Have done professional barbeque. Had trouble in the Texas hill country finding a good hot link. Was told to check Bernhardt's they did not have a hot link but suggested a ring that was hot. The second thing if I was do want a hot link they would custom make it if I got 30 lbs. tried both the ring and a sausage. The ring was good but had a pretty hard casing. I am reviewing the butcher shop not the processing . I have gone here for my meat for my special holiday meal for 9 years. This year - when I called to order the man was not familiar with the meat I needed to make German Rouladen . So I explained to the man - Adam- how it is prepared . He REFUSED to do it the way I asked and my holiday meal was ruined because he made the curts of each piece over 1/4" thick when I needed 1/8 inch or less. And then it was so much more money - for 6 people for dinner should not cost $170 for quarter round . They ripped me off and ruined my meal . I will NEVER ever buy even a smoke ring here unless they make good on this . And if they do I will remove this review read more

We were going to get meat at HEB or Walmart but we saw this meat market on our way into town. I grew up in small towns so I went to meat markets a lot. My mom even worked at one when I was a kid. We walked in the door behind 2 men. If only we had gotten there 1 min sooner. We waited at least 20 mins for the guy behind the counter to go in the back & look for the mans order. I guess he couldn't find it bc people piled in behind us. We could hear him talking to someone else but that person didn't come up to We were all just standing around & waiting for so long that the area started to fill up. On a Saturday you would think there'd be more than one person working the counter but that definitely wasn't the case. If we hadn't already gone shopping & picked up everything else we needed we would've just given up & left. When the guy finally came out front he didn't apologize for the insanely long wait, he just said "who's next?" Well, that was us. We told him that we needed 2lbs of skirt steak. He said he only had two packages left. One was 1lb & another was 3lbs. Then, he just stared at us. Well, I guess they don't know how to cut meat here to give the customer what they want. I'm not familiar w that. Most places would offer to cut down the 3lbs & give you the 2lbs. Then, they could sell the extra lb to someone else/have 2lbs available for another customer. Nope. So, we bought what we were told was 3 lbs. $35 for 3lbs of skirt steak. Ok. They don't label the package either. They just wrap some butcher paper around it & tape it closed. I never saw him weigh it either. It didn't seem like 3lbs to us. So, I got home & weighed it. It wasn't 3lbs. It was a little more than a 1/4 lb light. At $10.49 a lb for skirt steak I'd prefer to get all 3 pounds that I am charged for. (Even though I only NEEDED 2, I still PAID for 3). After making the meat, not overcooking it but making it the same way we always make it, it was so tough! The market can't do anything about the meat being tough. It was just disappointing on top of waiting so long & overpaying for underweight meat. Next time, we will just stick w H-E-B. The meat is already marinated, you can choose how many lbs you want & it's not tough. read more

No problem with the service. However the product is in question. I spent over $200 for a primal piece of boneless ribeye. After I cut them up and grilled a couple, I think they have got to be the toughest ribeye's I have ever eaten. Just like shoe leather. Man. I don't always eat meat, but when I do, my first choice is meat from Bernhard's Meat Market. The last time I was in, I was hungry and bought more sausage and dried jerky than I normally would. The aroma of garlic and the smoke from sausage hung heavy in the air. As I checked out, the Clerk ask me, " Will there be any thing else?" I hate to post negative reviews especially in today's climate. But it's now 5 for 5 over 7 months with this store. I took my sister and a friend to grab some dinners before they headed home from New Mexico, in advance of the Coronavirus creeping our way.. I can't speak for them but I (I'm a local) bought a pound of ground beef, a ribeye and a rib in thick pork chop. I put all in my freezer to work into the stay at home order. I first cooked the ground beef. Then I cooked from the freezer, the ribeye. Today I defrosted and prepared to cook the rib in pork T-bone. Let me just say it looked good when presented in the butchers pack but when turned out on the platter to cook, the back side was nothing but bone. I cooked anyway and it is nothing more than a bone rock with skirt meat on it. I cooked it on the fire a good 20 minutes and because of all the bone, it is still raw. Not happy read more

I've been hunting for over 45 years and this is, without doubt, the best wild game processing and meat market I've ever utilized. The quality, consistency, and variety of processing options cannot be matched. In addition, the meat market is the best I've seen. The steaks are professionally cut and trimmed with excellent marbling. My 95 year old father and I much prefer a Bernhard steak on the grill rather than a premium steak house. In addition, Bernhard has a great selection of cheeses and dry sausages which are great snacks for game day. Bottom Line: I can't say enough good things about this establishment. We get all our meat processed here. They're friendly and great to work with and pricing is reasonable. Their after hour drop off is awesome. Processing is quick (2~3 weeks). They will cut and package your meat how you want it and their butchers gives great advice on the cuts of meat if you need help. Don't forget about the store front. I have been hunting on a ranch in Comfort, TX for the last 15 years. I have always used Bernhard for my deer processing. The pan sausage (hot) and Italian sausage are my favorite. The staff is very friendly; Mark and Gloria are always responsive to my requests. Bernhard has a wide variety of meats and cheeses on the meat market side of the business. The Turkey Jerky is out of this world. My hunting group loves when we have steak night and I get the ribeye steaks from Bernhard. Lost all my meat.....about 120lbs. Very unprofessional. They claimed at first to lose it.....then after over 2, yes 2, years they finally found it. By that time the meat wouldn't have much time left to be still considered edible. Neal's taxidermy is great though! Right next door. If you're going to get a mount get it there! read more

I had a deer processed here. Very bad experience overall. I hunt deer frequently, and have had deer processed by many different places. Bernhard sent me mere remnants of tenderloin and backstrap from my animal. Or, they sent me some other animal and wont admit it. I spoke with the owner and his explanation was that they do over 3500 deer a year, and they simply cut down the tenderloin and backstrap to a few nuggets and move on. I may have gotten my deer but I have no way of knowing. Out of a 4-1/2 year old 160lb white tail buck I received 2lbs of backstrap, and 8oz of tenderloin. According to the owner that's the way they do business and I received what was appropriate for that size animal. Needless to say I am very displeased. That may work for 3500 other people but it doesn't work for me. I'll never use Bernhard again, and I suggest you don't either if you value the best cuts of meat from your animal. read more
