The Padre's Hot Sauce, apparently made by a local man (whose daughter happened to be our server today), was a revelation. Both the mild "Yellow Jacket" and hot "Bodacious" are made through a lacto-fermentation process that results in a luscious, complex chili flavor without the harsh vinegar edge that you get with most hot sauces. My hat's off to Mr. Padre for your delicious and painstakingly created hot sauce and to Paris West for featuring this superior, locally-produced artisanal product!
