Another top-notch Italian food truck! Braulio's Bistro is located at Modesto Grub Hubs food truck park and they are serving up some of your favorite Italian dishes. The menu isn't too big but they do have a menu for lunch and a separate menu for dinner, the dinner menu has a bit more offerings. The prices are a little on the high side but the quality and taste of the food justifies those prices. I have been trying to come to this food truck for a month or so now but I'm usually in the area on the says they are closed which are Sunday through Tuesday. They also are only open for dinner on Saturdays from 4pm - 8pm. I happened to pass by during dinner hours on a Friday and immediately stopped. The dinner menu had a variety of items such as fettuccine alfredo, penne romano, penne pesto, shrimp linguini, chicken parmigiana, chicken marsala and many other pasta/chicken & fish dishes. They also had a kids menu, various sides and drinks. I decided against getting my basic fettuccine alfredo and instead got the penne pesto, I was told that the pesto is made daily and it's one of the most popular dishes on the menu. The penne pesto was so delicious, the sauce was creamy, nutty and had such a good flavor and was not too oily. The pasta was cooked to perfection and was topped with fresh parmesan and parsley. I definitely could taste that the pesto was made from scratch. The dish also came with fresh baked garlic bread that was so divine. It was light and airy, had the right amount of garlic flavor and tasted even better dipped in the pesto sauce. Overall, I'm so glad that I gave this place a try and I will be back when I'm in the area and craving pasta. The prices are steep, but it is so worth it! High quality ingredients and choices for protein. First, my pasta came out completely dry because they forgot to add the sauce and I specifically asked for fettuccine Alfredo with my meal. Then, the mashed potatoes that were supposed to come with my meal never made it into the order. On top of that, I specifically ordered the dinner portion but was given a lunch size instead. The quality of service and attention to detail were terrible. The cook clearly isn't paying attention, and the person taking orders isn't doing their job either. When people pay for food, they expect to get exactly what they ordered -- not less. This food truck really needs to step up their game. read more

Great food - terrible prices. And they're open...sometimes... multiple times when we first discovered them, fell in love and tried to go they were closed. Just make sure you check the hours online - but sometimes even that was misleading! Every time we go pick up for 2 and it's $50+ because we wanted to add some veggies and chicken to one of the pastas is egregious. A $6-$7 fee for added chicken is killer. A similar add for MUSHROOMS?! We'd go there way more often if it wasn't like taking out a small mortgage for some pasta noodles and sauce. But again, the sauce is bangin'. I am rating this in the category it is...Food Truck! I saw this truck on Yelp and the food looked delicious so I decided to try. It is located at the Modesto Grubs Hub. We had the Chicken Parm (2 orders because I wanted to sample it), the Penne Romano w/shrimp and the Cajun Linguini which had Chicken, shrimp and spicy sausage. The food containers were top notch helping to prevent spillage which is important especially if you order through Doordash. The containers also keep the food warm enough so that you don't have to reheat it when you get home. The portions are generous and the Chicken Parm is enough for two. My wife had the Penne Romano w/shrimp (5 total shrimp). She said it was delicious and would order again. My Son had the Chicken Parm and said it was really good and would order again. I am spoiled about Chicken Parm because my wife actually uses parmesan cheese to bread the chicken not bread crumbs and browns it in butter. But hey, this food truck's Chicken Parm can run against any restaurant in Modesto. I had the Cajun Linguini which had chicken, shrimp and spicy sausage. The heat was a slowly intensifying, Cajun slow burn that didn't overwhelm the dish. It was the Bomb! Only negative is my dish only had (3) shrimp. Pretty standard for any shrimp dish I have ever ordered is it includes at least (5) shrimp. Not a deal breaker though. Chalk it up as an oversight. Overall, the best place to eat your food is right there at the tables after you receive your order while it is still fresh and piping hot. The staff is very friendly and helpful. The price point is fair it is a value IMHO, especially with the generous portions. Did I mention the generous portions? Also, the quality of the food came through in the dish. I believe this is a new truck and f they remain steadfast to quality ingredients, and the little details over time, it is only going to get better. I follow them on Instagram and I have gone there within them. Definitely always check their Instagram to see if they're closed because that's where they will post. No apologies or anything because why would I go during lunchtime in order off the dinner menu and my food was the lunch price. I explained what I did online when ordering maybe I'm wrong but they never responded to me after I told them what I had selected on there website. I guess you can say the customer service was just really sad because I've had high hopes for here and it was my second time ordering. Also, I ordered the pesto pasta with shrimp and my stomach hurt the entire day for my first meal it did not do it to me.
