Stopped into Copper on a Friday evening and grabbed seats at the bar before heading down to Yellowstone the next day. The food and drinks were excellent, but the highlight of the night was Trent. We were looking for recommendations on things to do in the area, and Trent absolutely delivered. Scenic drives, sightseeing spots, Yellowstone stops, local attractions--you name it, he had a recommendation for it. The suggestions were coming faster than we could write them down, and every time we thought he was done, he'd remember three more places we needed to see. His food and cocktail recommendations were spot on, and he was incredibly friendly and knowledgeable. As an added bonus, his voice carries exceptionally well, so hearing all of those recommendations was never an issue, even on a busy Friday night. Copper is a great spot, but Trent is what made the experience memorable. Located downstairs from the main street - seating in the bar area seems much cozier than the main dining room. Food and service was pretty average - we like to order an adult beverage before dinner and peruse the menu. We were told the bar was backed up so we should get our food order in. So, not a take-your-time kinda place. Not rude, but not chill. Shared a 1/2 portion wedge salad @ $12 - perfect for two and tasty. Main entrees were a bit disappointing: 8 oz Tenderloin Filet @ $54 was cooked a bit more than requested and it came with (2) baked potatoes which we've never seen before (+ $4 upcharge). The Pan Seared Trout @ $34 was prepared nicely but there is not any flavor; served w/ a Blackberry BBQ but very sparingly. Super bland. The four (five with baby) of us came on a Sat night around 6:30 PM and was surprised to get a table right away (for some reason, it appeared to be a slow night). The place is "underground" so to speak - so it had a very attractive setting for dinner. The bar area is HUGE. Great selection of local MT brews which is always a plus in my book. My daughter ordered the Cooper Burger ($19), SIL ordered the Bison Ragu ($29), my bride ordered Brussel Sprouts ($16) and I ordered the Pan Seared Trout ($29). Everyone was very pleased with their selections. I personally loved the trout - it's seasoning and was cooked to perfection...along with the broccolini and sweet potato hash it was a great choice. This was our first stop after we landed in Bozeman - right as they opened. We sat at the bar and our bartender gave us lots of recommendations with the menu and other local spots. My husband had the bison meatloaf which was honestly the best meatloaf either of us have ever had! We had the fried pickles for an appetizer and WHOA! Those sweet garlic pickles were sooo good! Service was good if not especially friendly. Hubby ordered a smoked maple old fashioned ($19). It was fine. I had a canned cider ($6). We ordered salads ($2 up charge each as they were a sub for grilled vegetables). Not nearly enough dressing for such a large salad and I never drown mine in dressing. Hubby asked for more, I did not. They were very fresh and very large. We ordered 16 oz. Ribeyes medium and they were cooked correctly. Baked potatoes are a $2 up charge. We went with the mashed potatoes at no extra charge. Even though the potatoes and steak were delicious, everything was too salty. Just too much. Hubby loves salt and he agreed. Still, we ate them and did not complain as they somehow still managed to be delicious. Each of our 16 oz. Steaks ($60 each) were 4 ounces of fat, which seemed like a bit much to us. We love ribeyes know ribeyes contain fat but this seemed excessive. We were charged for using our card which is pretty standard nowadays. Total for meal, including just over 20% tip, was $180. This Downtown Bozeman spot checks all the boxes for a 5-Star Experience. From the speakeasy vibe when you walk in, to the service, and the food, this spot is a must if you're in Bozeman. We wanted a spot to go grab a good steak and celebrate while in town. Copper was one of the first places to pop up in suggestions. We walked in and they had a booth that lined up perfectly so I could still watch Monday Night Football while also enjoying my meal. I got the NY Strip with mashed potatoes and veggies. The steak was cooked perfectly. I am a medium kind of guy when it comes to steak and was very happy with it. It had mushrooms, onions, and butter on top to give it even more flavor. The potatoes were amazing too. Definitely had that homemade feel. We also got the cornbread and brussel sprouts for apps which were both really good. Probably one of the best cornbreads I have ever had in my life. We finished up the meal with their hibiscus cheesecake tart. It was small but after a huge meal, it was just the right size. SO FREAKING GOOD! I came across Copper while walking around Bozeman and decided to try it out for their happy hour (3-5pm). It's a dimly lit, underground space with a huge whiskey selection. Their happy hour pricing on drinks were great ($5 house wine, $5+ beer, $5 select cocktails, etc.). The bartenders were great and kept us well taken care of! After a couple of drinks, I decided to get food. I ordered the Steelhead Trout which is bbq crusted and comes with smoked gouda creamed corn and broccolini. We arrived via Uber; we had never been. The driver did not know the place as he dropped us in the alley behind it - not their fault. The back staircase is not amputee friendly - pro tip, there is an elevator up front. We arrived around 5:30pm on a Tuesday. It was pretty much empty, but when we arrived at the host stand, we were greeted with 'thanks for coming'. "No, we came in the back door". 'Oh. Do you have a reservation?' Not having a reservation seemed troublesome. We were seated at a high-top table in an empty bar area right next to the host stand- definitely seemed to be a 'that will teach you' moment. The high-top chairs are uncomfortable at best. Get a table or booth if you are even slightly hesitant. The bar area is nice, but without many people a bit cold. The menu reads well, my wife and I chose draft beers, and she ordered the chicken burnt ends and I asked for the 8oz Tenderloin medium rare with the loaded baked potato. At this point, we noticed the server was less pleasant than the host. The dead buffalo on the wall had way more charm. She barely spoke. Before our food even came we both realized we were immersed in a very negative vibe. My wife's dinner was good, she loved it. My steak was good (3/5 for tenderloin). The potato was dry, pithy and gritty, very unappealing. The French green beans were ok, but had a bitter aftertaste from bite to bite and I didn't finish them or the potato. 2 people 4 drafts ~130 with tip. My son and I made a run over to Belgrade to pick up some stuff and decided to try a new place for late lunch in Bozeman. We were seated promptly, managed to get there at happy hour so we got to try some discounted drinks. The "worlds best whiskey coke" is most assuredly not the worlds best. It tastes like soap. Having said that the other drinks we tried were delicious. We both had steak frites which I would 100% recommend any day of the week. Our service was amazing and the ambiance of this place is so cool. It's downstairs from the Asian restaurant so you have to use the upper restaurant door and go downstairs in orders to find the bar and grill. I hate leaving bad reviews! But this one is worth it. We went because of the reviews and the waitress was very nice until my order of a medium done filet mignon came out rare to raw in the middle and I asked if they could take it back to hopefully cook it to a prepared medium. I would hope they would make it a standard to know their meat preparations when charging $50-$65 a cut. The waitress came out and said "I am sorry it wasn't prepared to your liking" super loud like so everyone around us could hear (so strange). And then was rude and dismissive from there on out! When the plate came back the filet was chared on the outside, like really chared and at the most medium rare and the baked potato was cold and 1/2 the beans when I had even touched them. We will not be going back. We understand that meats sometimes are not prepared correctly and had no problem sending it back but then take that and then the rudeness of the waitress and the look of the plate when it returned is absolutely unacceptable! read more

While spending a few nights in Bozeman at the end of a vacation, we found Copper Whiskey Bar and Grill a few blocks from our hotel. On our last night we got reservations to try it out since it seemed like a neat location! After heading down the stairs below the street we entered the dinning room/bar area and I will say it was a pretty cool location. A fixed up basement with a whiskey rickhouse/rustic type vibe. It was definitely nice, but not pretentious or anything and you could certainly be dressed from nice casual to somewhat formal and would fit in just fine. I liked that they had a few local drink options, a couple huckleberry cocktails as well as a flight of Montana whiskeys. I decided to go with the latter which came on a cool board shaped like the state. For dinner I had the trout, and my wife had a steak. She enjoyed the steak, it was cooked well but she didn't believe it was really the best piece of beef ever. I really enjoyed everything about my trout dish, except it was pretty over cooked and dry. With the fish cooked perfectly it would have been really really good. Our service was good, but I will admit the debit/credit card fee is a bit tacky for a restaurant in this range... I'll accept it for something like a small mostly cash hole food truck or something, but let's be real when you are a restaurant in this price range, not many are going to bring that much cash just to pay for dinner and sadly processing fees are a part of doing business. I sadly have a feeling from some comments I overheard from tables around us that it hurts the servers more than it does the restaurant as people did not appreciate it when they received their check and were deciding on the amount to tip. I just hate that as the server definitely has no say in how that fee is charged.
