Everyone knows that a delicious crust is key, but what elevates this product above other wood-fired pizzas are the sauces and flavor combinations. Back to the crust-- it's stretchy and bubbly and crisp and has flavor beyond the flour. Perfection. Next the execution is on point. Thinly sliced squash so farmers market sweet that you can't understand where all of the flavor is coming from, BBQ pork with sticky, sweet BBQ sauce and bright cilantro, meat combinations, minced chili garlic etc. One of the fun aspects was being surprised and delighted by the piping hot options that flowed to the table without ordering. Oh how I crave thee! When my husband and I got engaged the very first thing we decided was that we wanted to serve pizza at our wedding. We'd never heard of pizza at a wedding before but we fell in love over pizza so we had to make sure it was a thing. I did some minimal research online and found Fire & Wine within about 10 minutes. Their awesome website has a calendar on it so I was able to easily see their availability. We called and had a quick phone conversation about what we wanted and how we were going to achieve it. Gretchen was very confident that she and Chris could make our wedding food exactly what we wanted within the price range we had budgeted. A few months later we went to one of their pop up events and tried their food-------- PRAISE THE PIZZA GODS FOR THEY HAVE BLESSED GRETCHEN & CHRIS WITH THE GLORY OF ALL PIZZA POWER!! The pizza was. so. good. It was better than good. It was amazing! Now- as I understood it- pizza is the greatest food of all time BUT THEN Gretchen gave us the Kale Salad to try and HOLY PIZZA GODS! The Kale salad is quite possibly one of the top best things I have ever eaten and I thought I hated kale! A few more months later we meet them again at a different pop up event and this time Gretchen had a couple of custom items that we requested for the wedding for us to try. Somehow, I am not sure how, but somehow the pizza got better. This slice of heaven she served us was cooked to perfection with toppings placed within the perfect ratio. Gretchen also went over every minor detail about the wedding with us. What color forks and plates she was bringing, how big her drink containers were, how the pizzas would be set out, etc. Every single question I had she handled. She also decided to make an extra appetizer for us at no extra charge which was such a blessing. We wanted two but had no way to afford that extra little bit for each person. The day of the wedding was a blur for me but I was confident that Gretchen, Chris and their staff would have the food perfect. I saw Gretchen for about 34 seconds that night and I only ate half a slice of the "Mel" pizza which she made custom for our wedding (Pepperoni, Bacon, Pineapple & Jalapeno (try it if you haven't before)) but I did get multiple compliments about Fire & Wine's pizzas, appetizers and salads. I even heard from one friend of mine that went to their most recent pop up event! Our goal was for our family & friends to understand our deep love of pizza by serving them delicious pizza and with the help and perfect execution of Gretchen & Chris we were able to do that. Well here we are in week (insert number here) of a two week shelter in place when my wife and I received a text last night asking if we would like to join a group ordering up a pizza. Normally, this is not a big deal if you live on the flat-lands, but when you live up in Painted cave, it is unheard of that a Pizza company would deliver up here, no money to be made, too far, and the pizza would probably be cold. When we decided on serving pizza at our wedding, we figured it would just be a fun, out of the ordinary reception dinner that none of our guests could complain about... In hiring Gretchen and Chris, what we received was an unbelievable meal from beginning to end that won't soon be forgotten by anyone in attendance. From the beautifully assembled charcuterie board, to the perfectly prepared selection of wood fired pizza's and everything in between (mind-blowing bruschetta!) there was not a single course or ingredient that didn't exceed all of our expectations. Deciding to hire Fire & Wine did not require much deliberation. We had a quick slice at a pop-up in San Luis at the end of a very long day of tastings. While the few bites of pizza we had that night was great, it was the people making the pizza that really made up our minds and we hired them on the spot. Gretchen and Chris are as sweet as they are talented and hard-working. A married couple themselves, their enthusiasm and communication put us at ease immediately. The only difficulty we encountered was selecting a menu from their extensive, ever changing list of delicious-sounding pizzas and sides; but you really couldn't go wrong if you tried. Our wedding site (a Morro Bay ranch located at the end of a long, bumpy, winding dirt road) was not exactly made for towing a pizza oven to and from, but this was no problem for Fire & Wine. They arrived on-time without issue, and got right to work. The spread they put out was so gorgeous it could have doubled as a decorative wedding feature, until our guests ate it all that is. Two weeks later I'm still receiving comments on the "amazing food" and don't expect that will end soon. We didn't have much of a chance to thank them that night with so much going on, but our wedding simply wouldn't have been as great as it was without Gretchen and Chris. WOW! All I can say in the fewest amount of words as possible is Fire and Wine Catering did an amazing job and went above and beyond for us. Not only did they set out my dream charcuterie board display for my wedding (literally dreamy with eucalyptus) but also hand delivered my husband and I a platter display after we tied the knot so we were able to eat some before our guests had at it. They set out a beautiful welcome station with water and iced tea and moved it to the dance floor later on, which was never asked of them but super helpful and incredibly sweet. Not only did they work with my budget but they provided some of the best pizza we have ever had!!!! We got so many compliments, and it truly made our wedding unique.
