Came for pancakes with my husband and noted the big change of being greeted at the door and offered seating - versus the traditional way of ordering and hoping there was a place to sit. They also have a patio but no one was hanging there today. This meant we also got a server. Huge improvement of getting drink refills and other requests. My husband made a huge spill and soaked his plate with coffee. Their team took excellent care of us. Pancakes are amazing here. Eggs and potatoes also good but the bacon was incredibly greasy and I wouldn't have wanted more. Coffee is disappointing and despite my love for it I'd pass next time. I love the vibes in this place! Bright, sunny, and colorfully decorated, you feel happy and welcomed. There were so many things that I wanted to try, but I couldn't resist the breakfast tacos. They were light and delicious and very flavorful. I really enjoyed the verde sauce that came with the tacos. Thanks to my Saphire League status on Duo Lingo, I know that Con Huevos means "with huevos." I haven't gotten to a lot of foods yet. But eggs are definitely the throughline here. The menu options are chock a block full of them and even the colors of the space are in a bold, yolky yellow and white. If only I knew what "huevos" meant... I opted for a seat at the bar. There's plenty of booths available as well as outdoor seating when the weather is a little nicer. Service was quick! Both my water and menu as well as my food were brought out in no time! I had the Mex-Pert breakfast sandwich. The home fries were perfection! The sandwich was delicious, though I wasn't paying close attention when I bit into the sunny-side up egg that may have caused me to ask for more napkins to clean up my hand. There are indeed simple joys in the world. A Cuban coffee, glass of fresh-squeezed orange juice, and huevos rancheros (add bacon!) at Con Huevos, whether it's with my kids, friends, or even every now and then solo at the counter, is one of those joys. Other greats include chipotle poached huevos (it's exactly what it says), tres leches pancakes (light, fluffy, sweet but not too much so), tacos (carnitas are always tender, juicy, and flavorful)...so many good choices (though the huevos rancheros remain my go to). And be sure to get a side of home fries...perfectly crisp exterior, chewy center, even better when dipped in some sauce from the huevos rancheros (and some others). Service is friendly and attentive. And apparently there's some entertainment if you order the horchata (I think) with the above the head pour! Atmosphere is comfortable. Like a bright diner space, complete with a classic breakfast counter. All in all, great place. There are other locations too, also fantastic, this is just the one I go to the most. read more

Hidden gem! Since this con huevos has opened, it's almost as if people don't know it exists. The other locations ALWAYS have a line, this one never does. I went with the chicken enchiladas with salsa verde. This dish is so good! If I tried I could probably eat three of them. The pickled onions on top give the dish great balance. First off, this is our first time here we had actually planned to go to wild eggs and they were closed due to power outages ( I'm so glad they were!) we hadn't heard of this place before and decided to give it a try. I haven't been to Con Huevos in a couple of years and was happy to see one built in Jeffersontown. You order before you seat but there's plenty of spots to choose from. I loved sitting in their comfy booth that has a lot of space. Shortly after we sat down, our chips and salsa that we ordered arrived. The chips are like no other chips and the mild (green) salsa was flavorful and toddler approved. My sister got tacos and loved them. I got one of their French toasts which was amazing! The fruit on top was exactly what it needed. My son got a pancake and liked his as well. Staff was extremely friendly and helpful. They made sure we had everything we needed. We decided to pop in to visit this new location on Hurstbourne Pkwy. I believe it just opened not too long ago. Definitely wanted to try because we love a good breakfast spot. It has a very similar setup compared to Biscuit Belly, meaning you order your food at a central spot and it's brought out to you when it's ready. You also seat your self. There's a fair amount of seating but I can see how it would get crowded really quick. We grabbed a table first then ordered. As soon as we ordered, our drinks came to the table very quickly. We may went with Cokes and they brought water also. The menu is pricey for breakfast but at the same time it's becoming the normal. If I remember correctly it averaged from around $11-$16 per entree. They also have a kids menu which is awesome! I ordered the Breakfast Tacos which were really good. They came with two salsas but no side. My wife ate the Muchos Huevos sandwich which they bread was amazingly soft and the ingredients were decent enough. I don't believe the egg was salted but she added bacon which helped. We were in and out pretty quickly but I think we beat the rush. We ate around 9 am on a Saturday. Overall, I'd try it again if with a group of folks that want to go but for the money I feel like you get a lot more at a Wild Eggs or First Watch. Absolutely love this place, this is there 2nd location I've been to. They are a breakfast/brunch type of restaurant. They are open early until about 2pm. I'm not sure I remember this at the other location, but here you place your order prior to sitting down. There are menus located by the door and a bench to sit at while you browse the menu. Once you order, you are given a number and then you sit wherever you'd like. I ordered the Oaxacan chocolate and my friend ordered the cafe con leche. For our meals we split an order of the tres leches pancakes. I got there go to huevos rancheros, and my friend ordered a breakfast burrito. Everything from start to finish was wonderful.
