The place is small, the green is a house and not the store

This has been a long time bookmark so since I was in the area I thought that I would stop by and get a couple items. First off it looks huge from the outside but it's only one end of the house and very small. The selection was small compared to other places with a few coolers, a cheese case and an a house frige. They have a huge menu board so maybe items are in back. They have homemade pizzas a sign said with your typical assortment of cheese and meats with fresh made sandwiches. I was looking for some meat sticks and some cheese and I found jalapeño/cheddar meat sticks and jalapeño cheddar cheese curds.

On my last visit to Wisconsin, I went out to see the Saxon Creamery. The creamery is located in…read moreCleveland, Wisconsin. It was started by the Klessig and Heimerl families, who brought in Neville McNaughton, Pat Knowles and Dan Strongin as consultants. Not only do I love cheese, but I grew up in Cleveland and went to grade school with the Klessigs, so I was very interested and excited to try their cheese. After 15 years of planning, the first milk was delivered and a vat of cheese was made on August 24, 2007. I had some of the cheese during the winter holiday -- and they are now ramping up for national distribution. Look for their cheese at Whole Foods in the DC area in July -- and they will be rolling out nationally in the coming 6 months. They have 3 core cheeses -- Green Fields, Big Eds and Saxony. I have only tasted the prototypes, they were all delicious and are worth seeking out. You can contact the creamery at their website to get additional information about where to purchase their cheese. Green Fields A semi-soft cheese that is carefully tended then wrapped in a special breathable paper to protect Green Field's sophisticated flavor during the journey from our creamery to you. Made from whole raw cow's milk, and unpressed cooked curds, with a washed rind ripened a minimum of 60 days -- at its peak at four months with a shelf life of six months. Big Eds Young, mild, but full of flavor, with a buttery body. Enthusiastic, like Ed Klessig, whom it was named after, it hugs you back, never offends, and is great both for first time tasters and afficionados. A "clean rind" cheese made from raw cow's milk formed into cooked, pressed curds and ripened 120 days, with a shelf life of six months -- clean rind cheeses are meticulously wiped to keep them clean, cultivating a nearly perfect rind. Saxony A sophisticated cheese with a nutty flavor and a supple-body, as comfortable in the kitchen as it is on the table. Cooked pressed curds from whole raw cow's milk with a light, dry, washed rind ripened a minimum of 90 days, peaking at 150, with a shelf life of 9 months.

But call, the hours on Yelp are not the bar hours, which are extended. The space was formerly a little cheese shop for Clock Shadow. It was pretty basic. The atmosphere has really ascended. There is a small retail section and cheese case for shoppers. The bulk of the small space has been transformed with moody, chic wallpaper, a classic old school bar and tables. The staff are all friendly and knowledgeable. Service is very good and not intrusive, but you will learn a thing about what you're experiencing. The pairings are eye opening. The cheese is exquisite. Although the cheese itself is on the expensive side, the flights are reasonable for what you get. The pours on the wine are fair and there is enough cheese to share. Dried fruit and corn are added as a pallet cleanser. Loved it! Everyone needs a cheese bar with drink pairings. The wine and beer menu as suggested pairings for cheese as well. They also have some interesting craft cocktails. Street parking can be an issue, so maybe prepare for a little walk during popular times.

My partner…read moreand I stopped by on a weekend afternoon and we were SO pleasantly surprised by the experience. The shop is split into two parts: the deli counter where you can sample and buy cheeses, and the cafe/bar where you can sit down and order cheeseboards and wine flights. We started in the deli and the young blonde woman behind the counter (I'm sorry, I didn't catch her name, but she was incredible) gave us such good recommendations. The Luna and the shallot herb cheese were to die for! The Luna won 3rd place internationally in a cheese contest, and you'll see why when you taste it. So complex and nuanced, with little crunchy crystals of salty goodness from the year and a half it spends aging. We then went to the cafe part, which has a good number of tables, and ordered a couple cheese plates. Again, our girl delivered--she made our cheese plates so that the accompaniments were all different and so we could try as many crackers and side dishes as possible. So thoughtful! The price was also very reasonable. Would not hesitate to come back here again. Fantastic service! And try the Luna!
