My fiancé stopped here 5 years ago and wanted to come back on our way back from Dallas to Louisiana. He said it's a shame it has went so down hill. He's a born and raised Texas boy and loves his BBQ. I ordered a burger and he got the brisket, ribs, and sausage with okra and onion rings. The brisket was so dry. Hell I'm not a bbq fan and I could tell how dry it was. And to make it worse the young lady working the kitchen cut the brisket the wrong way which made it even more difficult to eat. The ribs were just "ok" dry but the bbq sauce did help. The sausage was probably the best thing out of the meats which is sad. I have no complaints about my burger but I could have eaten a burger across the street at Whataburger. We came for BBQ and were so disappointed. The girl working the kitchen was friendly and the food didn't take long at all to come out. The dining area was filthy!! Old food and dead flies on the windows, countertops, and floor. You could tell no one takes pride in cleaning the place. That scares me because it's visible. What a disappointment. This has been a regular stop of mine on my Houston- Dallas trips and i was always happy with the BBQ. Today the whole place feels sort of run down and a bit rude. Never had that vibe before. Soggy buns for the sandwich. Brisket not tender or particularly tasty. Sausage was pale as if it had ben microwaved not smoked. In past, we really enjoyed the friendly service, clean restaurant with tasty bbq with desserts. Today was the polar opposite. The bbq employee was sitting with his head down appearing to sleep on a video game. The tables and floor were not clean. There was left over meat on the kiddie high chair. We stopped here for lunch on the way back from College Station, and are we glad we did! Coles is charming, with a surprising selection of vintage and gourmet sodas on one side of an old gas station, and an expansive assortment of BBQ rubs and sauces on the other. In between though is where the magic happens: the barbecue counter!! We got the chopped BBQ Grilled cheese sandwich, and it was TO DIE FOR! served up hot and gooey on perfectly crispy grilled Texas toast, you can order this sandwich with or without BBQ sauce. The folks were friendly and fast providing service. Unfortunately that is the highlight. There are lots of different takes on Texas Barbecue and people can argue over their favorites. I was not a fan. The beans were good. The potato salad was bland and even the turkey was fatty. I asked for lean brisket but it was fatty and did not have much smoke. I was unimpressed with the meat quality and the amount of smoking applied to it. I know times are tough. I wish this business success and prosperity. I hope I came on an off day. I just don't know.... I've not made up my mind yet about Texas BBQ. I'm from North Ga and I swear we have the best BBQ! I travel GA, TN, AL, SC, NC, TX & LA a lot and I am always on the look out for for good BBQ. The best I've found have always been the ones off the beaten path or like Cole's sharing a convenience space. Billboards for Cole's started outside of Dallas so I believe I expected something a little different. Cole's prices are high compared to what I'm used to but it may be necessary to pay for all that advertising signage. $9.95 for a pulled pork sandwich including condiments (pickles, jalapeños, & onions). For a couple dollars extra, you have the choice of a fountain drink or a variety of in store sodas, colas or drinks from Mexico. The selection is pretty impressive! There are some dessert options at the counter...big cat head cookies, fudge, puddings and cheesecake (maybe?). It's an experience (no regrets stopping) but not as good as I would have liked it to be. Very messy.. my bun was soaked after my first bite and with no napkins, sitting in the car, I was wearing the sauce before I finished. The meat was tender...a good thing... and the sauce is not sweet or hot but has a peppery taste that is not unpleasant but definitely not as good as a vinegar based sauce. LORD knows I've had my fair share of different Frito Pies: Cousins BBQ in Fort Worth, Tx--Viteks in Waco, Tx--Mike Anderson's in Dallas, Tx and Cole's which in my book is #1!! If you're looking for moist, tender, mouth watering brisket with sausage and beans with all the fixings then this is it!!! They're located inside of a Shell Gas Station off highway 45 in Fairfield, Texas. Now the one thing I will say they need to do better with is get rid of or teach the white guy taking orders how to approach customers. This guy is rude and has zero people skills, he needs to have his butt in the back cleaning up or something. The other staff associates are very friendly and welcoming---the African American man chopping the meat is kinder then the order taker. These restaurants need to know that we the CONSUMERS have a choice where we can spend our hard earned dollar and when I come into an establishment--I expect to be greeted with a smile NOT an attitude!!! Was hoping for better. The prices have increased from what I expected from the photos of the menu. We got the "sausage wrap." Don't be deceived. A piece of sausage and a slice of white bread. That's it. No condiments, no onion, no relish. NO NOTHING. We were amazed. A wrap it was NOT! Can't believe they would even sell that and for $5. Potato salad was OK. Peach cobbler was worst I've had. Employees were fairly cordial. I believe they could be really good. Don't think they care either way. It's a gas station too. Maybe it's OK for being a gas station stop. As an aside, many businesses have increased prices and lowered quality of product and service; all in the name of "recovering from the pandemic." Taking care of the good citizens of Fairfield isn't their specialty let alone someone coming off the interstate. 4/10 they were out of hamburger parties lmao on a SUNDAY and the last time I went there they were out of CHEESE for a freaking grilled cheese. They are supper cheap so if you get a BBQ sandwich you can bet it's just Fatty trimmings.....had to throw the sandwiche away it was so bad.Management/workers don't give a shit (because they workers are probably getting shitty wages) and you just feel unwelcomed when you go in there. Easy 4 stars. Good BBQ, but in Texas it's far from Texas greatness BBQ. Fun and friendly employees and very good to great sides. Fries were awesome and onion rings were good. Baked beans could use some more pizzazz - I expect BBQ baked beans to be awesome at Texas BBQ joints. Our chopped BBQ beef sammiches were pretty dang good and not overly fatty. Wait wasn't too long and the place was clearly a popular local stop. While I wouldn't go out of my way to eat here again, I'd happily eat here again if hungry and in need of some hefty Texas nourishment. read more

Oh my Gawd, what happened to this place? The first time I came here, which was about a year and a half ago, the food was fresh, tasty, and the portions that they gave were massive. Was on my way to Baytown to deliver a load and THOUGHT I'd stop in for that delicious Bbq I came to know from this place. Not! Got half an order of brisket and half order of jalapeno cheddar sausage. Both were dry, flavorless, and overpriced. I also got an order of onion rings and all 4 of them(yes 4 rings for 3 bucks smh) were just soggy and sad. Needless to say this place has gone downhill and I wouldn't be surprised when I go back through there next, they will probably be closed. When I asked for a small side of cheese and sour cream I was handed a packet of sour cream and was told the cheese came in a big bag and couldn't give me any. Dropped by today and got a pound of sliced brisket. Got home and opened the container and it looked great. I pulled on a slice but it didn't come apart so I pulled a little harder and finally it came apart. Is brisket supposed to be chewy like gum? Flavor not great. Cole's is located in Fairfield, TX and I stopped there on my way up to Grand Prairie to visit my daughter. It is located with a gas station in the front and a convenience store inside. The BBQ operations is to the back of the store. I was hungry so I thought I would try them out and it also gave me a break form the drive. I ordered the 1/2 lb of ribs with fries. There is adequate seating area to eat, so I decide to eat there before I got back on the road.When my food was ready they called me back up to the counter and I was ready to eat. The ribs weren't to my liking as they had a crust on them like they had been cooked too long, I don't know, but I was hungry so I ate them and got on my way. Heard about this place for a while, Saturday afternoon, nothing to do..."hey Honey, let's drive over to Fairfield and try out Cole's BBQ! Well, we did, and we weren't impressed. The meat was dry and I couldn't taste even a hint of smoke. Not only was it dry, it was hard(crunchy) in some parts. The potato salad was like mashed potatoes with odd chunks of undercooked potato scattered throughout. Two sandwiches with two sides and two drinks----36 bucks! Not worth the trip, we won't be back and don't recommend anyone else eating there either. Texas is known for having awesome BBQ, we have traveled all over the state and enjoyed delicious brisket, pork ribs, sausage and the like...Unfortunately, this was by far the worst stop yet. This was very tasty and moist. 2) Brisket - very lean but a little dry and bland. 3) Ribs - very moist, but also bland 4) Mac n Cheese - flavored well, had a well balanced ratio of cheese to pasta 5) Fried Okra - Yum!
