I lived in Hawaii and know good Polynesian cuisine but Jeff and the Island Loco crew bring the islands here...for real. Some tips: The fusion tacos are awesome -- the corn and black bean salsa is to die for. The kalua pork is great, but my favorite was a simple teriyaki chicken bowl with a side of mac salad. But if you really want the money dish, be sure to get whatever entree you like with a side salad and the extraordinary sesame dressing Jeff makes. Wow. So much umami! As we grew older we gleaned the best of what we enjoy and developed them into our own cooking skills. My wife being Korean born refined her cooking skills in the eastern cuisine like Korean, Japanese, Thailand, and others while I have refined my skills with French and Italian. Prescott is a beautiful place to live but its culinary basis is built on sawdust. We usually cook for ourselves if we want a top notch meal. Now the past several years I have been confined to a wheelchair and transport is very limited. We used to spend winters in Hawaii where we could get great quality meals and seafood whether we prepared them or went out. So our 40th! I wanted to do something special for my wife since I have not been living up to my end of our culinary relationship being confined to a wheelchair. Thus I started seeking out a Chef that would come to our home with his staff and prepare a custom made meal for us. I selected Chef Thomas and Copper State Kitchen. I started by a rather lengthy discussion via phone and followed up with sending Chef Thomas some of our favorite recipes, sufficient for him to develop a five-course meal for us. Chef Thomas is very professional and easy to work with. We refined the meal over the next two days we agreed on the following proposed menu; I supplied the wines. Amuse-Bouche * Fig Jam, Blue Cheese, Red Wine Poached Pear & Arugula Crostini Starter * Prime Rib Poke with sesame crunch and microgreens and pipkuala aioli (based on my deconstruction of the infamous Tiki Bar in Waikiki dish) Pasta Course * Lobster Tagliatelle in a Champagne Cream Sauce Main Course * Beef Wellington with foie gras and red wine demi-glace Dessert * Crème Brûlée (torched table-side) Wine Pairings * Santa Margarita Prosecco DOCG * Domaine Salmon Sancerre Sauvignon Blanc * Tenuta de Sesta Brunello di Montalcino 1996 * Chateau Rieussec 1st Grand Cru Classe 1863 Sauternes 2004 Every course was perfect and very enjoyable. Filet-o-fish is one of my favorites of all time, and the filet de fish did not disappoint at all! The first bite had us levitating and seeing stars. The tartare sauce that the fried fish was smothered in was delicious and creamy, and the fish fillet itself was tender and flaky. The toasted and soft Japanese bun was the cherry on top. Simple and comforting and nostalgic, but elevated in the best way. We also tried their popular Viva Mexico, but we felt like it lacked in flavor and only tasted spicy, if that makes sense. Beef tallow fries were okay and not anything special. Great portions, however, it was still pretty expensive for a food truck burger. I'm glad I got to try this place out and will be back if the filet de fish hits the menu again, and would try their Signature next time.

We went right when it opened on a Saturday. It was super busy! There was almost no where to park! Inside was spacious and we found a seat easily for the 4 of us. You walk up to order (like chipotle) and then take your food to your seat. The line was almost out the door but moved relatively quickly. I tried all the salsas and the orange one was my favorite. None of them are very spicy, in my opinion-they do have some heat but nothing that will blow your pallet out. My 18 month old had the red one and liked it, if that tells you anything. The pastor is what I ate, the gringa and the taco. Both were exceptional. The meat was super flavorful and all of the toppings contributed to the flavor. The gringa-with the cheese was very greasy, so be ware. Not sure if it really needed that, the taco version is perfect to me. Chips come with a big thing of the red salsa and that was good to have. Lots of families were there. They don't have high hairs just fyi.
