I rarely leave reviews anymore unless I experience superb or atrocious service. This one falls into the former. Everything we have had here is not only unique (I am looking at you big 'olMozz stick)but a standout in terms of flavor. I will go out on a limb and say that their wings are not only some of the best I have ever had but their Carolina gold wings might be in the top 5 of greatest poultry dishes I have ever experienced. They are perfectly cooked, as they are not quite fall off the bone, more like the meat was holding hands with the bone. Not hard enough to hurt but just enough to show its love. The skin is crispy, and has the perfect hint of smoke. And that sauce is so good, it makes your mind start wondering about what other food items it could compliment. I truly value a place with plenty of parking and this place has it. I sat at the bar and was greeted promptly and ordered a Jim Beam and coke. It was a solid pour. The bar top has plenty of seating and a view into the kitchen. Tons of TVs around the entire restaurant, this would be a great place to hang out and watch sports all. My tavern smashburger was good, but the fries really stole the show. Service was friendly and attentive. A burger and two drinks was $28! Pretty happy with that! read more

We recently went to Hilltop Tavern because I was craving a pork steak and they have one on the menu. It was a Saturday afternoon and it wasn't that busy. We were seated in the back section. It was a great place. Lots of televisions and places to view them. We were promptly waited on and chose to start with a beer and the dip trio. It was a solid choice. My wife loves Pacifico on tap and she was especially excited to learn that the tall beers were cheaper than most places at happy hour. The dip trio came with a great smoky salsa. There was a strong taste of cumin (which I love, but my wife was not a fan of). The queso had a great flavor, and the guacamole was fresh and chunky. The chips are from a local supplier and never disappoint. For our mains, we had the hot honey wings, tallow fries, and the pork steak. I chose the fried okra and mac and cheese as my sides. The pork steak was smoky, tender, and really hit a great note. All of the sides were some of the best that we have had in a restaurant. The wings are smoked then fried. The flavor of the wings were on point. They were a little overcooked (fried a little too long) and a little tough. The sauce was simple, but really good. All in all, it was a great meal and we will return soon for a similar dinner. read more

Great first dining experience here. Just down the street from us. So easy to get to. Great large bar area. And large dinning area in the restaurant part. Our bar tender Charles was great and friendly. We had our Miller and coors serve red in ice cold mugs. So prefect. And will be clutch on a hot summer days to come. We started with the burnt ends. A nice small appetizer packed with flavor. And the apples were a great touch. Just wish it was a litter larger. For our mains we had their burgers super yummy and fresh and hot. Just wish the fries weren't sitting in the window and matched the freshness of the burger. The burger was great very juicy and cheesy, reminded me a little of Billy Goats. The burger wasn't overly seasoned. Prefect! I believe the restaurant is relatively new and it's something to work on. As we walked in we were told there was a 25 min wait. We were fine with that and asked for a menu to look at. We started to find a place to sit or stand but there was no place to do so. We were then awkwardly forced to stand in the middle of the entry way. Unfortunately we were asked to move several times since we were in the way. During this time I looked around. The bar looks slick, but I could easily tell everything was a mix because of the huge mixers behind the bar (see picture). I immediately thought of my allergies to lemon and lime concentrate so I knew what to ask when I ordered my margarita. No mixes or additives. (Still standing awkwardly BTW). I guess the staff saw we were in the way because they asked us if we could sit at a tall table. We said yes and were then seated. The furniture is comfortable, the TVs vast, and we ordered our drinks. I let the bartender know that I could not have anything but lemon and lime and agave in my drink. He agreed. During making my drink he had to come out and ask what my husband's drink was because he forgot making mine. We then ordered water with lemon. He set down my drink and I took a sip and that awful taste filled my throat - lemon juice/lime juice concentrate hit me hard. Ugh that taste! I told my husband and he said he would drink it. The bartender then brought us our waters but forgot the lemon. :(. Anyways, he was very nice and I did not want to upset anyone. We ordered nachos and a burger and I have to say the nachos were very unique and delicious. Totally made up for the errors. My husband enjoyed the burger and beer. The place is a bit pricey so beware Anyways, we probably will only get food next time. I cannot afford the rash from the mixes (my face is totally flushed my husband says.). The husband and I have been twice now and both times we have received amazing service, food, and drinks. Noah at the bar is the absolute best. Saturday night 5pm dinner with wife and 2 kids. Walked in and were seated pretty much immediately. Ambience is great. Staff is friendly. The brown leather chairs at the tables, super comfy. I had high expectations for this place given the chefs in charge. Overall this is the best bar food in Waco. Its a huge step above your Bubbas/Chilis type places with very similar prices. I would be willing to spend around $2 more per dish here at Hilltop. Will for sure be coming back we loved it. We ordered a bunch of food so here we go. Chips and Salsa. Salsa was not very spicy and had great flavor. However, if I'm paying $12 for chips and salsa I need more than a small bowl of salsa. The salsa refill was $3 more!!! $12 is already alot for chips and salsa, and $3 more for a refill is a little absurd to me. Barbacoa Empanada. Nothing negative to say here. Dough was the best part, light and crispy. The meat was really tender inside with great flavor. Toppings were the perfect compliment. Not super spicy which I liked. Tavern Burger. Nothing negative here either. Really solid burger. Patties were crisped perfectly. Buns buttered and toasted. The sauce on it was super good. You will love this burger. Fries. Personally I do not like shoe string fries so that was a disappointment for me. They needed salt too. If you like shoe string fries you'll like these. Mozzarella Log. I was disappointed. They add honey to the top which makes it a little sweet and there was no cheese pull. You GOTTA have a cheese pull with the amount of mozzarella they are serving you. On top of that there's no marinara sauce??? Huge miss. Only served with ranch and I only eat ranch with wings. One of my all time favorite things to order at a restaurant and missed the mark for me. Chicken tenders. Y'ALL! I'm not gonna lie these tenders on the kids menu are incredible. Might be the best tender in Waco. Super flavorful and crispy breading. So many tender places do a terrible job seasoning the breading and they perfected it here. Perfectly juicy inside too. Didn't need sauce. If there's one on a menu I'm going to try and this one was 11/10. The taquitos were meaty, crispy and had the best creamy poblano verde sauce. Pickled onions and jalapeño were *chefs kiss* perfect matches for the beef barbacoa. Tallow fries were crunchy and craveable. No sauce needed, but if you're a condiment girl like me, try them with ranch and you won't be disappointed! Poor service. You have eighteen employees that I could see, all just standing around chatting or on their phones. Beer selection - for a tavern we expected a bit better draft selection but it is what it is for Waco. Food - we got the mozz stick expecting the hot honey to be a very light addition or a side sauce- we got a funnel-cake tasting tube of melted cheese. Honestly it would have been great if it was appropriately seasoned with slight honey on top. As it was we ate 1/3 of it. Maybe if we considered going back we'd order it with no honey and ask for a side of hot sauce or something. Service again- if we don't eat the majority of what we ordered, why would you not ask why? Did some research and came u with Hilltop Tav. We choose to sit at the bar and the server acknowledged us with a menu and we could not get her for half an hour for even a drink. She came over to mix another drink and upon doing so squirted everyone at the bar in the face with liquid as she was trying to use a little washing thing on the bar to clean out the measuring glass she was using. Finally, another woman appears and others are calling her to get waited on. we also called her over to take our order and she told us she was a manager and would put in order but she did not work on the floor??? We ordered salad and wings that both sucked and the wings were to have a dry rub of fresh spices. when we got them they were very dry and tasted like old bacon grease. Told the server at the bar (husband ate 2) and she brought us a check. worst service, worst server, worst food and terrible people for being in this business. read more

First, this place has been on my list since I moved to Waco and sadly was a BIG disappointment. Server had no personality nor was very attentive. We all ordered (6 of us) and oddly came out in different waves. Restaurant had just opened so they were not busy. My granddaughter and mine came out approximately 20 minutes after every one else's. Fries were cold and granddaughters chicken was also cold. One person asked for well done crispy fries but came out like all the others cold. My smash burger was dry and way over cooked. Son's wrap was not edible due to taste and server took it but didn't offer to get him something else or have a manager come speak with him. Nacho cheese was all at the bottom. Potato skins were cold and no chives. When the check came, his wrap was still included so I asked to speak with a manager which never showed up to hear our concerns but server brought updated bill with it being removed. All in all, a very sad Sunday brunch. read more
