    Racist owners and dry, overcooked food. I had to refill my drink twice just to choke down the food. Don't waste your time or money here.

    Not a fan of the brisket. The owner was quite rude. Bare bones and uncomfortable dining space.

The combination of different meats blend perfectly and the olive spread complements, not overwhelms. Plus I love the side pickles! Instead, there is a sense that every component of the business has been thoughtfully orchestrated. The staff further reinforces this impression. They are exceptionally friendly, courteous, and accommodating, but what stands out most is their knowledge. They are able to answer questions, offer guidance, and navigate the extensive menu with confidence, making the experience both comfortable and enjoyable. And the menu itself is a destination. It offers an impressive range of choices, with an appealing variety of meats, sandwiches, sides, and beverages. There is far too much temptation to reasonably expect one visit to be sufficient. In fact, choosing what to order may be the most difficult part of the experience. Their version of the muffuletta an outstanding of the original. Particularly their version of the bread, which was fresh, and warmly toasted renders it a cut above. Cochon Butcher is therefore a restaurant best approached with the intention of returning. One visit gives you an introduction; several visits allow you to truly appreciate the breadth of what they do. The combination of organization, cleanliness, quality, knowledgeable service, and an extensive menu makes Cochon Butcher a particularly impressive example of how a busy restaurant can operate with both efficiency and character.

I still love their boudin, of course, but I recently tried their smoked turkey salad! I love that they have a salad on their menu because generally, any BBQ you go to will never have a salad. And this one is really good! They aren't stingy on the ingredients either. The turkey was so juicy and I don't know how they did that, turkey is usually dry. Maybe they spatchcocked it. In any event, this juicy, moist, turkey salad was so good, I could not eat it all! It was so much food. DONT SLEEP ON THE SALAD AT A BBQ PLACE! :-D Also, mac n cheese is really good. We also ordered their meats, their brisket and pulled pork are great as well. Love their BBQ sauces. This is a side note, but I wish they would have made a second Central City BBQ when they instead did their tex mex Las Cruces. Metry has no good BBQ and I think CCBBQII would have made a killing! Keep up the fantastic work in Central City, I will be back for sure!

You sit and chill and it's brought out to your table which I think is a nice touch of customer service. What happens next is nothing short of Magic. This isn't Gus's county, famous or city, famous municipality, famous state, famous, or even region famous chicken: it's Gus's world famous fried chicken.

I've been getting used to bbq places bringing you small wimpy ribs, but this says two ribs on the menu it's more like three and some change they're so big. These ribs were so juicy, perfect amount of char, tons of flavor. Throw some of the table bbq to dip in and wow. Overall pretty good I would definitely go back to get another order of burnt ends.
