Finally, I have found good Mexican food in Oregon. I have found that majority of the Mexican food you find in Oregon is bland, lifeless, and not up to the standard I know and love. I've grown up in Southern California majority of my life and nothing beats the little hole in the walls that you can find all over California. Mind you, majority the places you find are Americanized Mexican food. Needless to say, Covina Mexico Lindo meets my expectations. Also, if you like pork I would recommend the carnitas. They have a nice little crunch to them and aren't over saturated in fat like some places prepare them. The salsa's actually have flavor too. Yelp has the wrong address though. Oh man I wanted SO badly to LOVE this!!! I got a veggie burrito with no sour cream or cheese to make it vegan it supposedly had beans, I literally found ONE...but didn't taste any. It DID have rice. Lots and lots and lots. And a smear of guacamole. A little bit of veggies and more cilantro than I've ever eaten. I had to pull out tons just to finish my burrito. Thankful that they had green hot sauce because it was SO dry because of all the rice and cilantro. My guy got a breakfast burrito and he said it was just OK. Solid. 3.5 but yelp doesn't let you do half points. Everything pretty tasty & on par with just about all the other decent Mexican food trucks in and around PDX. If in the area, I'd maybe eat here again but don't know that I'd drive out of my way. Some issues, no pico de gallo on anything or available at all was a big disappointment. Unfortunately this, our go-to taco truck, has been disappointing as of late. The last two visits just haven't been the same. On both visits their previously fab carne asada has lacked flavor and the meat quality seems to be inferior as well. The pollo has changed too, with lots more liquid/grease that immediately makes a pool and causes my tacos to fall apart fast. So sad! We'd hoped it was just the one disappointing visit last month, but after today we're quite bummed...not horrible by any means, but definitely not what it once was to us. read more

Came here for quick lunch and ordered 4 tacos 5/5 Al Pastor marinated pork - really delicious and lovely. Every bite was juicy and tasty. 3/5 Carnitas roasted pork - this was juicy but definitely less tasty than Al Pastor. Love the tacos and love that the asada meats are charred and kind of crispy. Love the salsa bar with six options total. I had the avocado one and it was nice, tangy and complements my tacos well. Will be trying others next time. There are some seating around the food cart pod and some are shaded so that was nice. What I didn't love, and what made it four stars instead of five is the speed of service. Not how long they took to make my food, that was a reasonable 10 min ish. Looking for a decent breakfast burrito. At 10:30 Sunday I was the only one in line the only person I saw was receiving their food and leaving. I ordered the steak and egg breakfast burrito. I was a bit surprised by the price (no prices posted for anything even a daily special) as it came to $14.45 before a tip. The Burrito was on the higher sized quite big. They had a salsa bar but no red sauce the closest was a deep smoky sauce, they had a very spicy green an avocado and hot oil the portion cups were the biggest I have seen for some time. The burrito shell was really good. They made it quite fast, possibly everything was grilled up reheating. But it came out quite hot had to wait to cool. It was too much for one sit down. First off, this review is slightly biased as we just went on a vacation to San Diego, which has some truly amazing Tijuana style tacos. That being said, this unassuming taco truck on the literal side of the road and is easy to miss, so make sure to keep your eyes PEELED. They close at 11 pm, but we were told by our friend that they are often open even past that time. We ordered four tacos - lengua, cabeza, al pastor, and asada. Sadly, they ran out of radishes, but we were informed that they usually come with radish. It was super cold so we opted to take the tacos back home. They had four chairs placed outside but honestly I was not going to freeze to death in 40 degree weather. The tacos themselves were decent - the meat was a little tougher (although the lengua was soft), and I would have like to see double layering on the tortillas because the whole thing was kind of falling apart. However, the seasoning was pretty decent and the salsa options that they provide were also pretty delightful. Price-wise, for $13 (including tip), they were pretty decent. Awesome! Enchiladas Verde and Mole were both delicious! Tender pieces of dark meat chicken wrapped in soft tortillas layered with either Verde or Mole was awesome. It was spiced well and definitely paired well with my Mexican Coca Cola. It took a little while before the food was ready but I was ready for that scenario as good food takes time to prepare. That should give enough time to fill up on the salsa station next to the receiving area which you need grab ask for small containers to fill. Be careful with the salsa as it is spicy and a little bit goes a long way. My only disappointment was, I was sad to hear that they were out of chicken tamales, I'm sure that would have been delicious also. Finding a seat was not hard on a Sunday evening but it was a very warm night. The seating area also shuts down a little early but that may be because I'm used to a city that never sleeps. I just moved into the area and discovered this golden triangle of food carts by accident. Today we tried Cocina Mexico Lindo truck! First of all, don't use Apple maps. We followed the direction and ended up in a weird parking lot. Then we tried google and had no problem finding it. Upon arrival, there was s steady line of people waiting to order/pick up their delicious food. While we were waiting, we filled little plastic cups with their five salsa options. There are two green, one yellow and one red. The yellow being the xx hot habanero salsa and the green tomatillo salsa was mild. The line moved quickly so we got to eat right after the sauce action was done. I ordered 3 tacos, al pastor, lengua and chicken, while my boyfriend got the al pastor burrito. Everything was flavorful and juicy. We inhaled our food in seconds!! There's a lovey outdoor seating area right outside of the truck. Won't say this place as exceptional but they do offer some items lot of other carts in Beaverton offer including Birria. Meat in tacos vary day by day. We have received less one day and sufficient enough other days. Also note, tacos come with only one tortilla holding the meat in it. One of the highlights of this place are their sauces. Delicious tacos! This food truck is located with a few other trucks in the shopping area off TV Highway. We stopped by for a snack during our long walk and we were not disappointed. We got four chicken tacos ($8) which came out on fresh tortillas filled with meat, onions and cilantro. The chicken was flavorful and moist. Omg, this place is wonderful! Great, cheap tacos, but the killer is their sauces. They have a variety of normal chili sauces, but the one that blew me away is the roasted peppers and onions they had, which I combined with one of their black sauces. It was AMAZING! It had such an amazing smokiness that was reminiscent of Asian sate sauce. I could bathe in that-- it was so good! Listen up...after frequenting the excess taco truck's in Hillsboro/Aloha area....Cocina Mexico Lindo is literally THE BEST (in my opinion :)). I know...that's a big feat to conquer. But I'm not kidding. (and again, I know this is only my opinion...and I could justify with lots of reasons why they are the best...but please just try them out to see for yourself!) If you want REAL Mexican goodness here you go. ok so yes this is why: (and yes now I'm justifying lol) 1.HOMEMADE CORN TORTILLAS (need I say more??) this is a big time rarity for food trucks. (and even Mexican restaurants lets be honest). The tortillas are warmmmmm off the flat top, soft but with those little browned crispy areas....yessssss. I usually get 3 packs to go for whatever I want to put in them at home at a later time. 2.Vegan friendly rice and beans! No added animals products to the RICE OR BEANS: Just that!! The flavor is more umm... "rice-y" and "Bean-y". You get what I'm saying. So no lard or broth or butter etc in this fav twosome. VEGANS and NON VEGANS unite! 3. The darn BEST green sauce on the planet. And I'm not even a real green salsa lover anymore. Which is strange because that is about the ONLY salsa I'd eat through out my life until the last 10 years or so. So I do know a good green when I see one. 4. Also the other salsa/hot sauces are legit authentic as well. They have a homemade as well habanero hot sauce too!! Yes! And of course they have a tasty mild go-to red too. The point is, one can have a trio of tasty and HOT sauces!! So after you order your food, just ask for how ever many sauces of which you want. She hands them out to you no questions asked. Just don't be a hoarder...leave some for the rest of us. 5. They got you with whatever type of street taco you want. My hubby is Latino and he loves every taco and any kind of weird meat lol. He LOVES his Lengua tacos which are perfect he says, yes..that's beef tongue. But they have your basics too. 6. They have other yum's too...quesadillas, tortas, and my new fav...huaraches. Point is...it all is fabulous. The big yellow truck itself is clean and tucked into the multi food truck area right off 185th and TV Highway. (west side of Big Lots building). They have two large picnic tables to eat at that are covered. Lots of parking. I hear ones saying this or that about food trucks in the area. My hubby cringes at when some say this or that Americanized taco truck is the best authentic truck in the area. Oh no...so I ask you this...just try this truck, even if you have a different favorite in the area, Just give them a chance! Randomly found this little food cart area looking for some late night tacos on the West side. Ordered the Carne Asada and Al Pastor tacos and they were BOMB. Best food cart Al Pastor tacos I've had in the state so far. The meat was cooked just right; juicy and the flavors were surprisingly good. I didn't give them five stars because they were completely out of sauces and I didn't get a chance to try any of their sauces with the tacos... there's another taco cart a couple carts down that I used sauces from. Stopped at this gem on a whim because I was craving tacos and boy o boy did it deliver. It was about 10:30am and my wife wanted a breakfast burrito. I opted for the Al Pastor and Carnitas tacos. The burrito had nice red potatoes, bacon, sausage, and a gang of cheese. The two tacos are the main focal point of this review. I did not know the tortillas were made fresh until I picked them up. They were moist, flavorful, and delicate to the touch. Not soggy, but fresh and juicy. The Al Pastor was greatly marinated and the flavors of citrus were prominent along with cumin and other flavors. The Carnitas were perfectly salted and not dry at all. The fat rendering was not overwhelming and I even had a little soft skin in my taco. After a few bites of her burrito and consuming the two tacos, I had to go back for seconds! I ended up ordering two more carnitas and two more Al Pastor tacos! My mouth is watering as I type this out. It's safe to say, this will be my go to spot for the foreseeable future! read more

My only complaint would be that they did not bring chips and salsa to the table. you had to order that separately and it was $5.70 which I thought was outrageous for a little tiny bowl of salsa and some chips. Anyways, after driving around in circles, we finally found them. Ordered the usual. Huarache w/al pastor, some carnitas burritos and carne asada tacos. They came out great, despite the frustration with their location. Very authentic and good portions. The salsa bar had a good variety, but my favorite was the avocado salsa. One thing that is missing from their menu is Tortilla Chips. So if you're expecting to order chips with your salsa, this place doesn't have it. Haha.
