Your feelings about the Brushmill will all depend on exactly your reason for going there. If you're going to dine on the prime rib, you'd rate this 5 stars. If you're going for anything else, you'd give this restaurant 3 stars. The prime rib is very good- order the large "queen size" piece, or the gargantuan "king size" slab- enough to feed 2-3 mortal sized appetites. The other entrees are okay, but not noteworthy in any other way. A few suggestions that would improve the dining experience- don't use prepackaged butter in those little squares. Use fresh-cut butter patties - or even better, whipped butter. The baked potato was obviously either from the previous day, or had been baked hours earlier. And the $15 Caesar salad was a small portion of romaine lettuce, a sprinkle of Parmesan, dressing, and croutons. I'd expect a lot more for the price. I did enjoy the prime rib which was tasty, and served rare- the way I like it. And the lobster tail was also good and complimented the meat. So if you're looking to feast on prime rib, then this is the place for you. read more

The service was fantastic. They were extremely accommodating and attentive. The food was good but extremely innovative. I say this simply with the caveat for folks that are not adventurous eaters. Definitely the most creative fusion food you can get around here. Know that going into it and be delightfully surprised. I was disappointed in the decor choices. Its a bit austere for folks that might be fond of the historical significance that this location embodied. It was a great experience and worth trying if you haven't been yet. read more

But decided not to order food because the bartender was rude and mean to the other staff working with her. called one of the workers stupid because of an issue with the dishwasher. The property is very unique. To enter the restaurant from the parking lot you cross a bridge across a good size stream with a waterfall. The building is an old mill that has been thoughtfully renovated integrating contemporary design with the historic mill. Very nice. Drinks were creative and very good. The service was very good. The menu was small and the food was OK. In my opinion I think they need to work on the food offering. Pricing was what I expected ( $149 for 2 including the tip). This restaurant has the potential to be a big success. read more

It's unfortunate that the owner has no idea who we actually "were" yet is extremely defensive and seems to have knowledge about how frequently we were checked in on. None of this happened. While I'm happy you'd like to think this process was completed for all tables, it certainly wasn't. We were seated in a room in which there were only 2 tables assigned to our server and the other table also needed to get up multiple times to find the server. It's unfortunate you can't even take accountability for your poor service and food. read more

Terrible! Very slow service. Drinks awful and had to wait 15-20 minutes for them (no tanquay gin., asked for extra dry volka martini and got a glass full of vermouth). The chicken liver pate was a piece of toast with a creamy untasty spread and no liver.. Ordered Shrimp Fra Diavolo and waitress came back 20 minutes later and said "No Shrimp" Ordered medium steak and served one bloody rare that was 35% grizzle at an over priced of $40. Took 2 hours for the meal and that was without coffee and dessert. The old Sage was one of my favorite places to eat...this is my worst!. For me it is one and done read more

We were a large party with a reservation. We were seated right away, that's a good start. Service was very slow for the amount of staff that was standing around. The drinks were okay, they took quite awhile as well. Food, it's a smaller menu with small and large plates. The food itself is not that good. Not that bad, just not that good. The staff brought out some guests meal about 30 minutes prior to others in our party. They sent it back and said they would cook new ones. No, just tried to heat them up. Not good at all. Steaks we cold, one person had prime rib and he brought it home for his dog. Again, we were a large party and having a good time....until they told us that we had to leave because they had another reservation. It wasn't that busy, we kept waiting for drinks and dessert but they wanted us to go. Honestly, they don't seem ready to be open yet. Items missing, equipment not working. A lot of excuses and the manager, kept attempting to school is on food. Maybe one of us is a chef? My husband brought our family here for Mother's Day brunch and what a delightful experience! The owners have spared no expense in updating this venue with contemporary, elegant, industrial style decor. We walked across the charming bridge over a little river and into a stunning atmosphere loaded with natural wood, slate tiled floors and iron artifacts from the original brushmill beautifully displayed. We plan on hosting all of our special occasions in this very cool place. We were seated in a quiet, intimate upstairs dining space and enjoyed exquisite food. I had tuna tartare, scallops and lobster eggs benedict containing a generous portion of lobster. Other family members enjoyed delicious creamy risotto perfectly dressed with baby mushrooms and truffle oil. The staff was super sweet, attentive and friendly, offering the little ones in our group "extra chocolaty chocolate milk." Our experience was just perfect and we will definitely be back again. read more

Been coming here for fifteen plus years. Usually a decent meal. Tonight- not so much. Limited COVID menu- which I understand- and supporting our favorite area restaurants is important to us. But being honest with their patrons has apparently not survived the virus. Wife and I both ordered the "Delmonico Steak" with balsamic and Gorgonzola. What we ACTUALLY received was a crappy end piece of pre-cooked prime rib (which is usually a go-to favorite there) lightly grilled and SMOTHERED in garnish to cover up the chef's deception. Second time coming here and this time had the prime rib dinners. Very large portion of tender beef and very tasty. Two sides and warm rolls that were delicious. I had a nice fresh salad with orange vinaigrette to start. Our server Natalie was very pleasant and so efficient. The atmosphere is so historic and comfortable inside with a nice bar area with arm chairs and sofa. The outdoor area next to the waterfall is so nice so we'll be back to sit out there when the weather is warm. read more

2 of us went to the downstairs bar Sunday night. We each ordered a glass of Pinot Noir, and the sweet potato soup with curry. Soup was rich and tasty with just the right spice, good. February, 2023 2 people: $145 Returning customer after visiting multiple times prior to the renovations and change in management. Previous visits were all 5/5. Atmosphere 3/5: We appreciated the attention to detail in the renovations to make it a mix of modern while retaining the rustic feel and charm of the mill itself that the old management worked so hard to capture. New management added a wine bar dining area which is located upstairs which previously was storage rooms. The kitchen was moved upstairs and had a open window concept that allowed patrons to look in and watch their food being prepared - quite a nice touch. The tavern downstairs remained very similar to the previous dining room from the old management (only more modernized). They modernized the classic fireplace, and made it more accommodating for the bar area because there was more space to sit and have a drink. They also added two extra bathroom locations in addition to the main bathroom on the first floor. What made the Atmosphere 3/5 and overall 4/5: it is cold in the winter. The mill still remains its classic self and the old structure doesn't have much insulation, feet and legs and ears were cold the whole time during dining in the wine bar dining room, so if you're visiting in the winter months, be sure to dress warmly thick socks and pants - ladies bring a sweater and don't wear open toed shoes in the winter months. The downstairs tavern seemed to have more heat then the upstairs though as we walked through. Staff/Service 4/5: We had server Seamus who was a 5/5. However, a girl bar-back served our drinks and ended up serving us without our olive garnish for our dirty martini and ended up spilling our one drink as she handed it to us without trying to rectify it by offering napkins, leaving a wet drink on our table, she did not seem to care much for the customers experience. The dirty martini was initially made with an infused vodka which killed the dirty martini unique taste and no olives as we had requested which Seamus quickly worked to rectify and provided us with a remade martini ASAP. Seamus was very professional and courteous and was able to answer our questions about the food. The service and food was prompt and did not have to wait long nor feel rushed. Food 5/5: Still 5/5 as it was with previous management. Management was open to customers suggestions of new menu choices such as possibly escargot in the summer time. In addition, the hostess explained that the two main chefs have free range for developing the menu and new dishes which is inspiring to know that all food that is crafted is unique to the chef's creativity and expertise. Food is sourced from local farms which is great to know and support. Appetizer Pork Onigiri 4/5- this was an Asian cuisine that was a fried rice ball with pork and kimchi and wrapped in seaweed. It was incredibly flavorful and pro tip - make sure you eat it with the scallions garnish and glaze because it helps enhance the flavor. Smash burger 5/5 - Delicious, we'll made, not oily which is pleasant to see in a burger. At the same time, it was juicy and flavorful and it didn't drip down your hand as you held it. It was served with a side of fries which were scrumptious and probably the best fries we have had in a long time. New York Strip 5/5 - it was cooked to perfection, medium rare, the bacon foam was an exception addition of flavor, the black mushrooms were also a nice touch for texture and earthy flavor and mouthfeel. Chocolate Torte 5/5 - FYI this is small, but it's very satisfying for two people and a burst of different flavors all in one. The honeycomb was a great accent and you can tell the honey is fresh. The espresso foam paired very well with the cocoa and all together was an excellent balance of flavors. You could really taste the honey which stood out and the espresso has a nice finish. Overall 4/5: Will come back in the summertime and compare it again with our past experiences. We wish it was warmer especially by the window tables - the seating near the windows is cold, not much insulation in the walls/windows and we did not see a heating source in our dining area, would be helpful to have some type of radiators or baseboard heating by the feet near the walls, hopefully they will invest in this for the next winter season. read more

First time since the renovation. It was so heartbreaking to see that the old tavern was gone. Such a beautiful piece of history demolished. As for the food, the drinks were a little stingy for the price, service was a bit uneven. My dining mates liked their entrées but mine was extremely bland. Would we go back? Not sure. It's a relatively new crew so, in fairness, I'm sure that they are just starting to get traction on the service. read more

We chose our wedding anniversary as the occasion on which to revisit this lovely place, not having been there since the renovation. So much nicer - the rooms are inviting, the location is stellar, the lighting subdued and the noise level low enough to enjoy conversation with your table mate. Service was spot on; everyone with whom we interacted was friendly, helpful and professional. And the food was lovely! We started with a green salad, pretty anodyne, and a nice cheese plate, then both had the duck breast entree. Perfectly cooked, and beautifully plated. Would certainly go again! read more

Beautiful restoration of the space by an owner who cares about its history. Very friendly service. Drinks took too long to come out and mains for our table of 5 were served over about 10 minutes rather than simultaneously. The food was inconsistent and the chef needs to up their game for $35-$45 entrees. Scallops came on a indistinct soupyness of onions and corn with sauces that were different colors but didn't contribute variety to the flavor profile. The scallops themselves, although fresh, were cut in half horizontally (ugh) and while half of them were seared, the other half were pale and flabby. (See picture) Tuna crudo had good tuna but the only other flavor was sweet - not bad, just missing something to make it sing a bit. Would love to see this place thrive - encourage them to focus more energy on what they're putting on the plate. read more

I'm 51 and I used to go here when it was called the Charthouse with my family in the 1970's. I would always order filet mignon and chocolate mousse for dessert. The fire would be blazing in the winter and the view of th waterfall was always amazing. The Brushmill has been renovating since I've been moved back to take care of my parents and I look forward to enjoying the food and ambiance and view once more. Based on the reviews, the menu hasn't changed much. As an aspiring vegan due to several issues, I hope I can try something new for an entree but I hope they still offer chocolate mousse! We mentioned a shrimp allergy, and did not order shrimp or any shellfish - the Chef refused our order of French fries because they use the same deep fryer for seafood and non-seafood. I refused to pick another app and if we'd not been with another couple I would have paid for my drinks and left. Someone else got fries with their meal and they smelled and tasted fishy, and so we'd never go back. We have been to the new restaurant twice since it opened about one month ago. The renovations are really impressive and make the best of the old mill... it's got a rustic chic finish that enhances all the wood and original vintage details. The food was delicious, very thoughtful and prepared perfectly. This isn't a "more is better" dining experience... it's a legit foodie spot. So far we've tried the duck, fish, and prime rib ... all beautifully plated and delicious. We had the Korean wings and fluke crudo for appetizers. Definitely get the wings!! Lava cake and blueberry soufflé are yummy. Service was very professional, warm and attentive, we dined in the wine library both times and Seamus made us feel very welcome and well-cared for. One of the best overall restaurant experiences I've had all year. Located in the old Chart House, Brushmill's is visually impressive. The old mill has incredibly restored wood features and stone work yet manages to feel warm and contemporary. The staff could not have been more knowledgeable and accommodating, even relocating us to the dining room from a tavern room table even though we had not made a reservation. The farm to table menu wanders the globe for inspiration and all apps and entrees were a hit. Mussels in curry broth, tuna tartare, shrimp po boys, prime rib poutine all under the same roof? Yup and all spot on. Loved the mango mocktail, local IPA and decent house Cabs too, all fairly priced. New owner made a point of finding us and sealed the deal with his interest in our satisfaction. We had a wonderful time at Brushmill this past Sunday. The restaurant was not busy so I understand busier nights can be tougher, but we were seated in a beautiful room with 4-6 other tables. Our very chill and relaxed 7 month old daughter loves going out for dinner and we were elated to feel welcome even with a baby. The food was fantastic. Let alone the best gluten free bread I've ever had. The icing on the cake was the beautiful "family room" downstairs equipped with a changing table for myself and my daughter to use. The staff were attentive, warm and inviting, the ambiance is nothing short of stunning, and the food was hot, tasty, and fantastic. My husband and I got to experience a wonderful and beautiful date night at a fine dining establishment, that was not stuffy or pretentious, all because they welcomed our daughter with open arms. I like this place. We usually dine in the bar area which is dimly lit, but cozy. It feels like an old inn. There is usually a nice fire going and people sitting on the couches chatting. It is low key and laid back, the environment and the people. We have struck up conversations with neighbors we did not know as well as some pilots who love to come in for a post flight drink. The past few times They have good food and a great prime rib! If you cannot get into some of the other great places in Chester, I strongly suggest giving this place a try! read more

My friend and I live out of town and revisited the restaurant after having fond memories of eating by the fireplace at the old tavern 2 years ago. We were disappointed to see the charm gone and were unimpressed by the food. While the renovations were tasteful and extensive, we missed the cozy feel of the old place. Our waitress was very nice, and the food came quite quickly. The problem was that virtually every dish seemed too salty and without much taste - with the pound chicken being particularly disappointing with an odd mixture of accompaniments. Even the specialty cocktails were too sweet. We left feeling that the almost $200 we spent was largely wasted. We will go elsewhere next time. read more

I would not recommend anyone spend their time or money at Brushmill. The servers were clueless and this was the first time I have ever had skirt steak that was terrible.
