I had high expectations and was disappointed. We were here with a work group on a Monday night. I know Monday is not the busiest out to dinner night, but the place was empty. I had the half rack of ribs and thought it was just ok. Again I had high expectations based on the fact the ribs had won an award on Regis and Kelly (I believe the menu said that). Had lunch today at 1pm. Just in case it might be better closer to when they open. Why? It must be the way they are holding their protein after it comes off the smoker. My wife and I both tried the award winning ribs. For those of you that follow us you know we've tried a hundred. These would be in the bottom 10%. They've got little to no smoke ring and no taste of smoke. My 1/2 rack was dry without any fat left at all. They're not mushy dry and thankfully not fall of the bone. There is no seasoning left. I think they're wrapping them in plastic too hot and basting or stewing the flavor right out of them. Miriam tried a chicken thigh. Twice after she had sent one back. Both were over cooked and dry. Similarly flavorless. Dead. I don't think I've ever experienced a dry thigh like this. I liked the greens and the sweet mashers. The Memphis sauce was go. I didn't try the 4 others because barbecue isn't supposed to be spicy and the other sauces were. They took my wife's food off the check. Really terrific people and great service. We went for lunch based on the strength of the Yelp reviews and left unhappy. I tried the quarter rack rib and quarter chicken combo with collard greens and slaw. I always choose the leg and thigh when ordering chicken at barbecue places, as the breast can be dry. Well, this chicken was the Sahara of chicken meat...dry enough to be inedible. The ribs fared no better, and had little flavor and no smoke flavor to speak of at all. What I was served today does not constitute good barbecue, and is not simply a matter of preference or taste. Dry, flavorless meat that has no life, no chi left, is poorly handled. The collards weren't bad, just a little too sweet for my taste, and the slaw was bland and in need of seasoning. "Meh" on the cornbread as well. Service was very good, and the woman who took care of us did everything she could to make us happy, as did the owner, who brought me another plate of food, just in the case the first was an aberration. Yum. The ribs were to die for. They come out with a dry rub and you can go to the BBQ bar and choose from many different flavors. I went here on a Tuesday afternoon for a quick lunch. The atmosphere is really a sight - dim lights, large bar, nice staff and only a few other customers. I ordered the pulled chicken, broccoli salad and cole slaw. The chicken was great! You are offered different selections of bbq sauce (which you help yourself to). Boom! This was a good food experience. Southern hospitality and culinary tradition meets smoked meat in one of the cutest towns on the map. So, it's the old Withers Hardware place. Definitely an improvement over the restaurant that was here when I came years ago. Yelp!tastic reviews, especially from the likes of the the esteemed and reputable Tanya S., helped steer us to Bone Fire. Once again, Yelpers delivered. So, it was a perfect early summer Saturday afternoon and I had to schlep up to SWVA to help Wifey with some office furniture and such. I scouted food places on Yelp! and secretly hoped that she could be inclined to buy me lunch here. So, the prefect afternoon got even perfecterererer (sic). Turns out there was a 4-block-close-down-Main-Street car show in town so they were slammed. Driving in behind it, you know which place was THE place from the stacks of hardwood out back and that awesome smell of meat smoking along on a sunny day. The car show was no joke. Two '63 split-rear window Corvettes, two Cowl Inducted Chevelles, the absolute best black and blue flame paintjob I've ever seen, a handful of old Ford coupes, and some great car dudes. Mostly older, white, Southern car dudes. Only about 3 or 4 cars that weren't made Detroit though. Highlights were the fried pickles (we traded a few for some fried green tomatoes with the table of car show guys next to us and they joked that they liked the tomatoes until they realized how great the pickles were), corn fritters that live up to the hype, and smoked chicken. The fried pickles include the fryer crispies from the batter. I mean that little detail right there let me know that these folks mean business about the food. The servers were all super helpful. And it was slammed for a Saturday afternoon because of a car show that had Main Street blocked off. We tried several meats, the way we do. Ribs are falling off the bone, Wifey's way. A little too done for me. You know I'm particular about smoked meat. None of the meats tasted very smoky, but they weren't just baked either. We agreed that the meats could use a little more smoke flavor though. Pulled pork and chopped brisket were pretty good and the portions put that new Texas bbq chain in Johnson City to shame. Shame I say. So, we had some leftovers. Yay! And enjoyed them too. Miss Kitten made sure to let me know that she expected the corn fritter on her leftover plate! A certain German Shepherd and another certain Schnauzer almost got banished from the area for showing too much interest in my plate! There's somee sausage available, but only on a sandwich. Since I was with a dedicated Texas BBQ gal (meaning brisket, sausage, and beans are essential options for her) this would be at least a one-star demerit. The server offered to include some sausage in a combo plate for a charge, which was fine by us, but we got so distracted that Wifey forgot to order it. Poor servers put up with shit like this all day. They have several sauces, mostly very sweet with some exotic berry, peach, and habanero options. This is a good place for me to mention that, while I often mess up by fat fingering my phone, I believe in spelling, grammar, and my position on the necessity and correctness of the Oxford Comma is firm. Please, for the love of all that is good and fluffy in the world, use the damn thing! We liked the red pepper "Q"sauce the best. None of the sauces seemed very hot tasting, but one of them snuck up and opened my sinuses from my forehead to my neck I swear! Good/decent liquor selection here. I couldn't see any greens except for the few slices of tomato and cucumber on the rims of the plate. Half was covered in chopped brisket and the other half was filled with onion rings. As for the meat, it was just okay. the chopped brisket were a bit bland and not juicy. If you were going for the healthy route or like the freshness of a salad, I wouldn't recommend the salad. If you love meat and want a few greens to make you feel healthier... go for the salad. I loved the self serve sauce station with about 7-8 different kinds of bbq sauces. I tried their two hottest/spiciest and as for the spice level, was pretty weak and was more sweet than spicy. Pulled chicken Brisket Turkey Pulled pork Baked beans Corn fritters Grit cake Broccoli salad Cornbread came with both meals .....all was delicious. The standouts for us were the corn fritters (awesome!), brisket and turkey. Everything else was yummy but not above and beyond. An awesome plus- free kids meal (under 10 yrs old) with each adult meal! We got two pulled pork sandwiches (I got one for each kid thinking they were probably slider size...they were full size), mashed sweet potatoes and green beans. Thus, most bbq restos in East TN/SWVA disappoint. It's quite evident that they obsess over the pork here, as it's very flavorful with a subtle, nuanced smokiness to it. The handmade chips and buns are further evidence that no detail is spared in their quest to create a compelling customer experience. However, it's seems odd to add a 3% surcharge to debit/cc transactions in 2017, as most entrepreneurs incorporate said cost into prices on the menu. When you leverage Square, Stripe, and other companies, its actually never been more affordable for businesses to accept credit cards. read more
