First off, the address on Yelp says Waldo and that will get you just south of the Wendy's where there are a bunch of abandoned buildings. The correct address from Google Maps is the same street number, 15070 US-301, but in Starke, which is 11 miles north of the Waldo address. We arrived around 3:30 on a Saturday, aware that their listed closing time is 5:30, but willing to give it a try. There were quite a few meats and sides scratched off the board - it's necessary to plan a day's cook conservatively so there is less waste at the end of each day. It can't be easy to put so many choices on the board with the tight margins restaurants work with. But there were still several things I wanted to try. I got a 2 meat platter with lamb chops and sliced pork with green beans and brussel sprouts for sides. The wife got a pulled pork sandwich and waffle fries. The soda machines were all out, but the teas and lemonades were just fine for us. The portions were really generous. And the meats were all really good. Lamb chops (3) were fork tender. Pork slices (4) needed a knife, but I was expecting that. Her sandwich was easily 1/3 to 1/2 lb of meat. Really tasty. And the sides - green beans were well done and flavorful - southern style obviously. The brussel sprouts were very nicely crisped with a sweet dressing on them. Really good. And the fries were properly GBD. Two sauces - a pretty sweet mustard sauce and a tangy red - maybe half way between Kansas sweet and Carolina vinegar. Both really good, but none of the meats really required sauce. Looking at other reviews it seems they change up the menu pretty often. But I'd definitely stop back in, maybe earlier in the day, to see how the brisket tastes. Or just to see what the choices are for that day. Everything we tried was great, so I'd be willing to try whatever else they offer. read more

Came here on a recommendation and boy am I glad was super legit Texas style bbq. Tasty, right amount of smoke, sauce good but the meat didn't need it. The sides were ample and very good. The brussel sprouts were so crispy and the sauce they were in very flavorful. We got 2 meat and 2 plates. One with flat iron, and pork belly burnt ends and one with flat Iron and sausage. Pork belly burnt ends a major winner. Delish fatty in the best way saucy and right balance of meat. The owner let us sample some turkey and beef rib and man I will def try that next time we go. wow! this place is unbelievable- stopped here on a whim on our way to gulf coast and so glad we did. The meat - brisket, flat iron and sausage were all melt in your mouth good. Blueline Q YUM! This food Truck has got some good bbq. Don't try to be healthy eating here lol we def got some cheat meal items that were well worth every bite! The brisket, which I got on three different things, was so good. The brisket bowl was superb. Everything thing you want in a southern bbq bowl, we just wanted more! Ha The brisket grilled cheese was really good too. Mac n cheese was really good, homemade and creamy with white cheddar cheese - my fav :) The fries were super good. Smothered and covered with all sorts of yummy stuff every piece has something on it. The homemade sauces- I got a couple different kinds. The hot was Tasty but not my kind of hot. When I say hot I want really hot lol. But that's not a bad thing, especially to my friends who don't like spicy. They did love all of the sauces, as well just would have loved a fairly spicier one. ;) The owner was really nice and I'd love to see this food truck around Gainesville more!! My first time eating at Blueline Q today. I ordered the 2 meat combo of ribs and burnt ends. OMG!! Amazing, that meat was so tender it melt in your mouth. Two sides comes with it and I had the Mac and cheese, they both were good except I never had finger chips as a topping on my Mac and cheese but it was creamy the bake beans were seasoned good as well. Enough food to feed at least 4 people, with a drink, all for $24. You gotta come try this place if you like barbecue. read more

We usually eat here 3 to 4 times a month. You know what they say sooner or later your going to have a bad meal. Saturday March 22nd we ordered the 2 meat plate x 2 to go.($50) The sausage was not even warm inside let alone cooked. The turkey not much better they both were under cooked. We took the plates and cooked them at home until the were safe to eat. No refund needed...gonna take a break from them and try the other guys. Good Luck read more

Last time we ate here the food was some of the best we have had in a long time. Very flavorful and juicy, went in yesterday to get some of the goodies and I guess we got there too late and didn't have much to pick from. So if you are going to eat here, and you should.
