Great first dining experience here. Just down the street from us. So easy to get to. Great large bar area. And large dinning area in the restaurant part. Our bar tender Charles was great and friendly. We had our Miller and coors serve red in ice cold mugs. So prefect. And will be clutch on a hot summer days to come. We started with the burnt ends. A nice small appetizer packed with flavor. And the apples were a great touch. Just wish it was a litter larger. For our mains we had their burgers super yummy and fresh and hot. Just wish the fries weren't sitting in the window and matched the freshness of the burger. The burger was great very juicy and cheesy, reminded me a little of Billy Goats. The burger wasn't overly seasoned. Prefect! I believe the restaurant is relatively new and it's something to work on. I did notice our fries weren't the only ones waiting in the window for several minutes... My husband got the chicken warp to go. And he said it was fantastic! We'll be back for sure. read more

As we walked in we were told there was a 25 min wait. We were fine with that and asked for a menu to look at. We started to find a place to sit or stand but there was no place to do so. We were then awkwardly forced to stand in the middle of the entry way. Unfortunately we were asked to move several times since we were in the way. During this time I looked around. There are TVs everywhere. Great place to watch a game and get a beer. (Still standing awkwardly BTW). Mood is casual and loud. Expected for a sports bar. The place had open tables, which I assume are reserved seating. (Still standing awkwardly BTW). We knew it was reserved seating when we were asked to move again to try and seat a party of six. The bar looks slick, but I could easily tell everything was a mix because of the huge mixers behind the bar (see picture). I immediately thought of my allergies to lemon and lime concentrate so I knew what to ask when I ordered my margarita. No mixes or additives. (Still standing awkwardly BTW). I guess the staff saw we were in the way because they asked us if we could sit at a tall table. We said yes and were then seated. The furniture is comfortable, the TVs vast, and we ordered our drinks. I let the bartender know that I could not have anything but lemon and lime and agave in my drink. He agreed. During making my drink he had to come out and ask what my husband's drink was because he forgot making mine. We then ordered water with lemon. He set down my drink and I took a sip and that awful taste filled my throat - lemon juice/lime juice concentrate hit me hard. Ugh that taste! I told my husband and he said he would drink it. The bartender then brought us our waters but forgot the lemon. :(. Anyways, he was very nice and I did not want to upset anyone. We ordered nachos and a burger and I have to say the nachos were very unique and delicious. Totally made up for the errors. My husband enjoyed the burger and beer. The place is a bit pricey so beware Anyways, we probably will only get food next time. I cannot afford the rash from the mixes (my face is totally flushed my husband says.). Our second time at Hilltop Tavern was even better. To our surprise, our favorite server from another restaurant has moved to the Waco area and he took care of us like we were royalty. I ordered an appetizer for dinner (Pork Belly Burnt Ends) and they did not disappoint. The atmosphere at Hilltop is very family oriented. The husband and I have been twice now and both times we have received amazing service, food, and drinks. Noah at the bar is the absolute best. Food was great. Tried the confit chicken wings and I would rate them as phenomenal. Tried them dry rubbed with couple of their sauces on the side. I tried the buffalo sauce and the Carolina liquid gold bbq. The buffalo sauce was not traditional with what seemed to be a sharp vinegar taste but I did like this one the best. Not to mention the delicious ranch and also the tallow fries. We did sit at the bar and Noah was a fantastic bartender with great service. We will definitely be spending more time here. read more

Saturday night 5pm dinner with wife and 2 kids. Walked in and were seated pretty much immediately. Ambience is great. Staff is friendly. The brown leather chairs at the tables, super comfy. I had high expectations for this place given the chefs in charge. Overall this is the best bar food in Waco. Its a huge step above your Bubbas/Chilis type places with very similar prices. I would be willing to spend around $2 more per dish here at Hilltop. Will for sure be coming back we loved it. We ordered a bunch of food so here we go. Chips and Salsa. Salsa was not very spicy and had great flavor. However, if I'm paying $12 for chips and salsa I need more than a small bowl of salsa. The salsa refill was $3 more!!! $12 is already alot for chips and salsa, and $3 more for a refill is a little absurd to me. Barbacoa Empanada. Nothing negative to say here. Dough was the best part, light and crispy. The meat was really tender inside with great flavor. Toppings were the perfect compliment. Not super spicy which I liked. Tavern Burger. Nothing negative here either. Really solid burger. Patties were crisped perfectly. Buns buttered and toasted. The sauce on it was super good. You will love this burger. Fries. Personally I do not like shoe string fries so that was a disappointment for me. They needed salt too. If you like shoe string fries you'll like these. Mozzarella Log. I was disappointed. They add honey to the top which makes it a little sweet and there was no cheese pull. You GOTTA have a cheese pull with the amount of mozzarella they are serving you. On top of that there's no marinara sauce??? Huge miss. Only served with ranch and I only eat ranch with wings. One of my all time favorite things to order at a restaurant and missed the mark for me. Chicken tenders. Y'ALL! I'm not gonna lie these tenders on the kids menu are incredible. Might be the best tender in Waco. Super flavorful and crispy breading. So many tender places do a terrible job seasoning the breading and they perfected it here. Perfectly juicy inside too. Didn't need sauce. My son normally covers them in ketchup but was eating them without sauce. They gotta find a way to put these on the adult menu!!! read more

From the crunch to the hot honey to the cheesy inside! Harissa Honey butter sprouts, yes every time. Don't get me started on the chicken sandwich. If there's one on a menu I'm going to try and this one was 11/10. The taquitos were meaty, crispy and had the best creamy poblano verde sauce. Pickled onions and jalapeño were *chefs kiss* perfect matches for the beef barbacoa. Tallow fries were crunchy and craveable. No sauce needed, but if you're a condiment girl like me, try them with ranch and you won't be disappointed! We were already way too full but had to try the tres leeches cake, so happy with that choice! Our server Zachary was attentive, friendly, and made sure we had everything we needed. Poor service. You have eighteen employees that I could see, all just standing around chatting or on their phones. Beer selection - for a tavern we expected a bit better draft selection but it is what it is for Waco. Food - we got the mozz stick expecting the hot honey to be a very light addition or a side sauce- we got a funnel-cake tasting tube of melted cheese. Honestly it would have been great if it was appropriately seasoned with slight honey on top. As it was we ate 1/3 of it. Maybe if we considered going back we'd order it with no honey and ask for a side of hot sauce or something. Service again- if we don't eat the majority of what we ordered, why would you not ask why? She wiped that plate up and handed us the check like she didn't care at all that we left unsatisfied. All good, we don't really need to come back. read more

First, this place has been on my list since I moved to Waco and sadly was a BIG disappointment. Server had no personality nor was very attentive. We all ordered (6 of us) and oddly came out in different waves. Restaurant had just opened so they were not busy. My granddaughter and mine came out approximately 20 minutes after every one else's. Fries were cold and granddaughters chicken was also cold. One person asked for well done crispy fries but came out like all the others cold. My smash burger was dry and way over cooked. Son's wrap was not edible due to taste and server took it but didn't offer to get him something else or have a manager come speak with him. Nacho cheese was all at the bottom. Potato skins were cold and no chives. When the check came, his wrap was still included so I asked to speak with a manager which never showed up to hear our concerns but server brought updated bill with it being removed. All in all, a very sad Sunday brunch. read more

Tried to just delete my review instead of dumping on a new business trying to make it, but it seems I am unable. So here goes; We went back last night and everything you can think of involving a bar visit to watch a game went wrong. The craziest thing is that i have never seen so many staff per customer and yet they cannot get your order right, service right or your check right. Be sure you ask for a printed copy of your tab and review everything. We were overcharged for a beer we never received and an appetizer that we ordered as a side. I would likely have never noticed if it weren't for the fact we were sitting at she bar and had a front row seat to the s$&t show they have going on thar prompted me to insist on receiving a printed copy of my receipt. Sure enough, I was overcharged $11. I would have happily paid for the beer if we ever could get served, but unfortunately there were employees who just clocked out and changed shirts to sit at the bar who were way more important than us. This place has a leadership problem, and of course that is not going to end well. Unfortunate, because we really need something like what they were aiming to provide out here. read more
