I never had it before so I had to try it and it was delicious! You still get a very similar mouth feel of a creamy tonkotsu ramen, but it just doesn't sit as heavy. I think scrapping a menu that they've had for years is a bold move, but I see the vision. They're bringing a different style of ramen that you won't really find anywhere else here in San Diego. Would highly recommend being open minded and giving it a shot. Also would recommend ordering it with hard thin noodles. Workers are also always very friendly and knowledgeable about the sake so definitely ask for a recommendation to pair with your food.

The spicy garlic edamame is a must, as well as the spicy tuna crispy rice. They also have an array of delicious and special sakes, great for a night of sampling and enjoying.

However, we decided to visit recently for their Bento Box special (available through Labor Day). And I'm so glad we did. First off, hellllllloooooo Hotel Del, the moment you step on the grounds you feel those vacation vibes. It's just you know, everyone else there is on vacation, from all over the world, and you live here and so I mean yeah let's try to pick on the vibe, let me get on the vacation mindset. Alright the restaurant. Beautiful outdoor seating. Just wow. Woody, navy blue, white, like nautical vibes, super clean cut. Makes you feel like you are on a boat or something. The music playing, the sun shining, a glimpse of the ocean. The Del in the background. Simply just cool. Our server and the service were great from the moment we arrived. We started off with water, and my husband had a beer. The beer poured into a beautiful pilsner glass; it looked refreshing and perfect. Moving on to the food: - Started off with Ahi Tuna Tacos- meh, just meh, no flavor, the crunchy stuff was wack, and just like why are you making these? Come on Nobu you are so much better than this! - Bento Box: Alright the bento box was amazing. I mean OMG. I mean so much food. It comes with: Matsuhisa salad- OMG the dressing was so good! Something in it tasted very refreshing, possibly the sesame see oil and or maybe even the mustard. I was getting ponzu taste notes. Uramaki- a inside out roll (3 pieces) ok- nothing special Nigiri - (3 pieces) salmon, tuna and a white fish. Rock shrimp tempura- ok Black cod miso- delicious, a must. Steamed rice & vegetables served with a spicy garlic sauce- I _____thought it was kimchi- but it was not. _____Miso soup- yum, and actually good miso soup, served with two _____perfectly squared tofu pieces. There was a couple next to us who ordered full price items, my spidey senses knew they were going to leave unhappy, given their portions and big bill. Unlike us, with out "smaller bill" and I mean I could barely eat all of my food, given the portions of the bento box. Oh well. Thanks Nobu for the great experience at your restaurant. I likely would have never dined here but thanks to your Summer Special/Bento Box deal we did. Would I come back for full price sushi menu? Highly Unlikely. I am happy I got to try the Bento Box? Absolutely.

We were promptly sat down upon arriving. Servers frequently checked on us and were all so nice. But what really stood out was their empathy. Like i said, my son knocked out. He's 5. He woke up as we were leaving. by the time we figured out what was really upsetting him (he wanted to stay there and eat and wanted the table we were on), we have gotten out of our table and obviously the table was then cleaned for the next guests. So basically my lil one cried, took him to the bathroom bec unfortunately we dont get everything we want just bec we cry. So we went into the bathroom for him to cry his feelings out and be ready to get out. Was he loud? Absolutely. Was i embarrassed? Yes. But it was a lesson he needed to learn and i didnt want my discomfort to hinder that. (Mind you the bathroom was in the middle of the stairs lol midway the lower and the upper floor). So was i ashamed to get out? Yes. But the staff, so empathetic. So nice about it. Told me i didnt need to apologize and that they get it. And that made me feel better as a mama who walked out of there carrying a 5 year old out their door. No judgy stares. Just smiles and understanding eyes.
