We came to Bibim on a Saturday night and, even though it was busy, we were seated pretty quickly. It did take a bit of time to get our drinks and order in, but once that happened, everything came out fast. We started with the fried tteok fries, which were surprisingly light and delicious. I've only ever had tteok in stews before, so I was worried they might be hard or chewy, but they were the complete opposite--crispy, light, and really enjoyable. We also ordered the dolsot bibimbap with beef, the Japchea with beef , and a side of the daily soup, which was beef with radish. Everything was very savory without being heavy, and overall just really comforting food. On top of that, the servers were very kind and polite. Well, both my husband and I loved the Dolsot Bibimbap...and we both agreed that this place has the best Bibimbap in Charlotte. We also enjoyed the Fried Mandoo and the dessert as well. DO NOT GO HERE --- this restaurant lied about food allergies and did not offer a refund, then griped me about $10 price difference when replacing the food items THEY lied to me about! I called this restaurant to confirm they don't use fruit juice in their bulgogi marinade, as I'm allergic. They assured me twice that they don't. I placed a $40 order with doordash for two dishes (already ridiculous), and they called me back 10 minutes later saying they DO USE PEAR JUICE. I ask them if they use pear juice in their chicken or pork and they said yes. At no point do they offer me a refund despite it clearly being a massive shortcoming on their end, one that could've made me gravely ill. Instead I have to sub for tofu, resulting with me ending up with a $40 meal I would've never ordered in the first place! To replace the gimbap, they GRIPE ME ABOUT A $10 PRICE DIFFERENCE between the gimbap and the kimchi pancakes as if it's not their fault! If they are this flippant and careless with making people sick, I genuinely cannot imagine how they run the rest of their restaurant. I cannot advise people to stay away from here enough. This interaction went beyond breaching normal restaurant hospitality and veered into lacking human decency territory. I can't imagine lying to someone about food allergies and not immediately offering a refund. Absolutely obscene. Could've gotten gravely ill and instead of saying sorry the lady on the phone is griping me about a $10 difference as if kimchi pancakes even costs $6 to make in the first place. read more

Best place we've found in Charlotte area for Dolsot Bibimbap. This is quite a drive from where we live, but we enjoy Korean food and saw the good Yelp reviews and wanted to try it. Beer menu is typical for Asian places - standard Japanese beers (don't expect local IPA's here). We started with the Kimchi Jeon ($14) and the three of us really enjoyed it. My bride and I both ordered the same thing, the Dolsot Bibimbap ($18) with chicken....but I ordered the spicy version. My MIL ordered the Deopbap and added an egg ($20). I ordered the classic Beef Bibimbap which I loved so much paired with the refreshing grape drink. The plating looked so perfect that you might think it was going to be used for a product shoot. The vegies blended all so well. Not overpowering one another but was a melody of flavors while still being individually tasty. The rice was soft and cooked to the right texture. The beef was tender and seasoned well. The egg was nothing short but perfection with runny yolk topped with a hint of sesame seeds. All mixed together that delivered a wonderful symphony of flavors in every bite while every instrument was still distinctive. Drizzled with their homemade ssamjang. Delicious! We were visiting Charlotte and desperately needed our Korean fix from where we currently live. We heard great things about this newer spot. We were there a little late in the evening so it was quiet with a few customers. The place overall is very clean and well put together. We were welcomed with smiles from the staff. Our staples for ordering is usually the dolsot bibimbap and soondubu jigae. They both came out piping hot as you'd expect, and the spiciness was perfect. We also tried their tteokbokki, which I kinda wished there was more in a plate but it's probably for the best to not have too much and spoil the meal. The one thing I would say for feedback is there was no banchan or roasted corn tea, which was a bummer they didn't have but it's not something to knock down a star for. It made me feel a warm welcome like distant friends i haven't seen in years. The sheer professionalism, cleanliness of factilites, and overall vibe of this establishment let me know i shouldn't have picked up food i should've dined in. Im not too saavy on korean food but this stuff was fuego. I relished in every bite. The heat , the sauce , the umami. It was pure bliss in a box ive only oft found at the bottom of a bottle. I have been back a number of times to try the tteokboki and ramen, all very good. I think the pork dolsot is my favorite so far, its already seasoned, so I usually do not add any additional sauce to it, but they provide so you can add to your taste.
