This is a great product, I buy it over the other choices at my local store. It helps that the product is made in the town I'm from.

I've been eating this boudin since I was a kid. The quality and flavor haven't been compromised over the years at all! Each time I come back home, there seems to be another new boudin spot to try, with fancy fillings and a mascot/logo similar to Charlie Ts, but no matter how many I try, Charlie Ts always takes the number one spot! Their formula is just SPOT ON! The service is always great, although I do miss seeing Mr. Charlie in the store. There's nothing like seeing the man who fixed your boudin as a kid still doing the thing he loves! I'm happy for his retirement, but he is forever a part of my childhood! The store is very clean every time I visit, and there's ample parking out front. You will get more options the earlier you go. Trust me, everybody knows Charlie's is the best, so you don't want to wait until the afternoon when there are only a couple boudin balls left. Go early. I personally prefer their classic links and the regular pork boudin balls. The formula is perfect and doesn't really need the bells and whistles, to be honest, but if you prefer a party in your mouth, try the pepperjack cheese or even the spinach and cheese eggroll! They will not disappoint! And I can't forget, their cracklin is the BOMB! If I visit Breaux Bridge and don't bring back some cracklin to my mom in California, she gets cranky! Lol. I also appreciate the frozen options! I was able to fly some frozen boudin home and share with friends who'd never had boudin before. They loved it, and I'm glad I got to introduce them to the BEST :)

For the uninitiated: Tasso is fast-cured, seasoned, and smoked pork shoulder. It's used in stews and simmered foods, softening as it cooks, adding a delicious, unique flavor and bite that's typical of many Southern Louisiana (read: Cajun) dishes. Tasso's difficult to describe, but you'll know it when you taste it. I just received four 1-lb. packages of tasso, shipped from Bourgeois' smokehouse in Gray, LA via FedEx 2Day. The order arrived in good shape, and though the ice packs surrounding the meats had melted, the tasso was smoked (and so, fully-cooked) and it was vacuum-sealed. It went straight into my freezer, and it'll be fine. The cost to ship from Lafourche Parish to San Diego doubled the price of the product, from $7.24/lb to around $15, but I pay that much (or more) for quality steaks and seafood, here at home, and it was my choice to spend top-dollar for meat that I know, from experience, will make my gumbo, red beans, etc. taste better than I could otherwise make them. Kudos to the folks at Bourgeois Meat Market for offering a high-quality product, and for handling the purchase and shipping in a professional manner. I like visiting their shop when I'm in the area, but I LOVE that they don't make me get on a plane to eat what they're cookin'!

We used to love driving here for the ride to get great boudin and spend a couple hundred dollars. Being disappointed, I called and spoke to one of the owners about my "crawfish" boudin and asked if they were experiencing a drought with their crawfish. He replied, no and that they actually put more crawfish in their boudin this time. I'm like sir, no way. I've been coming here since 2018 and I know the difference. There was more rice and seasoning as opposed to what it's advertised as. I mean, honestly, if he'd said yeah, we're experiencing the same 2024 crawfish season drought that has been happening everywhere because of the saltwater intrusion, then I could understand but to lie and deny the difference was asinine. I thought perhaps they have loads of crawfish frozen somewhere to avoid a drought but the difference between the prior year's crawfish boudin in shape, color and taste is very noticeable from the 2024's boudin. Today's boudin looks like red hot links on steroids minus the red color. C'mon, just be honest, sheeeesh! While the truth matters, I won't be back anymore. Take a look at the pics and you can see the difference. Today, I bought seasoned rice boudin and not crawfish boudin.

We sat at the counter which overlooks the kitchen. Seeing the food get cooked over wood fire and watching the dishes get made while we are was very nice. Below I will rate the food we got. I am going to leave off one of the salads we ordered due to the fact as of this review, 6-6-26, it does not appear to be on the menu. I also can't recall the name of the salad. Focaccia - 7.2/10 While it was good, it's not a bread service that I recall being great or one that comes to mind when thinking of the best bread services I have had. The bread was fresh and but not as tender as it needed to be. I wouldn't eat the bread by itself and it needed the whipped butter which accompanied it. Grilled Wedge - 8.4/10 It was really good. The onion, bacon, miso gorgonzola and candied pecans went together perfectly. I have realized salads which pair nuts, cheese, a salty element and either apples or onions is always the best type of salads. I would say this is a top 10 salad I have ever had and would order it again. Mac N Cheese - 8.2/10 It was really good as well. Not dry or stodgy at all. The mix of cheeses were good, gruyere is always a great cheese of choice. Roasted Carrots - 9.1/10 The carrots were placed on top of a yogurt mixture along with a spiced oil. The carrots were cooked perfectly and all of the flavors went great together. They don't appear to be on the menu as if this review, 6-6-26. Pork Chop - 8.1/10 While it was very good and I would get it again, there are aspects of the pork chop and overall dish which can be improved. The items which accompanied the pork chop weren't great and didn't add anything to the dish. The pork chop had a good flavor and was tender. Arguably a top 5 pork chop I have ever had but doesn't reach the places in my top 3. Filet - 8.4/10 Definitely good and cooked well however, not a steak you remember months or years later. It's hard to mess up a filet and also hard to make it so great that it separates itself from others imo. So all in all, not any fault on Vestal.
