We came here for a meat class that is constantly booked out. What a great experience though. He was so knowledgeable about the different cuts of meats. He even provided samples of the meats. We've gotten steaks, had them slice brisket for us for our homemade jerky, and used their ground steak for steak burgers. Yes the butcher shop is amazing and they have the best meat in town. But let me tell you how amazing the private dining experience is at Cline's. We went last night and were just blown away by the quality of food, attention to detail, the service, the wine and the Owners. In our private room we were treated to an experience that you can't find in Jax. From the Tuna Tartar to the Sea Scallops to the Porterhouse Steak (which I forgot to take a picture of because I had to eat it), everything was great. Thank you so much for an amazing meal and time. I came to this butcher shop looking to pick up a few items for my dogs. I was pleasantly surprised when I saw a little section specifically for dog friendly meat blends, bone broth and more. I picked up the bone broth and raw beef liver. The prices were not too bad, although I am unsure what the average price would be for the items I bought. The staff was very helpful too when I asked a few questions about their selection. The store not only has meats but also deli options like pre-made pastas. They also sell other items such as crackers, spreads, and more. I really like the open feel and set up of this shop. It is very clean and offers so much more than an average butcher shop. Grilled this 2.5lb, 3-inch thick beast of a cowboy cut ribeye from Cline's Custom Meats for dinner tonight. Cline's is a great local and family run butcher shop. Developing a great relationship with your butcher can turn an average grill session into one your neighbors will talk about for years. First I cooked it sous-vide at 135* for 6 hours for a perfect medium temp and then did a post-cook sear over my charcoal chimney starter at probably about 800*. It came out beautiful and tender. This place was recommended to me by a friend after I tried the salads she provided at a luncheon. I immediately went to Cline's and got their chicken salad, shrimp salad, beet salad, potato salad, and mac and cheese. Of course, I got some of their meat selections as well; which are the best quality. This place is a great find. He had everything - his cowboy ribeye steaks looked beautiful and were decently priced. He had fresh duck breasts and lamb chops - a rare find in Jax. He had delicious-looking slabs of fois gras in between the tubs of duck fat. I joked with him that I didn't see rabbit - so he showed me where the rabbit was. Checkmate. One thing I had never seen before was that he butchered ribeyes into filet mignon-style cuts - taking off the edge bits and ribbons of fat and leaving medallions of marbled gloriousness. The side effect is that he turns the outer edge of the ribeye into something called the Spinalis Ribeye - a cut of beef resembling a flank steak, but containing the gorgeous marbling and tenderness of a ribeye. I love seeing cuts I have never seen before. I'm waiting to grill the Spinalis as I sit here. Next time I'll try the filets. read more

Selections will vary. One uncharacteristically thrilling frozen case, featuring the highest quality seafood, quail, ground bison. My mind was racing with stay in dinner date options. One refrigerator with cheese, olives, smoked salmon etc. I am very into cheese and his selection included 2 of my favorites. The owner opened a jar of cow goat blend feta, I believe he said, it was smooth and is a definite crowd pleaser. One rack of French Pantry bread, yes you read that correctly, and local produce. As well as Cross Creek honey, select spices, and nuts. One stop shopping. Truly a pleasure. My dad and I were so caught up talking to the owners we shamefully didn't formally introduce ourselves to him and his wife, who were there working. Ok, the cleanest meat market I've ever seen. The owner is incredibly knowledgeable about his products. The meat is amazing. His wife is Moroccan (i think this is accurate) and makes superb sausages and marinated chickens. And they're really nice people. Clines is by far the best butcher in town! I have been coming to Clines for about 6 months now and won't buy a steak anywhere else in town. If you're looking for anything from ground beef to A5 wagyu this is the place to go. They sell beef, poultry and seafood (no pork) and they really know what they are doing. You aren't going to get Publix prices but you absolutely get your money worth if you like to cook a nice cut of beef. I've been able to get wagyu hangar steak (incredible) and some other harder to come by cuts (they will happily cut you a steak to your preferred thickness).
