We had an absolutely incredible dinner at Blaine's tonight; easily one of the best dining experiences we've had in Waco. We started with the pan-roasted romanesco, which was perfectly cooked and packed with flavor. The bread service with compound butter was a standout on its own: simple, but done at such a high level that it set the tone for the entire meal. We grabbed seats at the bar, which ended up being a great move. The atmosphere was lively but relaxed, and we enjoyed several glasses from their excellent wine selection. Our bar tender was knowledgeable, welcoming, and she made the whole experience feel elevated without being pretentious. For entrees, my wife ordered the chicken and fries, crispy, juicy, and incredibly satisfying. I went with Blaine's burger, and I don't say this lightly: it's hands down one of the top three burgers of my life. Perfectly cooked, beautifully balanced, and unforgettable. Blaine's is doing something special. If you're in Waco and looking for a place that nails both food and experience, this is it. We'll be back soon. read more

Blaine's is a beautiful restaurant with a great atmosphere. The music provided by Tram Kelly and Pat McKee was outstanding and added significantly to the evening. Presentation of the dishes was attractive and thoughtful, and we were pleased with our wine selections. We started by sharing the poblano corn chowder. Unfortunately, the dominant impression was salt. The soup was more of a brown, creamy sauce with chicken and corn than the aromatic, herb-forward poblano chowder I was expecting. Beyond the saltiness, there wasn't much depth or complexity of flavor. For entrées, we ordered the steak and the ahi tuna tomahawk. Both were visually impressive, but once again the overwhelming characteristic was salt. The tuna may have had a hint of tarragon, but it was difficult to appreciate much else. The steak was exceedingly salty--surprisingly so, even for someone who is not shy about using salt. Service was courteous but somewhat inattentive and slower than expected. At this price point, I would have hoped for more attentive service and a broader range of flavors rather than repeated assaults on the sodium receptors. One final curiosity: water was served in what appeared to be small jelly jars, which felt a bit odd given the otherwise upscale presentation. Overall, Blaine's gets good marks for ambiance, presentation, wine, and especially the live music. Unfortunately, the kitchen's heavy-handed use of salt overshadowed much of the meal. With more restraint in seasoning and a bit more attention to service, this could be an exceptional dining experience. read more

Blaine's is a rare find in Waco for fine(r) dining! I've been a couple of times now, and the menu has been different each time. I appreciate the range of prices, from expensive dinner steaks and fish plates to the more Waco-priced pastas and chicken dishes. I can't say I've loved everything I've tried there--some meals were a little too complex, and I didn't enjoy the combinations of certain flavors. But, I've also really enjoyed some dishes, and my friends have loved what they've tried too! It's fun to try the new menus and see what Blaine has cooked up next. Ambiance wise, they've done a lot to make a nondescript spot on Richland Dr into a nice dinner atmosphere. The wall art was fun to look at! It was a lively crowd! Food came relatively quickly. For hamburgers and fries and this being Texas, the prices being what they were it was simply inexcusable to not have ketchup! Blew my enjoyment right there! The waitress tried to talk me out of wanting it! If she would have led with that, we would have walked. The bacon was good on the burger but it needed ketchup! Huge old dry fries!! Needed ketchup. A darling bistro-style restaurant! Firstly, the service was amazing! I went with my sister who is a wine drinker. I am not, but I was offered a sweet tea. My sister loved her wine that was chosen by Jeremy (ask for him if you need a suggestion). It was Wednesday so the special was a deep dish style pizza. We ordered pepperoni along with Asian spicy wings. I loved the crust on the pizza and the pepperoni had great flavor. The spicy wings were very tasty, but could've used a little longer cook on them. I like my wings crispy. For dessert we had the tangerine cheesecake. So good! If you're a wine drinker, they have so many top of the line choices. This is a definite must. read more

Blaine, the owner, who is only 26 is literally a young Gordon Ramsey. Him and his staff are putting out some of the best food I've ever had. I came across this place randomly as I don't live in Waco and was just driving thru. And I was hungry enough to give it a shot not expecting much at all. And now I have to make the over hour drive from Austin semi-regularly to come here. And it's the easiest drive ever cuz the food he is preparing is an 11/10. read more

If I could rate this food a 6/5 stars I would. The serving sizes are very generous and the quality of the food is superb! The seasonal menu, and specials ensures that there will always be something new and exciting to try here. We went for my husbands birthday and they comped us glasses of champagne to celebrate which was so kind of them! The head chef was walking around checking on tables, which I thought was very special! Our server Miguel, was so knowledgeable about the food, and told us that he was very proud of the food they serve. The restaurant itself is cozy and inviting. The music was the perfect cherry on top! We went on the first Saturday at 6 and it was very busy but we got a small table for three. it took a while to get our food but that was understandable. My salmon wasn't even warm and was undercooked although my sister's was perfect. we ordered a dessert to share and waited a long time. we finally caught the waiter's attention and asked him to forget the pie and just bring the check. He said let me take care of that and brought the pie, then the check. We thought he meant the pie would be free, but it was included in the check. We'll try it again. read more

First time dinning at Blaine's. Loved the menu selections! The Cesar salad was delicious. The Pea & Ham ravioli was tasty. I'll be honest, didn't taste the ham at all and, it was lukewarm. Possibly our worst dining out experience in our Home Town, Waco: We are an elderly couple so maybe could be considered biased by younger diners. Difficult to see our way around in the darkness - only one small candle on each table to light the way & try to read the menu. Husbands said his steak was only okay. I ended up finally deciding on the pork chop - Big Mistake!! It arrived covered up by their version of an uptown slaw, of sorts, but, at least that part was very fresh. Every bite of the chop was a mouthful of FAT!! Eeek! Awful!! I never actually saw any meat itself. Service extremely slow:The table of 8 beside us, came in mostly after us (but staggered) but was served before our table of 2. Maybe because of 2 Clergy in their Group ?? Prayers could be helpful here. Cannot think of any redeeming feature of this little restaurant. We have advised Family & Friends to be sure to skip this place. Had digestive issues the next day. Blaine's is exactly what Waco needed! The food and drinks are very reasonably priced, and the service is top-notch. The upscale casual environment makes it a perfect spot for any occasion. We went for date night but are definitely going back for a GNO! We started with the caprese focaccia as an appetizer, which was delightful. The burger was hands down the best in town, and the sweet corn gnocchi was uniquely delicious with a hint of popcorn. My wife and I came on a Saturday night, very early. We sat at a table, and then decided to move to the bar. We had a wonderful experience. Rebecca served us at the bar. She was knowledgeable about the menu, and especially knowledgeable about the wine offerings. The wine list is reasonably priced with excellent variety. The food is exceptional. Everything we had was outstanding. We left feeling that this will be our new "go to" restaurant for informal fare in the future. By informal, I don't mean slapdash. We went to Blaine's last night. We are getting SO many new restaurants in Waco and we always give them a try. Only a couple times have we said we'll never be back. Most first visits are pretty good and we fairly enjoyed the experience leaving us with...we'll keep it in mind. I can't remember the last time I wanted to go back the very next day! We went on the opening weekend. We didn't realize it was the opening weekend. I'm going to chalk our experience up to it being an opening and they haven't gotten all the kinks out of their system yet. So hopefully if they read this, they will see some areas for improvement. First of all, no one greeted us at the door and we didn't know what to do if we were to see ourselves or wait. There was one empty table in front of us for two so we decided to just go ahead and take it, and I am glad we did. A lot of people came in after us. They seemed to under staff. Our waitress who was very kind was very overwhelmed, and everything took a long time. When we received our food, it was cold. We didn't really have an opportunity to tell the waitress due to how busy she was and we didn't really want to bother her to be honest because she had so much on her plate. We did not enjoy our food. And it was very crowded in the restaurant and loud. There was a man playing music, which was really nice, but I couldn't hear him. Hopefully this was all just due to the opening weekend.
