It's a very fast paced take-out place, only a handful of seats, so plan on taking the food and eating somewhere else (Benson Park is less than a mile away). Excellent subs and value. read more

When it comes to Sub Shops, Bill Cahill's is by far and away, the best bang for the buck -- no doubt about it. Quality, Quantity, Cleanliness, and Fast, Courteous Service is what any customer can expect and get anytime they patronize Bill Cahill's establishment. My ONLY complaints about this place are: 1) It doesn't seem to be located in a business district in Hudson. In other words, if you blink while you're driving, you'll probably miss it the first time around, and, 2) they probably should redo their sign -- preferably with Florescent lettering -- to make it stand out more for motorists. But since I already know how to get there, I'm basically all set when it comes to directions. Personally, I highly recommend: the large Pastromi with Cheese & Mustard; or, the large Egg, Bacon & Cheese with Mayo; and finally, the large Veal Cutlet with Sauce & Cheese. The name describes it perfectly, Super Subs! Cahill's makes the best steak & cheese subs in the area. They are big and stuffed! The food here is pretty much "to go". I think they have about 6 or so seats. So don't plan on eating there. They close early, 7PM weekdays, 3PM Saturdays, and closed Sundays. Why anyone would give this place less than a five star review is beyond me. Some guy, on another review site, gave Super Subs three stars, while saying it was the best sub place in the US (he, presumably, took stars off for being closed on Sundays); that person needs to be drowned in a barrel. Yes, it's always hit or miss that you find a place to sit, at their limited bar seating. And, yes, the hours could be expanded a bit. However, the food itself easily makes up for any perceived shortcomings the place may have. The bread comes in fresh each day. The steak is so tender and moist that the flavor explodes with every bite. The portions are more than generous (if one large sub does not completely fill you, then a) you must be a teenager, or b) I don't want to meet you in a dark alley). And the produce is always fresh, and generously heaped on. Also, the hots do not have bits of "stems" in them that I find in many chain sub shops (a pet peeve of mine). The one "problem" that I have is that the first thing that I tried here (Steak bomb (steak, cheese, salami, onions and peppers), with pickles, tomatoes and hots) was so unbelievably good, that I haven't found the will to try anything else, ever. And the homemade meatball sub calls to me each time. The staple of Hudson...my father built this back in 1985 and I still remember being on the job site at a young age. Bill is one of the greatest individuals in Hudson and has always given back to the community and has always hired Alvirne students to stay working for him throughout their academic years. The subs are and have always been amazingly filling and unparalleled by the competition. I personally recommend the cheeseburger sub with bacon, pickles and mushrooms. A real testament to just how great they are is the fact that they don't stay open late (close early on Saturdays and closed on Sundays), don't deliver, don't have any sides (fries, potato skins, etc) and a tricky location and parking, yet do better than all their competition in the area. Following the demise of Thompson's Market and how close to family they are, it's somewhat relieving to see Cahill's still there and going strong...Best pickles, best sub rolls and best cheese ever. If you go in around late morning or noontime, you'll usually have the luxury of having Bill manning the flattop and cooking your sub personally!! read more

I found this place on Yelp killing time for a hockey game. Steaks seem to be the overwhelming favorite but I found. Positive chicken parm review so thats what I went with. The sandwich tastes great. We keep a short list of eating establishments that we'd like to try when opportunities arise. We were in Hudson today running errands and hadn't had lunch yet. Bill Cahill's Super Subs was on our list, so we decided to check it out. Based on all of the positive reviews of the Steak Bomb, we went with that. I'm going to echo some other reviews... The pros: The bread was very fresh. The sandwich was loaded with steak, and it was very tender. The staff was efficient and the place was clean. A little constructive criticism: The meat wasn't seasoned at all, it completely lacked flavor. There were a few bites that exploded with flavor, sadly they were few and were also the last of the bites because the cheese and salami were on the bottom only. Would be SO much better if they were mixed throughout. This would make up for the meat not having any seasoning. Our sandwich experience was just average. read more

This place makes the BEST Steak Subs anywhere. They also make a unique sub called the Pufta "eggs,bacon.ham,cheese" I add grilled onions,and it is outstanding. There are a few cons-- Not open on Sunday. It used to be a tradition of getting Cahills on Sunday afternoon. They close early, not open in the evenings on Friday. Also if you try to call in your order in for lunch they will just not answer the phone for a couple of hours. They seem to have grown very independent over the years. They have a great business going and it seems they have taken the attitude that it is thier way or no sub for you. We found Cahill's through Yelp. It's not much to look at inside or out. It's not a slick and shiny place, but it doesn't need to be. The team of youngsters working together on food preparation craft delicious sandwiches while you wait (and watch). They work together like a well oiled machine. The preparation area is clean, not a speck to be seen on the floor. The chicken in our chicken cutlet sub tasted fresh and crispy. The girl preparing it had us supervise as she added tomato sauce so we'd have the amount we wanted. We decided to split one because we could see how big they would be. The amount of meat they put in the subs is impressive. If only I had a bigger stomach! This place is well worth a stop. They also have a selection of salads and sell Boston Baking Company cookies and whoopie pies. They take debit and credit cards but have a ten dollar minimum. But you should have no problem meeting that minimum with so many good things on the menu. read more

I remember going to Cahills with my dad when I was younger. I was obsessed with the steak and cheese subs. I still am, only now I make it a steak bomb. I came here with my boyfriend today and we both really enjoyed it. My only thing is that I really like all the cheese incorporated into the meat instead of just on the bottom of the bun. It makes it harder to get everything into one delicious perfect bite. But other than that, it was spot on. I always recommend cahills for the best subs :) read more

Drove 40 minutes to get subs, as my fiance grew up eating here. My philly cheese steak was ok, but not world beating. My girl however, was extremely disappointed in both the taste and the size of her cheese steak. Had onuons and mushrooms, which she explicitly said not to include, she asked for only pepper, instead she got salt and garlic. What happened? I have been going to Bill Cahill's for years. I used to love this place and recommended it to everybody. The last two times I've went the sandwiches had become sub par. It used to be a great value. Now it's more bread than meat. In the past I used to boast to all my friends if you want to Hardy sandwich go to Bill's. Now I can get more meat from subway. This place is locally famous. Don't get up that way often, but stopped today on our way to Nashua. Nice young girl behind the counter, rang us up. PRO - Got a small steak & cheese w/mushrooms. Sub was very good size (especially for small) on a fresh soft roll. Tons of tender meat, with enough american cheese that I could actually taste it, made for an awesome sandwich. CON - They were slightly chintzy with the mushrooms. Only a few seats on a small counter, so don't plan on eating here. Just canned soda, I prefer bottles. SO - If you are up this way & hungry, DEFINITELY plan a stop here. Make sure you ask them to cut your sub in 1/2 (as I didn't) otherwise you'll be dropping meat all over your car(as I did). First time trying Cahill's. Hole in the wall New England sub shop, you know the type. Only have cans of soda and close early. A little pricey but the servings are huge and worth the price. If you're a normal eater a large could be 2 meals. I got a chicken bomb and it was delicious. Chicken was very well seasoned and cooked well. My husband got a tuna salad sub and enjoyed it as well. All I can say is wow! I'm new to the area, have eaten at all of the chains, and have been generally underwhelmed by what I've found so far. I found this place on yelp, and it's fair to say that I was blown away by the food. Not much to look at from the outside, but worth your time to drop in and give it a try. The sandwiches are HUGE, the quality of the food is second to none, and the service is FAST!! I've now had the meatball sub, the chicken salad sub, and the cheese steak, all of which are easily the best in the area, and as good as anything I've had anywhere. A fantastic sub shop. The Italian cold cut is one of the best I've ever had as is their steak and cheese.

My boyfriend absolutely loves this place. I enjoy it as well. I would recommend stopping in and grabbing your food to go. They have a small bar along the back wall at which you can sit, but there are often a few people there. The service is pretty quick, and the girls at the counter are always friendly. The kitchen is completely open so you can see them prepare your food from start to finish. We would recommend the Steak and Cheese, its very good. I also like the meatball sub. Their marinara sauce is different, theres just something to it.. but in a good way! When it is nice out, we grab our subs to go, and head to bensons park to sit outside and eat our lunch. The park is very close, just right past the restaurant on the right. I give them 4 stars instead of 5 due to their hours. On multiple occasions, we've showed up for lunch and they were closed. Saturdays they close at 4, and Sundays they are not open at all. It's just ironic to us I guess, because thats typically when we are in the mood to grab a sub and head to the park. The building and the interior are nothing fancy, but their food speaks for itself; therefore the decor doesn't need to be anything special. Just plain and simple quality subs! read more

That's what the guy next to me said as he chomped down on his juicy yeasty concontion of rare roasted beef laid between heavenly white bread buns that had the tauntess of an 11 year old boys buttocks.
