I firmly believe to not bite the hand that feeds and kindly told the server it's no fault of his own what the kitchen had plated for us and kindly asked him for a bun and fixings for my wife and he quickly got it for her without hesitation. I told him I appreciated his efforts for the evening and tipped him well (hardworking servers deserve good tips) but this review is for the management of Cattlemens. This place used to be our families go to. The food has gone down hill so much it's a waste of money. Dined Monday and all the meat was dry. Steaks were basically jerky. Salmon was so burnt they poured teriyaki on it to mask it but the top layer of burned fish was all you could taste. We ordered 10 oz filets anticipating being able to take some home as leftovers--because it's always been so good! Not this time. My filet was not shaped like a filet. It was weird shaped with thick and thinner places on it. It looked like a leftover chunk. Consequently it did not cook right. It was very blue and not easy to cut through. The fantastic kind waitress took it back to be fixed, brought it back and it was more done on the outside and where I cut it but still nearly raw in the thicker part. Inedible. At that point the manager came over, saw how bad it was and offered to fix it. My partner was nearly done eating so I requested a discount t of half since I did eat and enjoy half of the dinner. He agreed, that's what was done. I wouldn't recommend this place because the quality of meat has gone down. It's now not special and you'd get better at any of the other chains around here. So....Hubs and I were hankerin' for a steak dinner, right so where do you go when that craving hits? Usually a steakhouse. Sure there are a few in Fresno that are notable but we also weren't looking to break the bank and have heard this-and-that about Cattlemen's and figured that we'd throw caution to the wind. It seems that there are either Valley "loyalists" that will give it five stars regardless because of their personal love of the place, or those that have "hit-and-miss" experiences...we were testing our theories. And we are glad we did, too! It must have been a "hit" night! We called ahead and they offered to put us on the list, to shorten our wait as we were driving from Fresno - yay! It was a weeknight and upon arrival the place was packed...people were waiting to get in. Our drive didn't take as long as expected so we waited an additional 5 or so minutes once we arrived - not a big deal. The restaurant was packed and is very large so they were definitely slingin' some vittles. We were excited to see how our experience would go forward. Hubs and I ordered the Original Steak Dinners For Two, which comes with an appetizer, salad for the table, two entrees plus two desserts (not the single dessert as standard offered at other places for dinner-for-two combos). Our server was smiling and courteous and brought drinks quickly, and took our order just as quickly, despite also taking care of a huge table of 12+ people next to us. Tumbleweed onions were our starter - and they were plentiful AND delicious. The salad was brought, the ranch dressing - is to die for, as everyone states. The sourdough rolls were also mouthwatering and did not disappoint. So far, we were off to a great start! We both ordered the Rustler Rib Eye 14 oz steak, mine was medium, Hubs was medium rare. They were both cooked exactly as ordered. As we wandered through out delicious meal, we kept waiting for the other shoe to drop, hoping for the best, but expecting the worst, as with any restaurant we try for the first time. We did not get the 2x baked potatoes - instead I chose a classic baked potato w/ the works and Hubs ordered mashed. They were SO GOOD. We took our time, our server never made us feel rushed. The Dinner For Two also came with 2 desserts, and we chose the cheesecake and the 3x chocolate cake. We couldn't finish them and ended up taking them home, along with packing up the majority of my steak and potato (this is normal - I always order too much and enjoy every bite the next day!). We were stoked - our experience was awesome and our waitstaff made it even more wonderful. The food was fabulous, cooked exactly as requested. There was nothing that I could say except "Thank You" Cattlemen's, for providing a great, fun experience w/out breaking our bank. So until our next venture here, to see about an "off" night....I've only got good things to say....and as always, this will follow with an additional visit to test our theories for consistency. I've heard the rave about this place, so decided to give it a try. There are few reasons why I gave it a 2 star review. First, we had reservations for 7:00 pm and we were actually seated at 7:45, so it defeats the point of making a reservation in advance. Secondly, we had a toddler and were told a high chair was being brought, 5 minutes later nothing. So we kindly asked a hostess by the name of Johanna or Jovana and to our dismay, she placed her hand up and said it's coming and proceeded to walk away. She was completely rude and as an business executive, if one of my employees acted that way, they be unemployed in a heartbeat. She's in a service oriented business and needs to act like it. So she really left a negative impression of service to add to the already super slow service of waiting to have our drink order taken and to finish dinner. Third, the dinner for two is a great deal, but when ordering a 14 oz ribeye, the medium was served almost rare to medium rare. Perhaps I misunderstood the word "steakhouse" as of a more upscale dining. I will say, the double stuffed potatoes and the warm sourdough was a complete consolation at dinner. We took our desert home and to top it off, a long brown hair in it. Our server was pleasant but definitely her accessory staff fell way below satisfactorily. Traditionally we celebrate our wedding anniversary with cocktails, appetizers, and dinner here and the food is usually great. Yesterday's experience was a huge disappointment. The prime rib was so rubbery, I couldn't even cut it. My wife's steak was at 2 temps under what she ordered. I sent my prime rib back, something I rarely do, for a ribeye which was basically raw.
