Definitely, Chabuca is the definition of "never judge a book by its cover." This restaurant is located inside a gas station--you heard that right, literally inside a gas station. If you judge it only from the outside, you'll probably never go in. But take a chance--you won't regret it. The moment you step inside, you're transported somewhere else. The décor is simple, yet warm and inviting, making the space feel incredibly cozy. The service took a little while, but like they say, everything good in life takes time. We started with the Pisco Sour and the Maracuyá Sour, two traditional Peruvian cocktails that were the perfect way to begin our Peruvian culinary journey. For appetizers, we had the Yuquitas Inka and the Classic Ceviche. The Yuquitas Inka are a crispy cassava balls filled with cheese and served with huancaína sauce. The only thing you need to know is that these are little clouds from heaven, covered in an absolutely incredible sauce. Now for the Classic Ceviche, simple flavors done right. You can truly taste how fresh the fish is and that everything is made to order. Sometimes, classic really is better, and this ceviche is the perfect example. For our entrée, we ordered the Lomo Saltado. The tenderloin was cooked to perfection and literally melted in our mouths. It was so tender that, even after feeling full, we couldn't stop going back for another bite. The savory sauce tasted like pure comfort, and the crispy french fries were the perfect vessel to soak up every last drop. Served alongside rice, this is an exceptional dish and an absolute must-order. To finish the meal, we had the Tres Leches, a traditional Latin American dessert found in many countries, yet I'm always amazed by how unique each version can be. Their Tres Leches is incredibly moist, topped with crispy coconut flakes, and was the perfect sweet ending to an unforgettable meal. read more

I had the lomo saltado and it was spot‑on: tons of steak, a huge portion of flavorful rice, and fries mixed in just the way it should be. Honestly, the whole table had the same dish because we couldn't decide and everyone loved it. Service was thoughtful, everything came out quick and easy, and the whole experience was way better than I expected from the outside. This was a dinner with a group of friends who hadn't seen each other in a while (25 years) and now that the circle has grown, I was the new one at the table. They had to see if I was "friend" worthy too. So naturally, they took me to a restaurant attached to a gas station. A gas station. But listen, I'm familiar with the dirty South, where gas‑station food is practically a love language, so this wasn't my first rodeo. I walked in fully prepared for flickering lights, mystery smells, and maybe a man named Bubba buying beef jerky or scratch offs. Instead, Chabuca hit me with mood lighting, real menus, and a vibe that said, "Yes, we share a bathroom with a gas station, but we are still THAT girl." Okayyyyyyyy then girl! (Clock it finger motion) It was actually busy, and honestly? I was impressed. You walk in expecting "gas station chic," but this place had no business being this cute, this classy, or this delicious. The staff was friendly, the atmosphere was giving "hidden gem," and the food came out fast and fresh and not a microwave in sight. For a restaurant that shares a restroom with people pumping diesel, this place is out here serving like it's auditioning for a Food Network feature. This was "I'd bring my mama here" good. This was "I forgot I parked next to a gas pump" good. I came in expecting chaos and convenience‑store energy. I left a believer. This restaurant is such a hidden gem! We didn't know what to expect upon arriving to the restaurant seeing that it was attached to a gas station, but don't judge a book by it's cover and don't judge this restaurant based on its location! Everyone loved everything we ordered, even my 8 and 12 year old nephews. - The grilled octopus was cooked to perfection and had such a good char and was seasoned well. - The classic ceviche was fresh, tender, tangy, and delicious. - The lomo saltado was flavorful, tender, and we couldn't get enough of the sauce it came with. - The crispy fish with seafood sauce was cooked very well and had such a good creamy sauce! The portion was also very generous especially for seafood! - The seco a la nortena was ok. The other dishes were so good that this one was just ok in comparison. It was still tasty, but felt like more of a comfort, homey dish. Chabuca exceeded my expectations and knocked our socks off! They decorated it very well and gave it a whole new, modern feel from the fast food chain it used to be. Service was good. It wasn't a busy night, as it was a Wednesday, but they greeted and seated us promptly and the food came out piping hot and cooked just as we asked - medium and medium rare for 2 dishes of the lomo saltado. The price was very reasonable for the quality too. My little adventurous, foodie nephew loved the octopus so much, he can't wait to come back to enjoy it again. Haven't had Peruvian food for a good minute and I'm glad I got to try this place! I loved the plethora of Pisco drinks they offered - they were delicious and had just the right about of pique to it for me ;) Food wise, I thought the portions were a little bit small. But the taste was there - I enjoyed the side order of maduros (plantains) and the peanuts they offered at the table to start. I ordered the Lomo Saltado and the steak was cooked deliciously but felt it wasn't enough protein to carb ratio. My husband and father in law ordered the steak with a quinoa mix and both tasted good, but it was a mutual agreement that it was too much quinoa. Unfortunately at 7pm, they had no more chicken, which is supposed to be a star dish in Peruvian culture, so we were unable to try that. However, we did order the grilled octopus instead and that did not disappointment. The Ceviche Leche de Tigre tasted great, but felt that it did not have as much fish as it did hominy corn. Service was a little bit slow even though it wasn't too much with foot traffic within the restaurant, although they seemed busy with take out orders. Nonetheless, we had a great time. read more

My wife is Peruvian and I love Peruvian. First time there today and totally satisfied. The staff were all so nice and friendly. The atmosphere was pleasing. The food was excellent. We will be returning and taking friends there. My wife and I shared a Pisco Sour (she drank more of it) loved it. My wife has Seco a la Nortena and I had Classic Ceviche. I wish I could have given them 7 stars. I'll start with desert first. TRES LECHES cake was amazing with homemade bailey's liquor. Then the MCO Stir Fry and the Lomo Saltado were delicious but it all started with Causa Limena with Chicken which was like a cold chicken salad meets potato salad but presented as a tower. The food was super late and she did not have the courtesy of asking if the main dish had an option for changing the side on the hamburger we ordered. Chabuca is a new restaurant that was previously named Aji Express but is now under new ownership. The restaurant specializes in Peruvian cuisine such as Lomo Saltado, Arroz con Mariscos, Pollo a la Brasa, and much more. I must say that the restaurant looks much nicer than before and has additional seating outside now. The menu has changed a little bit but the quality of the food remains just as good or arguably better. I would highly recommend this place for Peruvian food. The staff have remained the same and this is a good thing because they were always so kind and helpful. I can't stress enough how good this experience was. Wow what a great meal! We went here on a whim as most of the restaurants nearby are large corporate chains. Chabuca surprised us with some of the best food in recent memory. The half chicken was perfectly marinated and juicy, along with a delightfully seasoned skin. Fries served on the side were very well done and salted to perfection. The lomo saltado at recommendation of the staff was another fantastic dish. This was marinated perfectly with such a deliciously unique taste to the sauce. The mint lemonade was another highlight of the meal with a perfect blend of sweet and sour and none of the acidity that is usually present. I would highly recommend visiting Chabuca and supporting the wonderful staff and owners! read more

We came here as a group of four for the first time, based on all the great reviews, but unfortunately, we left very disappointed. When we arrived, we were seated in a booth and informed by the host that it was their once a month buffet day. She said we could check out the buffet, and if we weren't interested, they'd bring us menus instead. We took a quick look at the buffet, but since we weren't familiar with the food or how things worked, we went back to our booth expecting someone to come by. We waited for 15-20 minutes, but no one ever came to greet us, offer menus, or even take a drink order. We felt completely ignored and eventually decided to leave. I've never had that kind of experience at a restaurant before. We just couldn't figure out how things were supposed to work here and no one made an effort to explain. Really disappointing. First, I want to add that when this place was called AJI EXPRESS, it was so much better. The ambiance felt like home, the service personal and fast. The portions were big, and drinks delicious and a simple menu. Now, it's called Chabuca. It got an upscale look, fancy menu and dishware. But the service went downhill and the portions average. The server, who never introduced herself so I dont know her name, felt bothered to accomodate some of our needs. We ordered our drinks and food the first time, it came at a reasonable time. But after that, time passed, they were going to other tables and we felt ignored. Two other friends were joining us about 30 mins later, and they wouldnt accomodate us to add more chairs/table. Took three times to ask and when our friends showed up, they finally added a table saying just because its a special reason. Like why now while we were told no, its not allowed. We noticed everybody got waters. Not us. Not even extra napkins or swinging by the table to ask how is everything. Our friends that came after, got their orders. Our drinks were clearly empty and wasnt even asked if we wanted another. Then, one of us had to raise our hand to request three more drinks. To make it more interesting, more than 25 minutes passed. We saw them going to all the tables. We thought they forgot so we were just ready to ask for the check and leave. 30 minutes later; the drinks showed up. I don't know how much time passed, before we could ask for the check. Then the check came. We had originally told her it would be 2 separate checks. She then asked "one check, right?". Then she was bothered that she had to fix it. One of our friends was about to open the check booklet and she basically reprimanded him saying "dont open that, i have to fix it". In short, we always came to Ají Express and always felt like going to your own home, delicious food and a welcoming environment. When I asked for a different table I was told since I am dining alone this is the only table I can have. The restaurant had at least 10 empty tables on a Tuesday evening. So to start off, I only went because I saw that they have a drive thru. If they didn't it would seem like a full service restaurant and I wasn't trying to have a server type of sit down. So I pull through the lane and sit in front of the speaker for a good 5 or so minutes trying to be patient and after a few I asked, "Hello?", and still nothing. I saw they had two windows so I thought I'd just pull through to the first one and they'd take my order. Nope, it was a mirror window so it was hard to see in but I definitely saw people in there and after sitting for a minute realized I wasn't going to be acknowledged here. Thought, ok, I'll pull to the final window and hope for the best lol. I pull up and don't see anyone in the kitchen, then finally some guy walks in and sees me but doesn't acknowledge me and continues doing what he's doing. Sigh. Then another person walks in and he signals for her to go over to me, but first she finishes what she's doing before acknowledging me then at last, I'm recognized! Lol. She opens the window and I ask if the drive thru is closed and she just says no, so I say ok well to let you know I haven't ordered yet because no one answered. She just basically said that's ok .. and I proceeded to order. I asked for the pollo brasa which seems to be their main thing, and she tells me she thinks they're out ... ay yi yi ok. She's goes and checks and tells me it's fine. Great. I complete my order and that's basically it. Minus 2 stars for advertising the convenience of your drive thru in big letters and not having anyone with a headset on (no one likes to feel like a burden when visiting an establishment).
