Columbus Baking Company has been around for decades and is still a CNY institution! I get a bit nostalgic thinking about the countless trips my parents made to this bakery when I was a kid. From the Italian guys in the back to the aroma of fresh bread wafting through the store (and out the door), not much has changed. Ok, that's not true. A loaf will set you back $4 these days, but it's still worth every penny. Bring a few bucks. This place is still cash only! I've moved away since my days growing up here, but on a recent trip "back home", I stopped by to grab a "flat" (my Dad's favorite). Sadly, they had already run out, so I was out of luck. Fortunately, plenty of "sandwiches" were still available. This is one of those "Mom 'N Pop" places. They close pretty early; even earlier if they've sold out, so plan to arrive in the morning if you can. Once they're gone, they're gone! The Italian bread was just as I remembered it. Even the paper wrapping is the same! The crust was chewy, but not so overdone that was difficult to bite into. The inside was soft and fluffy. Can you slice it to build a sandwich? Sure! But if you're a carb lover, this bread is good enough as a standalone. This tiny bakery with the brick facade is recognizable to all CNYers. Attica is an institution that's been around longer than Columbus, and they probably bake better bread, too. 2). Italian bread as authentic as Prego, Chef Boyardee, or Ragu. Soft crust. 100% enriched white flour. No bite and no flavor. 3). Yes, it's a fun bakery to visit. Once. Then, you realize that for all the "tradition" and remembrances that Columbus Baking presents, it's still pretty crappy bread, albeit in a throwback setting. Syracuse Italian bread is not quite what you get in Italy. Not even the Bronx or Brooklyn, for that matter. But, there are other bakeries that add something that Columbus is missing; flavor. I have been buying bread at Columbus Bakery for well over 50 years. As a former City employee, I would stop there at least once per week for a warm loaf of delicious bread to eat in the car. I have visisted many CNY restaurants, which "USED TO" serve Columbus Bakery bread to make their meals even better. I NEVER - EVER thought I would write a bad comment re: this business, but I want this to serve as a warning. First: Pearl Street is no longer what it was...travel at your own risk. Second: Today, I checked web site and found it opened at 9:00 AM. [I had been tasked with picking up several loaves of bread for my office luncheon]. I was at the door at 8:55 AM and there were no customers. I entered the store and found a guy literally laying across the counter testing on his cell phone. I said good morning and he said, "we don't open for four minutes". I thought he was kidding, but he didn't even look up. I thought to myself [remain calm / relax & don't say anything......cause I needed the bread]. I stood inside the door and he looked up and said, "wait outside, we ain't open". I'll be honest, my head almost exploded, but I needed the bread for the office gathering. I stood outside for four minutes and returned and now there was another guy at the counter and I placed my order... He said, "we only have flat bread", which is not what I wanted. He then said, "we don't make no regular loafs till later in the day"...WTF. Anywho: I bought five loaves of flat bread knowing I would now need to cut up & slice myself. As I walked out the door with my five loaves of bread I observed a tall male walking down Pearl Street from the area of where all the drug addicts hang out. He was dragging a shovel behind him....he had a mask over his face.... I could see my car and I could see this guy was between me and my car and I was carrying all this bread. Using my former cop instincts, I could tell this guy was planning an interaction with me before I got to my car. As the male got closer, he sped up his pace and lifted the shovel up over his shoulder with both hands. The male then walked toward me saying, "give me a couple of bucks". I my former "police voice" I told the guy to lower the shovel and back the "F" away from me... He was NOT expecting that and he stopped in his tracks and lowered the shovel. I then got into my car and left. Little did he know, [I have a permit and was carrying]. As I drove away I decided...no more Columbus Bakery Bread for me. I just told this story to a few other retired guys/gals and they all said, "yup, that's city living". I was then informed of similar stories since Columbus Bakery was bought out and the orginal owners fled the area. For an area that's dismissed by many as a rust-belt land that time forgot, Central New York has some true culinary "gems" you won't find anywhere else. In this case, that gem is a simple freshly baked loaf of bread. The price? $3, recently raised from $2. This loaf is big and will easily take care of let's say...2-4 people depending on hunger level and your love of carbs. Due to the high volume, you're assured a fresh loaf. It'll probably be hot and steam up the bag a little bit on the way home. You may me tempted to join the legions of locals who buy two loaves: one for the car, and another for later! You can really taste the heritage going back to 1890 in every bite. Their recipe is pure and simple, and that shows up in the taste. Nice crunch on the crust, with a deliciously soft and chewy inside. Pairs wonderfully with dinner, or in the morning with a cup of coffee. They have meatballs in a small fridge for $10 a container. I didn't count how many were in there, but they were nonna quality. Tasted like a mix of beef and pork, with notes of garlic. Could've used slightly more gravy, but the small amount allowed the meat to be the star of the show. For the price, I always grab at least 2 loaves. It freezes well and was especially appreciated by my parents. After all "they don't have bakeries like this in Florida." If this place were downstate they'd be charging triple the price and still have lines out the door. They'd also be featured on "food tours" and open up franchised locations in NY expat meccas like Florida and Arizona. But this is Syracuse. For all of its flaws: the accessible, affordable nature of the food scene is something I've come to appreciate in my visits here. Stop by Columbus Bakery in old "little Italy" and you will too. One nuisance shared with pretentious downstate establishments: they are cash only, so be prepared. At least parking on the street is a breeze here! read more

These folks are Number 1 Visited here on the strong advice from a friend and, after we found it (GPS takes you around the block), parked in front, walked inside an old school, old charm bakery with nothing but Italian loafs and flour everywhere. I was super excited to come here shortly after I moved back to Syracuse. I had friends at work who always raved about the food here. Unfortunately, I didn't make it in until after COVID, and they had stopped selling sandwiches and other food items. I thought it was a total loss, but bought some bread since I was there. And Columbus has been our go-to spot for Italian bread ever since. If I'm being honest, I've only ever tried Italian bread from a few other bakeries in town but they didn't even come close. Since COVID, they're a pretty simple place. Cash only. Bread in the front, and a cooler filled with pizza dough, pepperoni, mozzarella, pizza sauce, and meatballs. I got the meatballs once to recreate the meatball heel, they were pretty standard. I will say the pizza dough is noticeably better than what you'd buy from a grocery store. The dough is soft and airy, and it spread without a hassle over our whole large pan to make one of the best pizzas we've ever made at home. I don't really know how to describe why the bread is so much better than other Italian bread. It's just the right density - soft but doesn't smoosh when you slice or butter it. I'm sitting here asking myself, what does bread taste like? Whatever it is that makes it so enjoyable, perhaps the dopamine rush you get as it melts in your mouth and quickly converts straight into blood sugar. There's a noticeable spike in that particular experience eating this bread, and it towers over anything else I've tried. We're just finishing the loaf we bought and I'm sad to go back to the regular store-bought bread we have from before this. The last loaf we got, we used to make melts with at home. 7 year old me used to be able to destroy a loaf of Columbus Baking bread all by herself. Turns out adult me can still do this too. The location is a hole in the wall that looks nondescript and down trodden on the outside, but it's because so many feet have been through its doors. Stepping inside the bakery it smells like dough heaven: yeast, flour, and warm ovens. Pass some cash over the counter for a loaf (flat bread, soft or hard loaf) and you receive bread with perfectly toothsome crust and a pillowy interior that has FLAVOR. Let me just say, I love bread and this bread is some of the best bread I have ever had in my life. I'm new to Syracuse and tried this place because some people recommended it and it was absolutely amazing. I cannot believe how delicious this bread is. How can they make each loaf so perfect is beyond me. The bread has a perfect crust with lots of doughy chewy bread that melts in the mouth in the center. You know when some bread is too much crust and not enough doughy center, this has the perfect ratio of crust to doughy center. The love the little bakery feel of the place. After work, I drove to Columbus Bakery and was pleased to find easy street parking. I thought I could run in, grab a loaf and leave. Yes, yes, I would pay for it first. After parking, I walked in to expect a traditional bakery arrangement of a counter, display cases etc... Not here! Open the door and you'll be in the inner sanctums of a historic relic which is a working bakery. The aroma, the white tiled walls, the old fashioned ovens and wooden shelves with loaves of fresh bread Despite all the charm, the history , the undeniably seductive aroma, I found the bread to have a crumbly crispy light outer crust and a very soft, light interior. While it was good, I expected a heavenly experience to emerge from those ovens. Well, it's good but, it is not the mind bending experience that would cause me to wait in line for even 10 minutes for a loaf. Right next door, Columbus Baking Company's sandwich and deli shop puts out sandwiches that makes me eat my words and their bread ! I had a freshly made sandwich with my choice of meats, cheese etc... on their home baked sliced bread. The generous, flavorful quality meats, cheese lettuce tomato etc... stacked between their slices of bread was a perfect match. All their bread needed was the company of a delicious pile of thinly sliced meat and I discovered the perfect way to eat their bread. I finally tried more menu items from here outside of their bread. I ordered online and had it delivered to my house so I bet the sandwiches were even tastier if even right off the panini press! I got the Columbus Classic sandwich and the TPLT sandwich. The classic had Ovengold turkey breast, mozzarella, roasted red peppers, banana peppers, lettuce, onion and mayo toasted with basilico oil. I loved the tangy and sour flavor the banana peppers added and the toasted crunch on the bread. The TPLT had mesquite smoothed turkey cheddar cheese, lettuce, tomato and mayo and was served with a tomato dipping sauce. I do not know what the "P" in TPLT stands for. Am I missing something? This was my fiance's favorite of the two. I liked the dipping sauce a lot and thought it added moisture to the sandwich. Each were $9. I would definitely come back for their sandwiches!
