I'm blown away - this is truly what a cocktail bar should be, and it'll have me coming back to Middletown much more often. Starting with the ambiance, the second level space is built out beautifully with unique custom details including a spectacular tree branch chandelier (I'm still fawning over it), gorgeous wallpaper, elegantly arched windows, eclectic glassware, beautiful bar stools, and an overall intimate & cozy space. It's pretty close to perfect. As for the food and drinks? I've already been here two nights in a row to keep trying more. The campfire old fashioned is the ideal fall libation with smoked maple syrup and a skewered toasted marshmallow. I also loved the mezcal mule with its hints of mango and refreshing cucumber granita. The carefully curated wine list features some real gems including an orange pinot grigio (so tart and funky!) and three refreshing vinho verde varietals. While I haven't sampled many of the small plates, the extensive cheese and charcuterie list includes a bunch of delectable local selections from Cato Corner and Arethusa. A slate of 3 cheeses (we tried a smoked cheddar, gouda, and Cato's womanchego) came with a hearty shmear of mustard and pistacho-honey accoutrement. Did I mention the late night waffles? What a cool place hidden in downtown Middletown! It has a unique vibe all unto itself. We came here last night to celebrate a friend's birthday and I loved everything about it. The staff was very friendly and tried their best to accommodate a group of 13 though there aren't many spots for that. They have couches and soft chairs all around, small tables, and the prettiest bar chairs that I want to put all around my house (a light Tiffany-type blue fabric with rivets). In addition, they have a very unique and fun cocktail menu in addition to a whole number of beers on tap. I ordered a gin drink (I forgot the name) mixed with lime and a few other flavors which was tart and tasty, though the glass kept spilling a bit (as did my friend's glass who ordered the same drink). And of course you get hungry at bars right? Well hopefully you're in the mood for gigantic belgian waffles! As a group we ordered a couple - plain and apple pie. They were fluffy and just a hint crispy and came with some ice cream and syrup! I love when places offer interesting snacks rather than the typical bar foods. Prices were on par with your standard cocktail bar ($9-13 for cocktails). They also had a selection of absinthes. I want to come back already! I love their furniture, paint, wallpaper, and the people. Such a cool vibe. Only change is oh my GOD the bathroom lights are like spotlights coming from a dark room. I saw this place pop up on Instagram and since then I've been waiting to try it. I also have heard great things about it from many Yelpers. It has a small entrance way, it can be missed if you're not paying attention. But they have a easel/sign pointing to the entrance. You enter by walking up a flight of stairs and when you enter the establishment it almost feels like there's a prohibition vibe to it. They have switched over to their fall/winter drink menu and have some really cool drinks like the "campfire old fashioned" one of their most popular drinks (it comes with a toasted marshmallow!). I had the "grasshopper" and if you like mint, chocolate and creamy alcoholic beverages then this is the drink for you! It is similar to a White Russian if you're looking for a frame of reference. I personally really enjoyed it. They don't serve meals here but offer a menu of small plates to munch on (like cheese platters, grilled cheese, etc). They also offer late night waffles (I believe it starts around 10pm). The waffles can be served with Arethusa ice cream for $1 or $2 extra dollars. Super kind staff and a very relaxing atmosphere! I've been a patron for the last few years , it's always our go to date spot . It has sentimental value to us , but after tonight I'm not so sure . The website and social media makes no mention to being reservation only , nor does it say that they dont accept walk-ins. I called 45 minute ahead and asked if I needed to reserve , immediately I was asked if I made a reservation because they were too busy . I was advised to come in and sit at the bar . I was also advised I could not reserve a table until 10pm. """,, , ,,,, My friends were driving from out of town , and had their heart set on this spot . I came in ahead of my party to see if someone perhaps left in that time , however the person that greeted me was not so kind . It became a back and forth argument of did you reserve , well I can't seat you at the bar to taking my number in case the bar opened . I asked repeatedly if reservation was required or if they simply didn't take walk in's , but never received a reply .....hours later , I'm yet to get a call . The social media and website should be updated to note that you are a reservation only establishment and staff needs to be trained better . We loved making our own craft cocktails with their Just The Mixers kits, our food (smoaked meatloaf, mac and cheese and cornbread) was cooked to perfection and little touches like their signature fun drink straws and minibags of Easter candy along with our delivery helped make our night even more fun. I've visited Conspiracy at least a dozen times over the past 2 years since moving to the central CT area and it never disappoints. The unique drinks, atmosphere and friendly bartenders keep you wanting to come back. Their menu changes somewhat frequently- maybe with the seasons?- so there is always something new and delicious to try. Their cheese plates are well made and the dessert waffles are to die for. This is easily one of my favorite places, especially to bring friends who aren't from the area as it has that "wow" factor with its somewhat hidden/secret location (hence their name) and their insanely creative drinks. It's not a large bar, so if you plan to go on a Friday/Saturday night or any other time when bars are typically very busy expect to wait for a seat, but I promise it will be worth your wait! read more

One of my favorite places in CT! Unique, creative, and perfectly balanced cocktails. Interesting and yummy small plates. Relaxing, cool atmosphere with comfy armchairs and couches. What more could you want? I also appreciate that they refuse to rest on their laurels (which would be easy to do) and instead are constantly changing their cocktail and food menus. Most recently their tarot-themed cocktail menu was presented on an actual deck of tarot cards! Half the fun was sorting through and trading the cards as we made our choices! Loved this place! It is definitely one of those locations that you would walk right by unless you knew it was there. It had a vintage, speakeasy atmosphere mixed with a little bit of trendy. I loved the atmosphere with music choice and how they continually dim the lights through the night. The drink menu was great, and I loved how unique everything was. My favorite was an option they had called 'Bartenders Choice' where you give them a preference and they whip something up for you that's not on the menu! As for food, we got the four pack bag of sliders and they were way smaller than expected, but the taste was great. I recommend eating beforehand if you have a bigger appetite since the menu is limited and portions seemed more snack-like. The service was also very friendly and prompt. Amazing hidden gem. Very creative with their drinks. We love the interiors so cozy, modern yet adult like. Not the teenage loud bars where you cannot hold a conversation - with kids at home I don't need noise outside. Lounge like atmosphere. Their cocktails are the best - not the typical Bahama mamas sugary drinks. If you like bourbon and want to get adventurous this is the place. They have a special menu for each season, happy hour daily from 5 to 7. Great food selection too - from finger foods to entree. Customer service is best, the bartenders listen to you and make suggestions based on your liking and preference and will even make it according to your taste. Definitely a must place to go read more

With all of these great reviews, I feel bad about giving them 3 stars. I have been here a few times and had a 3-4 experience most times. However, the last time I was there was a disappointing 2-star experience. I had the exact same 2 star experience Michelle F. had. We ordered drinks from their new fall menu, which were just fantastic as they almost always are here. The Fireside Cider was what really did the trick for me! The Campfire Old Fashioned would be second. Other drinks on the menu also featured your standard fall staples, such as maple syrup, cranberry, and pear. I am always pretty pleased with their drinks. They are always creative with their ingredients and unique in their flavors and combinations. Instead of menus they had QR codes for you to scan so you could view the menus online. We were super excited to have the appetizer they recommended, which I believe was a bucket of delicious sounding biscuits. Of course we immediately put in an order for a bucket. After half an hour, we decided that once the biscuits come out perhaps they would not be enough so we put in to have 2 more appetizers added. Our server said it would be no problem and that the biscuits would be out soon. Fast forward two hours and two rounds later, we still do not have our food. We go up to see what is going on and they say an order was never put in. Our server did not recall either of the orders we placed and was insistent we never ordered. We cut our losses and paid our tab, so we could find somewhere else where we could still get some food. Normally, I would brush it off as a mistake, but he seemed kind of annoyed with us when we asked and I can see that this is not the first time this has happened based on another review. We showed up a little early for our 6:30 reservation, but we're seated around 6:20. We wanted to have 2 flights of the cider flight special but before we could order, the bartender made some drinks for a to-go order that walked in 10 minutes after us. we got our drinks about 20 minutes after we sat down, and we ordered food at the same time. Before our food could arrive, we finished our flights and each drank an espresso martini to boot. we ordered brussel sprout poutine and vegan sliders and after about 45 minutes, the sliders came out but the poutine never showed. We asked for the check and quickly left to go find somewhere that was still open for food. 2 hour experience with 1/2 of our food and 2 drinks. we really wanted to highlight this place in our food blog, but we didn't feel they even deserved to be in a snapchat to friends. read more

Hanging out in Middletown for the night and leaving a friend's employee party we weren't done turning up yet. We remembered a Yelp friend of ours mentioning this place as a great spot to hang out, so we figured we'd give it a try, this is how it went. Atmosphere/Appearance: There isn't much to the outside since this place is upstairs in what seems to be an office building and tries to maintain the "speakeasy" vibe. It was pretty cool. Inside was freaking awesome. It was SO DIFFERENT and unique. I loved it. I won't even waste my time trying to describe this place to you. Just look at the pictures. Every room was just a bit different. Nothing really matched, but it all flowed together so well. Crazy right? Like I said, look at the pictures. Lol. The vibe was smooth, easy-going and you felt like you belonged to an exclusive club. The music was nice, seating comfortable and atmosphere... relaxed. Service: INCREDIBLE. I forget the servers name and really wish it was on the receipt, but it isn't. Young black girl who was so attentive, so friendly, talkative and just really made the whole experience a good one. She threw out awesome suggestions, handled our rebuttals and took really good care of us. Food/Drinks: This often doesn't happen in my reviews, but this is where this place loses 1 of its stars. I really feel like they tried too hard to be different here. Don't get me wrong, I really admire the creativity of some of the items on both the food and drink menus, but I feel like it fell flat honestly. For drinks we were able to try "The Business" (gin, honey syrup and lime), an "Elvis Old Fashioned" (peanut washed bourbon, honey syrup, banana liqueur and bitters), the "Left Hand" (bourbon, campari, sweet vermouth and mole bitters) and I was so disappointed with those 3 that I got a traditional vodka-soda even though I should've been too drunk to care about taste at this point. We also had a Skirt Steak Taco that was equally as delicious. Now... we were also able to taste our friend's "Popcorn w/Milk Duds". This is my favorite bar to go to when I am in Middletown. They open at 5 and you should remember that and not walk right in like I did one time while they were still setting up. Oops. I also figured out that Conspiracy's charcutierie board is cheaper and has many more options than the Italian restaurant down the street (you know which one). The tacos are what you should get if it is your first time to Conspiracy. The cocktails are superb and I love watching getting them made. They always offer specials that includes wine but I can't resist a finely made cocktail. It is my Achilles heel. They also have a small, acoustic live band that comes once a month and plays music in the back area. The decor is great and I love the way the bathroom is decorated. Conspiracy is, as far as I know, the only serious cocktail bar in the Middletown area. Liquors are top shelf and wide-ranging; the craft cocktails are creative, delicious, and meticulously prepared. This is the place to make an adventurous alcoholic choice, not the place to shrug and order a margarita or a Cosmo. The bar staff we've encountered have been knowledgeable and attentive. The bar itself is a thing of beauty, with decor giving a Prohibition vibe without being ostentatious or chintzy. There's low lighting and quiet music, sometimes jazz, sometimes big band, one time contemporary covers (think of Postmodern Jukebox). At the same time the windows are without shades or curtains and whatever natural light is coming in at the time adds to the openness of the rooms. For food, cheese & charcuterie boards highlighting local fare - and there are some excellent cheesemakers in CT - have been our go-to, though their grilled cheeses are hearty and quite tasty. We haven't been yet for late-night waffles, but plan to remedy this soon. The best part is that you can't even find the damn place. That's half the point. Upon finally eyeing the diminutive, at most 18" high sandwich board with a black and white 8"x10" waterlogged flyer stapled to it, barely indicating the location of the business, we walked up 30-some odd stairs, and opened the door... I immediately knew I was at my new favorite drinking establishment. It's not even a "bar." It's more like a lounge/speakeasy/relaxation room. Chill ass music played at reasonable volumes. Great seats in every part of the place, from leather swivel chairs, to wing-back bar stools. I could be here for several hours. Of course, that would result in extreme drunkenness. Indeed the cocktails are the stars here, and the making of said cocktails are part of the show. So I see the rave reviews about this place. I went with some friends tonight. You have already read about how hip and trendy it is so I don't need to cover that. It was okay but surely not as the server told us the winner of best cocktails somewhere. It was restaurant week in Mtown so they gave us the menu with 20.19 and 30.19 options. We had the popcorn with was decent. I mean it's popcorn. The chicharrones were vegan and I was amazed they weren't pork. Get this one. I had mushroom bao which was good. Ramen was up next and the Mac and cheese ramen was noodles with shredded cheese on top-sort of Annie's top shelf I guess. A miso ramen was spicy and fine: I had mushroom ramen which was good. We got the version of s'mores which was a cookie with some mochi. It was okay. My friends ordered Absinthe which they liked. I had a beer which is hard to get wrong. My friends the ordered Jack on the rocks and Absolut on the rocks and it was a mini pour from what I could tell. The server was fine and a bit enthusiastic. Came here to meet someone on the night I just arrived in CT on a late October, it was stormy night and all businesses in the area had closed and practically it was a dead town. Thankfully Conspiracy was still open, it was only me, and three other customers in there. Both owners were around with a bartender and one more employee. There are no TV here, so guests were chatting among each other, but the owners and the bartender would also stop by and chat with you. Really warm and welcoming environment. I also love their decors! I came with an empty stomach and needed an easy bite since it was kinda late, I knew that Grilled Cheese was always a safe bet. It came with house special soup which was French Onion soup that night, and some potato chips. The soup was a bit runny which was meant to be served with melted cheese but upon the owner's suggestion that it might be too much cheese for me since I already ordered Grilled Cheese as well. The Grilled Cheese itself.. wow I was completely blown away. I expected a standard grilled cheese sandwich but when I took a bite, all the flavors just complement each other, whoever came with the recipe is a genius. It's a combination of smoked maple cheddar and champagne grape mustardo. I have not stopped thinking about their Grilled Cheese ever since and would come back for it alone. We are always on the lookout for an excellent cocktail bar and we're thrilled to find Conspiracy just days after we moved to Middletown. Years ago we lived in New York City where there are many bars with really innovative and interesting cocktail menus. We were frequent fliers to conspiracy pre-covid. This place was JUMPIN and had a great vibe! We have attempted to come here at least 2 times since 2019 and have left disappointed each time. The first time we tried to come since 2019, they gave us a seat only to tell us 5 minutes later that they couldn't serve us because they were closing. We were there an hour before they were supposed to close. The bartenders have seemed inexperienced and unknowledgeable. We were the ONLY customers at the bar. I can't imagine what the wait would be like had the place been busy. We waited at least 10 minutes to order our drink after being seated. Going with 3 stars based on potential and the quality of drinks. I hope this place can turn it around to what it was a couple years ago because it was one of my favorites. read more
