There is was a line at Blue's Egg when I got there at 10:45 am on a Saturday morning, I was told I would have to wait a half an hour for a table. Shortly after I walked in I saw trays full of rectangle shaped plates stacked high with breakfasts that really should be doing food modeling.
Blues Egg lets you pour yourself a cup of coffee while you wait for you table. This gave me a chance to ask a women who was also getting a cup of coffee if Blue's was actually worth the wait. I think there is something to be said for the way people tell you about a restaurant. There are different kinds of "It's really good." I'm not saying I'm like a member of the Lightman Group, but her face lit up. People at Blue's Egg are psyched about Blue's Egg. So I waited and drank a really good cup of coffee. The people waiting with me at Blue's Egg where young and old and hip and not terribly hip and for the most part, they seemed perfectly willing to wait for breakfast at Blue's Egg.
Blue's Egg give you a playing card that they call when your table is ready. I was the 3 of diamond. They called my card and led me to a nice corner table. I fought the urge to take pictures of other peoples food as it passed by. The food should be framed and hung on a wall. But it's a little creepy to take snapshots of somebody else's breakfast.

* Crispy Crab Cake Remoulade: Poached Eggs, Pickled Peppers, Toasted Challah Bread, Cool Greens Salad. $12.95
* Savory Sweet Potato Pancakes: Topped with Smoked Salmon and Herbed Crème $11.95
Fuuuuuuuuuuuuddddggggeeee. Only I didn't say fudge. Those are some pretty sweet specials. Turns out there are only so many things you can eat during one meal.
As great as those specials look, I decided that these folks probably do something amazing every day and that whatever that was, was probably the Blue's Egg thing to have. So I asked the waiter what their specialties where and he said "Corned beef hash, Pulled Ham Benedict and Hash Browns"
I don't do corned beef hash, sorry. So I went with the pulled ham Benedict, which is a homemade English muffin, topped with a stack of shredded ham, a poached egg and hollandaise sauce. It's exactly as good as it sounds.
I got a side of hand shredded hash browns stuffed with goat cheese. Blue's Egg has a hash browns menu. The call them Browns. You can get hashbrowns stuffed with pulled ham and sharp cheddar or aged provolone, fresh basil and rich tomato sauce or Spinach, Parmesan and olive oil yogurt. Blue's Egg is not kidding around with their hashbrowns. And the goat cheese stuffed browns I had are exactly as good as they sound.
Finally, I got one pancake because the girl from the coffee counter said they were great. I think pancakes come from two schools: The thick buttermilk style and the thin crepe style. This pancake was more crepe like, and while they may do a great job at crepe like pancakes, I'm from the thick butter milk school. So while it was good, it didn't blow my socks off. The Eggs Benedict and hash brown however, left me sockless.
There was a group next to me that was unhappy with the wait for their food. I should point out, there is a very fast place you can get breakfast if you don't want to wait. It's called McDonalds. They have this thing where you don't even have to get out of your car. If you have strict time requirements either factor in the wait or save Blues for a day when you have time. I should say, once the food of the impatient people got to their table, they became very, very happy. If you are in the area and you love breakfast, I would highly recommend Blue's Egg. read more
