My wife and I have now dined at J.W. Heist twice, most recently last night to celebrate our 21st wedding anniversary. Both visits have been positive overall, with excellent steaks, very good service, and several memorable dishes. That said, our most recent experience fell a little short of what I would expect from one of Bozeman's premier upscale steakhouses in terms of atmosphere. We had a 5:45pm reservation and were seated in a comfortable booth near the front of the restaurant, adjacent to the bar. We started with the fried calamari, which we had also ordered on our previous visit. Unfortunately, this time it was disappointing. There was far too much batter and very little actual calamari. Given how much we enjoyed it previously, perhaps this was simply an off night. The steaks, however, were excellent. My wife ordered the 8-ounce filet and I had the 16-ounce prime strip, both medium rare. Both arrived properly prepared and were flavorful, tender, and delicious. We shared the loaded baked potato and fried Brussels sprouts. The portions were generous and both sides were excellent, particularly the Brussels sprouts with caramelized bacon and small pieces of Granny Smith apple. Service was another highlight. Our waiter, Jordan, was attentive, prompt, and thorough throughout the evening. The additional wait staff were equally conscientious and friendly. My primary reservation concerns the atmosphere. Being seated next to the bar naturally meant more noise, and two nearby tables became particularly loud as the evening progressed. Obviously, a restaurant has limited control over the volume of individual guests, and I also take responsibility for not mentioning when making the reservation that we were celebrating our anniversary. Next time, I'll request a quieter table toward the rear of the dining room. I was also somewhat surprised by how casual the dress standards are. One of the things I appreciate about living in Montana is its relaxed, unpretentious character, and I certainly don't expect formal attire everywhere. My wife and I enjoy getting dressed up when indulging in fine dining, and while we don't expect everyone to arrive in suits and ties or dresses, we do anticipate a level of dress and decorum somewhat above everyday casual. J.W. Heist presents itself as an upscale steakhouse, and an evening for two can easily exceed $200. Seeing shorts and several baseball caps in the dining room--including backwards caps--detracts somewhat from the elevated atmosphere I would expect at that price point. Casual attire in the bar area makes perfect sense, but I think a modest dress standard in the main dining room would help distinguish the experience and make special occasions feel a little more special. Overall, we've enjoyed both of our visits. The quality of the steaks and sides has been excellent, the service has been consistently very good, and we would recommend J.W. Heist to others. We will likely return as well. I simply think a few refinements to the dining-room atmosphere would bring the overall experience more in line with the quality of the food, service, and price point. read more

Came for dinner on a Monday night, made a reservation a few days before. Place was fairly busy. They definitely good service a priority and constantly check in on you. Our drinks were strong, the Larkspur was much better than their Old Fashioned (in our opinion). Our meal started with free bread. Flatiron steak was phenomenal! We felt like the prime rib was well cooked but felt overly heavy with au jus and mushrooms addition. The mashed potatoes and broccolini were good but nothing mind blowing. First time visit on Wednesday night. Great atmosphere and service. Started with an old fashioned and oysters. The oysters were fresh and tasty. I had the heist salad, brocolini, beets and 28 oz wagyu special for the main. The salad was good, kind of a greek style. It was a little heavy on the vinegar but still good. Everything else was smoked on the hot grill and it really adds to the flavor without overpowering the meal. The smoke and char with a touch of salt was a perfect combination on the brocolini. I normally don't like beets but there were sweet and not overcooked. Surely the star of the night was the wagyu. I asked for it to be between medium rare and medium and that is exactly what they did. The great part was that the char was super nice and crunchy with a perfect salt and pepper rub while the inside was still at the temp I requested. In the middle of downtown main street, the restaurant felt like a true classic steakhouse. It was well decorated and had lovely seating booths in addition to dining tables. Our server Jamie was attentive and helpful. But what to you come to a steakhouse for? It's for the beef! We saw on the menu they offered prime rib on Sunday and Monday. Ok! It was Sunday night. Perfect. We ordered a 16 oz prime rib ($85) that was mentioned was sourced locally in Montana. We ordered a baked potato (additional $14) and a Caesar salad. The prime rib came out rare, as requested but the beef could not have been prime grade. Or choice grade even. Maybe, maybe it was select grade. The meat was hard to cut through and some pieces I couldn't even chew through it. It was just a big hunk of meat and not tender at all. So disappointed! The baked potato was good as was the Caesar salad. But when you come to a steakhouse for a good steak or slice of beef, the meat better be good. Sorry to say I can't recommend our meal here. This place is top shelf! You feel it the minute you walk in the upscale restaurant and bar area. We came in Saturday 12/13 with a large group (15). We could only get 12 on one large table so 3 were seated on a table close by. That was fine, we are just happy to get us all in together. The service was Outstanding! From our waiter, Dillion, to our sommelier Jen, to the bussers, everyone worked together to get the plates and utensils cleared and replaced, and the wine glasses filled. Our food was amazing! The Beef tartare and the oysters were a hit. The steaks were cooked perfect, and our sides (Asparagus, Brussels Sprouts, Broccolini, and Whipped Potatoes) were excellent. Flavor was good tho. Also got the salmon which was cooked medium and super tender and yummy. Best for one person. Spinach salad was meh. This was probably the best ribeye steak I've ever had. It had an amazing thin crispy texture across most of the steak and was juicy and flavorful. I had heard that Montana was known for their beef quality and that was accurate AF. Their roasted beets were good too. Inconsistent cooks and somewhat inexperienced service leaves us a little disappointed Ordered: - 4 tomahawk steaks for the table all medium rare. 2 were perfect while 2 were overcooked. We mentioned it, and even showed it, to the server who essentially said "sorry, nothing we can do about it". The perfectly cooked ones were so good but the other two were just slowly picked at. - Tartare was forgettable. Not enough mustard in the mix and way too much bread. - Wedge salad was better than the table salad. Definitely enjoyed the bleu cheese dressing as it stands up next to the meat. - French onion soup was a sleeper. We made a reservation yesterday evening for my husband's birthday. The service was terrible. We finally left after waiting 1 hour for our main courses. And the restaurant was relatively empty. No one came by our table in 30 minutes despite having a server and an assistant greet us early on. When we told them we were not waiting any longer as it was 9 and other restaurants would close if we didn't leave. The GM Sam apologized, gave us our bill, said "they dropped the ball", but did not even take a glass of wine off of the bill to compensate for our long wait and ruined birthday plans. So very disappointing. This was our second time at Heist and we were celebrating yet another birthday. I was sooo looking forward to enjoying another wonderful meal. Let me say that everyone in our party of four (not me) were very happy with the food. I ordered the crab cake appetizer, and the asparagus. Much to my surprise I decided on the Prime Rib instead of the filet. The crab cake was delicious hands down. The asparagus was terrible. At its delivery it looked old, large I mean big asparagus shafts that were faded green and appeared old. They were gritty in texture and simply not good. Now to the Prime Rib. Upon delivery it looked amazing. Perfectly prepared and juicy. I always enjoy the edges of the meat. More tasteful and tender. That was a winner. The rest of the meat although beautiful was so TUFF that it was not even worth the chew. Tough, Tough, Tough shall I go on. This place should be ashamed for delivering this meal. We had a reservation, walked there from our hotel was seated within 5-7 min of arrival. Our server Lindsey was Excellent! She knows the menu, the history of the place, the staff and beyond. She was very detailed and knowing it was our 1st time she encouraged us to go see the kitchen, and we did! My 1st drink way strong, so I cut it back on #2. The food not as impressive as some steakhouses I've been too but not bad. The main issue we had was our steaks Filets were not hot, not even really warm. They had a smoky taste and I kept mine but my bf sent his back and was still unhappy and chose not to eat it. The grilled asparagus was hot & tasty, The whipped potatoes just that smooth & creamy. Not a fan of the French onion soup, had an odd color. Very greasy and did not taste like house made French onion soup, But it was bloody hot! The bread basket kinda disappointing looked like Hawaiian bread rolls, tasted like a potato roll. Nothing to rave about. Crème Brûlée dessert was good. It's kinda loud inside, dim lighting, seating is very close to your neighbor at least where we sat. Tight walkways to get towards the kitchen and bathrooms. we always make a "quick" friend no matter where we go, and tonight was no different on our way to the kitchen a man named Scotty at the bar stopped us to say hi, ask where we're from and have a quick chat. (He was not a local either on a business trip ) so it was fun to see friendly people inside. To be frank, the service was the best, Lindsey is a Fantastic & knowledgeable server. My husband ordered the rib eye and half of the steak was gristle. I have never seen a steak like this at a price point of ninety-eight dollars. Really half the steak gristle? I didn't get to take a picture before the busboy took it away. I had the filet that was decent but I asked for a horseradish crust and was given some kind of sauce that looked like ranch didn't taste like horseradish at all. Don't get the corn pudding that was more corn bread-y than anything. The best part of the meal was the burrata and the only thing I would recommend. Save your money and go to Texas Roadhouse. We have had better steaks there for a lot less. I would say the service was good but at the end of the meal we were never asked about how it was and that Caesar Salad that wasn't touched was still on the bill. I live in Bozeman and Heist is my & my husband's favorite restaurant. We eat here about once a month and have never had a bad meal or experience. Every member of the staff is polite and professional. The vibe of the restaurant is moody, yet classy. I love that it's not loud like other restaurants, so it's easy to carry on a conversation with your companions. We often take visitors from out of town here and they enjoy it as well. I am not much of a steak person, but there's plenty on the menu for me to enjoy. Still, I always have a bite or two of my husband's steak and they have all been so, so flavorful. This is one of the few places in town where we order an appetizer, main course, and dessert, as well as a cocktail or two -- because they get everything right! read more

Similar to most high end steakhouses - soup/salad starter with steak and shareable sides to follow. The both times I have been, the clam chowder has been very watery but flavorful. For the price - steak is pretty good, but missing that buttery melt in your mouth flavoring due to the steaks being wood fire grilled in lieu of sous vide and/or reverse seared. They need a few more heavy side choices (scalloped potatoes, mac & cheese, etc.) Drinks were great, and the butterscotch budino was to die for! Overall good restaurant, but you definitely pay for it.
