I saw this truck parked in the La Quinta Cove across from Stuft Pizza in Old Town La Quinta. I love queso birria. I decided to give them a try. I ordered 2 queso birria tacos and a queso birria quesadilla. My order was prepared and served within minutes. The food does not disappoint. Some of the best I have ever had. The consommé was tasty and flavored. The tacos were cooked to crisp perfection. The quesadilla had a nice toasty texture as well. They gave me sides of their red and green salsas with some diced onion ... I wish they came with cilantro too!!! The beef was cooked to melt in your mouth. The staff was friendly and accommodating. Stopped here after shopping at the farmer's market in La Quinta. I had 2 quesaburria tacos and he had the asada torta. Both were delicious, but I forgot to ask for the consumé, which made me sad.
