Meal was great as always but a few things were not great. The gyoza and seaweed salad were both very good. The chef's choice nigiri was a little underwhelming and pieces were smaller than the additional 2pc nigiris we also ordered. Although the chicken yakisoba and teriyaki salmon were both delicious could there not have been more veggies than huge piles of onion? Plus why is a small side of rice $5! Waitress asked if we wanted but didn't inform that there was an additional cost. There was nothing special about it. It was just plain white rice. My top favorite sushi place in Minnesota! I could rave about this place forever how good and fresh everything is. Make sure you make a reservation. I reserve a month in advance if you want a good time for dinner. Billy sushi gives off a cozy and welcoming ambiance. Even though seating is a little limited, the intimate setting adds to the attraction. Now onto the sushii- my top favorites are.. The Big blue wave- includes Negi toro, cilantro, jalapeno, topped with a different ingredients. The rolls are so big its a two bitter for me. The toro mania and Mistletoe roll offers the same type of freshness and deliciousness! My absolute favorite is the wagyu handroll. While this is an expensive sushi restaurant (specialty rolls run from $20 to $36), the quality of the sushi is fresh and flavorful. I've been to Billy's twice, with my most recent visit on 12/5/2024. The restaurant was decked out for the holidays, and a welcoming sight from the bleak weather. Thankfully it wasn't too busy, and I was able to get a seat at the counter without a reservation (might want to consider a reservation if you go on a Friday or weekend). I started my meal with their Cuz I Love You cocktail ($15, strawberry gin, yuzu and lemon juice, simple syrup, cherry bark vanilla bitters), which wasn't too sweet and a nice way to start the night. Miso soup ($7, good broth) and the mistletoe roll ($27, crab and spicy tuna topped with tuna, eel, snapper, salmon, avocado, white tuna) followed. I agree with the other reviewers that Billy's does a great job at providing fresh fish and creating fun-flavored rolls for their menu. Note for the hearing impaired folks, because it's an open kitchen, it can get quite loud. Since it wasn't too busy, I had a pleasant conversation with one of the sushi chefs (botany nerds unite, they use shiso flowers as a garnish that are a part of the mint family!). My waiter was friendly and attentive, and I enjoy the attention to detail both in the presentation of the food to the hot hand towel to wash your hands at the beginning of the visit. Absolutely fantastic. Puts all other sushi to shame. If you are in the Minneapolis area, stop and make a reservation to dine here.. and make sure to stop into the speakeasy after dinner. I can't say enough positive things about the quality of service, atmosphere and food. By far my favorite roll was the fancy and furious. Everything I could ask for and just the right textures and flavors. The only thing better could possibly be in Hawaii or at Nobu. My second favorite menu item was the crispy rice tuna. So we have been wanting to try this place for a long time but didn't get a chance. On a whim on A Saturday, we decided to give it a try. Of course there was no way to get a reservation with such short notice so I put my name on the waitlist for the two of us and figured we will give it a shot. I was disappointed to find out that having my name on the waitlist through Yelp doesn't really help as the hostess informed us that we need to get on the waitlist in person. Even for bar seating as they were fully booked. The wait was about an hour for a party of two so we decided to put our name on the waitlist and walk around for an hour. We checked back in after an hour and were able to get seated at a table in the bar area. The server came over with the menus and waters. She also hydrated our wet napkins and explained the drink menu. We ordered a couple of drink which were very nice. At Your Window came in this cute little swan glass. The drink special was delicious too. We also ordered a Sign O' The Times later which was a delicious pink drink (not "that" pink drink). We ordered some food with the help from our server who, again, was very helpful in helping us decide what to order. We stated with Beef Kushi Yaki and the Yuzu Tuna. Followed that up with Salmon Nigiri, Bluefin Tuna (fatty cut) and the Miso Cod. Finished off with the Silly Billy roll and the 2-14 roll. Really enjoyed the Yuzu Tuna and the Salmon along with the cod. The rolls were also really good. Some of the best sushi I have had in the cities. The only sushi that has its uniqueness was the one in the tinfoil. What we ordered each time was influenced by server recommendations and they nailed it! My favorite roll was the Big Blue Wave: Negi toro, cilantro, jalapeño, bluefin tuna, avocado, spicy scallops, and blue masago. The Fancy & Furious was so tasty - the yuzu was perfect on it: Bluefin tuna, salmon, yellowtail, avocados, unagi sauce, hon maguro, shiso leaf, yuzu sauce, sriracha dots. Street parking can sometimes be a little tricky if it's peak dinner time, since there are also a few other restaurants nearby. From their beer selections and their sake they have. Miso cod was smooth and buttery. LOVE the smokey taste from the char. You have your mix of rolls but there are also some great nigri and sashimi options that are a great quality too. My fave was the chef's choice nigri. Billy is simply the best. If you like sushi I dont think there is a better option in the twin cities. The quality of the sushi is simply amazing. Depending where you get seated you can see them hand make every roll that is ordered. When you get 6 or more rolls they bring it out on a big boat which is fun(see photo). There is a range of options from more traditional rolls to more fun rolls. Being in the Midwest they also seem to have some rolls for people less inclined to eat raw fish, although the fish is the so good. If there was a place to experiment with raw fish this is the place. There are good appetizers that aren't just fish as well but obviously the sushi is the main attraction. They have a lot of saki options which is kind of fun as well. The service has always been top notch and friendly. The only downside really is it's not that large of an area so you typically need to book a reservation in advance (sometimes weeks in advance if it's a popular date) but it is popular for a reason. It is also fairly expensive but considering the quality of the fish it is well worth it. You could probably find cheaper sushi but for the quality you're not going to beat Billy. It's my go-to birthday celebration spot. There is also an associated speakeasy that if you want to keep the party going is always good time. read more

This is a first class sushi joint. All the cool kids go here. There is metered street parking available on the street in front of the restaurant and also along adjacent streets as well. The inside dining area is not very big and gets packed. They have seating along the bar and there are tables to sit at as well. We had a very large group so we sat in a private room in the back of the place. I highly recommend making a reservation if you plan on coming here. The place is very high speed, trendy and hip. The entire staff there were amazing. They were all very friendly attentive and helpful. Billy, as he usually does, even made it back to our room and hung out. He is a very personable guy. He could probably run for the mayor of Minneapolis. Total disclosure, I am not a sushi eater, but I made an exception for this place. I expanded my horizons and tried some things for the first time. I tried blue fin jaw, which this is the only place in Minneapolis that you can get it. I also tried raw fish (sashimi), raw fish on rice (nigiri), sushi rolls, and waygu beef. I must admit, i thought that I would be grossed out, but really liked everything. I did like some stuff more than others. Some of my favorites include blue fin, the tuna nigril, the Screaming "O" roll and the George Clooney roll. Later in the evening, the restaurant opens a speak easy lounge down stairs that you can access from the back of the building. This is a chill spot with a lot of seating. There were not a lot of people in there though. It must be a secret joint. I really liked this spot. You will find some instragamable wings in the bathroom area that you can pose in front of. Like I said, it is a very trendy spot. They do not serve food down there. They just have a full bar. This spot also has a private room in the back that is decent sized and can host a large party. I am not going to lie, this place is a bit on the pricey side, but it is well worth every penny. My group had an amazing time here and I was not the only one who experienced raw fish and sushi for the first time. So even if you are not a sushi lover, but hav an open mind, I highly recommend giving this place a try. My husband and I went to Billy Sushi for date night, the first time having sushi since our 2 year old was born! Sushi is my favorite food and I was NOT disappointed. We shared the milestone with our server Katie and she was so sweet to bring over an order of Bill Sans Po Boy tempura shrimp on the house. This was DELICIOUS. We sat at the sushi bar (normally I prefer a table but it was just fine!) and made pleasant conversation with one of the sushi chefs. Drinks- I got two, both tequila drinks, one mezcal. Both were so good, easy to drink, fresh. Usually mezcal is too smoky for me but this was well balanced. Starters: Seaweed salad- a must order. Refreshing and so so tasty. Spring roll- haru maki. amazing, the sauce had mango and tasted slightly sweet but well-balanced. Rolls: NoLo Yolo, George Clooney, Sorry Charlie, and the Tiger Maki. All were outstanding. The fish was fresh and the textural blend of each was right on point. Billy Sushi ain't cheap.
