or other small fee) to try them all.
