We tried the jambon sandwich and chicken baguette, paired with a golden ale beer and coffee. Both sandwiches were outstanding--freshly made with incredible bread, generous fillings, and a perfect balance of textures. The strong cheese they offer on the side is a must; it pairs beautifully with the sandwiches, and the staff even lets you try it before deciding, which is a great touch. We did go around 2pm and unfortunately the pastrami was already sold out, which speaks to how popular it is. We also waited about 30-40 minutes in line, but it moved steadily and didn't feel too painful. We were lucky to find a spot to dine in, though most people grab their food to go. Service was friendly and quick despite the constant rush. The atmosphere is more grab-and-go than sit-down, with very limited indoor seating. Most people take their sandwiches to enjoy at a nearby park, which actually adds to the experience. We had came here and got our sandwiches toasted the first time and we didn't like it at all as a were under the impression only the bread would be toasted not the whole sandwich. When we arrived, there was a line out the door and people sitting in the curb outside waiting for their sandwiches. Seems like it's always busy there, but they handle it well. Once we got inside, they let us sample the two cheeses -- comté and cantal. We got the house sandwich with prosciutto and all the veggies, and we opted to get it toasted. There was some inside seating, but it was a super hot day and it was warm inside, so we opted to take it to go and eat at the local park. The owner gives you a taste of two cheeses to choose which one you want for your sandwich. That's very generous and helps you choose the one you like best. From what I saw, he personally made the drinks or pours it then brings it to you. The kitchen in the back makes the sandwich. It does take time but it's worth it! I had been thinking about this sandwich from the last time I was in Paris in 2012. It's different than it was before, but it's still a delicious and filing sandwich, but maybe a bit more hyped. When I went in 2012, there was only the shop inside the market with Alain himself making the sandwiches. First, no matter when you go, be prepared to wait. There are tables and chairs inside, but they fill up quickly. We lucked out and were able to get a seat while in line once inside the store. If there aren't seats inside the shop, there are plenty of seats in the Marché Covert. Second, the ordering system is strange, at least for me. There are several chefs making the sandwiches and when one is done, they'll take your order in line. I didn't see this but they have a list of all of the meats and toppings on the large menu inside so you can specify what you want. My mom and I messed up the order at first because we failed to specify we wanted two different sandwiches, one meat and one chicken. So we had to go back to our sandwich maker and re-order before we paid. Now for the sandwich itself. It's fresh, tons of veggies, and the meat quality is excellent. I had half of a thin cut beef sandwich and a bit of a chicken sandwich. It has avocado, lettuce, tomato, mushrooms, and your choice of cheese on it, along with some other seasonings and herbs. the bread is delicious and fresh! It is messy, so sitting is recommended. Comparing this sandwich to the 2012, I gotta say, 2012 wins. I went with the prosciutto and cheese with the standard toppings. It was a hefty sandwich and a bit messy, so I'd recommend eating it there immediately. I had taken my sandwich to-go and walked to a nearby park to eat it. By the time I had gotten there, it did get soggy. The sandwich had a unique flavor profile, I probably would get it without the roasted onions, to be able to better taste the other flavors. And maybe also, try the sandwich cold instead of grilled. And not in a business-like way either, he is MEAN and rude, as if we were robbing them or something. The guy by the door starts arguing with him about it (I couldn't understand as I do not speak French) and they're sort of yelling back and forth over us and EVERYONE in the entire shop is watching. It was humiliating, I literally was tearing up because we were treated as if we were stupid and insolent rather than asked politely to leave considering we didn't even do anything wrong. We left the shop and almost didn't even grab our sandwich because the whole experience was so upsetting and insulting. Interestingly the video we saw showed a man cooking the galettes in what looked like an open market/food court. We found the food court but not the stand, but we did find that the restaurant now has a storefront across the street from the food court. My fiancé ordered the fraicheur, which was the bouquet-shaped galette that we saw on the video. I didn't try it since I don't eat pork, but he said it was fantastic and everything he had hoped for. He said it tasted very fresh and light, and the basil made the whole thing so aromatic. I got the vegetarian, and it was more of a traditional style of galette.
