    I honestly had not come in to Chili's because of the reviews. I'm glad I finally made it in. We came in on a Sunday afternoon. The place is pretty big lots of boths tables and a decent size bar area.We were sat immediately and within a few minutes the waiter came to take our drink order. When the drinks were brought to our table, he took out an appetizer order we had the trio. It comes with lots of chips, super mild salsa, amazing guacamole, and great queso. A few moments later, he took our order , and we split the ultimate smokehouse combo. The ribs were good, the honey Chipotle tenders were delicious, the sauce had a really good flavor, and the jalapeño cheddar sausage was ok. The fries were hot and crispy. The corn was really, really good. The garlic bread was basic. It's what you expect from any American casual dining restaurant.

    My order is wrong! Mushroom Swiss burger and they forgot the mushrooms! I ordered no seasoning salt in the fries and they are Covered.

    The order is completely wrong. Paid for something I am not getting. Missing ingredients and added some I requested off.

But this was genuinely some of the best Mexican-inspired food of my LIFE! As a vegetarian, Mexican food tends to be hit or miss when it comes to creative meat substitutes. Blue Agave chose fried avocado tacos as its offering, and WOW. They were truly amazing. Life changing. Well spiced, the right amount of filling in each taco, and the avocado itself was perfectly ripe and fried well without much residual grease. Not only that, but the side beans and rice were incredible. The portions were generous and spiced magically- I could eat just the beans and rice as a dish on its own. I was also astounded by how the grilled corn sauce was thick and saucy, but tasted EXACTLY like elote- some kind of culinary magic. This place may be slightly pricier, but the food portions are large and I cleaned my plate and left feeling stuffed. My companions couldn't finish their beans and rice, and if I didn't think I was going to explode I would have cleaned their plates, too. I'm glad I don't live in FoCo or else I would go broke eating here. I cannot recommend it enough, especially those avocado tacos. I will be dreaming of them for years. The restaurant was a little jammed when I visited and some might find the atmosphere overwhelming, but I would say it's absolutely worth it. Seriously, if you're going to one place in FoCo, go here.

I enjoyed the tortilla chips and house made salsa which had a delightful amount of fresh flavor as well as a very noticeable amount of heat I found wonderful. My fajitas came sizzling hot with grilled tomatoes onions, as well as yellow, red and green bell peppers to complement the beef, chicken and shrimp. I had the corn tortillas and there were nice and fresh and held the fajitas and toppings well. The cheese, pico, sour cream and guacamole toppings were a bit limited in quantity, but that was the only shortcoming of the meal. I finished with the flan which was not only wonderfully presented, but very tasty as well. Service was pretty good.

My personal favorite was the molé. The molé was as close to my mom's as I could find. My daughter delighted in the Inca quesadilla. My husband devoured the molcajete. We will miss not only the food and the beautiful murals on the walls but the staff who became like family as well as some of the customers. My daughter grew up knowing this place. From birthdays, holidays and anniversaries, Inca was always a big part of our lives. This is sincerely the end of an era in Fort Collins. It's been a beautiful memory.
