I called and spoke with Chef Cowdrey and he explained that each one is custom made to order. So I placed my order on a Friday and he had it ready for me as requested by 8am on Saturday morning. This was very important because I was leaving New Orleans upon picking up my order. I shared some of the galette with family members who live on the West Bank. Chef Cowdrey Galette de Rios and O.M.G.G.'s pastries are simply amazing! We were blown away by the presentation, the flavor and the delicacy of this pastry.
