In town solo for business. I ate at the bar. The bar was nearly full when I arrived. Shannon immediately came over and took my drink order and got me a menu. I had a filet, baked potato and green beans. The filet was great and served on a sizzling plate. The potato was large and prepared well. The green beans were blah, nothing really happening there, I would pass on the green beans. Shannon was attentive despite running a very busy and large bar. Great job! I love this place! I've been here a few times now and yesterday I had the best experience with Morgan (she was a total doll - kind, attentive, helpful service all the way)! I started with a delightful mocktail, moved on to perfect boneless buffalo wings, & ended with the 7 ounce filet mignon & giant baked potato for lunch. The filet was cooked to absolute perfection - exactly how I like it. The potato was delightful - it was probably 12 ounces with real butter (they have fresh sea salt grinders on the table, and that was also wonderful, as I'm a salt girl). Not a local. Just passing thru. Had the ribeye. Was one of the better examples that I've had. Came out on a hot hot plate, which, I believe, is critical, since the prolonged higher temp keeps the fat rendering until you cut the meat. And a good ribeye has tasty fat which runs clear and full of flavor when it's served correctly. Garlic mushrooms were fantastic. Cream spinach excellent. Seth was my server. Good guy. Was covering another section and saw me sitting and waiting for an extended time so he came over to get me started. Incidentally, I ordered a Coke and water with a bunch of lemon wedges. He legit brought a bunch of lemon wedges with my two drinks. No one ever gets what a bunch of lemons is. He nailed it. Wait staff was nice. Food was not good. I had a half rack of ribs loaded with fat. Hardly any meat. I ordered a side of fresh green beans. I could not eat them, they tasted like fish! My husband ordered the special filet and had to send it back twice. Plus it came out on a sizzling plate that splattered grease everywhere. It ruined his shirt. Grease splatter all over the front! The food was perfect! My wife and I both had the fleet mignon. It was grilled to perfection. It came straight out from the kitchen sizzling on our hot plates. The sides were also perfect. I had the garlic mashed potatoes and my wife had a loaded baked potato (soft and tender- more perfection). We also had salads. The lettuce was fresh, cold and crisp. Although some of the chunks were rather large and had to be cut (along with the cucumbers), which was a bit difficult since the serving size was abundant and the plates were not large. I also REALLY appreciate our super sweet server (Hailee). The place was packed and ALL the staff was in super hustle mode. But she didn't rush us and allowed us to finish our salads before bringing the entrees. (Don't you just hate it when you're barely half way into your salad and the server plops down the big plate? Basically saying you're done enough, I'm in a hurry so take this now!). With the place so busy and an expected 10-15 minute wait, we went into the bar area and found an open table and decided to stay there. Hailee immediately took our drink orders gave us menus. The vibe in there was friendly, but not too loud and certainly not dull. We live in California and this was our first time in this regional chain restaurant. We will go out of way to visit again. Did I mention the staff? All those young servers were moving with urgency and efficiency. However, the managers seemed overly serious- especially the shorter guy. He seemed to almost be scowling. Went here looking for a good lunch option- found amazing beer and steak (and wings- especially the sweet Thai chili wings) at this place. The real star of the show was Chris. If ever offered a barside table option and he's tending bar- take it. This man not only anticipated what we would need but gave great beer suggestions. We got on right away however the wait time for our server was about ten minutes. We ordered the 5 mushroom appetizer but only four came out. Our salad and soup came out before the appetizer. The didn't serve the baked squash anymore. We ordered a loaded bak potato which was good and the jumbo shrimp dinner. Not sure the chop house knows what a jumbo shrimp is but it wasn't what I received. They are usually a great place but not today. Service and food coming out was slow or not in order as ordered. I'm not usually one to complain, but it took a significant time for the waitress to get to my table (I just about left) and then after she did, it took a significant time to take my order. I ordered a salad without onions and it came with some nasty lettuce and onions on top. Some of the staff was more interested in talking to their friends than actually doing work. The ribs were fine and the chicken was OK, but the barbecue sauce lacked flavor. Once again, it took me forever to pay my bill to get out. We didn't leave until 9:30, and nobody ever sat at that table and the place closes at 10:00 p.m., so either the other customers were a no-show or she lied to us. We had a late lunch, so we were not starving and we hadn't even planned on going out on Sunday night. I loved the loaded baked potato! The steak was cooked to perfection and melted in my mouth. It wasn't very busy while we were there, but I can imagine this place is packed on a Friday or Saturday night. Not a good experience. Disappointing. Filet was "roast" like. I love filets but this was not a normal meat consistency. Very stringy. Our waitress had a large party so we didn't get much service attention. My drink glass was empty most the meal. No refill ever offered. Manager in red shirt walked right by, looked down, saw it, then continued to the hostess stand to chat with the hostess girls. We had to go to hostess stand to ask for the bill after waiting. I wish we went to outback instead. The ribs were cooked very well, but they slapped on a ketchup based barbecue sauce, which really took away from the taste of the ribs. The salmon was average as it was a dry but the cedar plank flavor really came through. We got the crème brûlée for dessert and it was a bit over cooked. Not as light as they usually are. Everything went as expected, and as was bragged about for the amazing rib and chop house. Even though they were extremely busy with the Cheyenne frontier days. I really wanted to like this place, but it was just not good. They drown the salads in dressing. The blue cheese house dressing taste like mayo. (most of their cream house sauces taste like mayo.) They are always out of the fish options. I do believe the steak options are good. I had the salmon on my last visit and I had to scape off the topping bc it was way too salty. They need a chef to come in for the BOH and they need someone to train the staff FOH. It feels like a local bar, but they want it to appear as if they have "elevated service", but it falls flat. As crazy as this sounds, they should try modeling their service after Texas Roadhouse bc it's always consistent no matter where you go. ( I've dined in all types of places all over the world- from Michelin top rated restaurants to quaint Parisan bistros.) Final thoughts... This is NOT an upscale restaurant. PERIOD. It's more like a Chilli's meets Texas Road House (TRH is way better IMO) who wants to be like an old school 1980's vibe Red Lobster. It's a casual place to grab food. I think they want to be a high end establishment, but they have a long ways to go and I recommend management go to Denver, Dallas, Miami, Chicago, or San Francisco to try out the top rated restaurants to mimic this vibe. Management needs to train the staff better, food inconsistencies need to be addressed, and do order your sauces and dressing on the side. Definitely not the place to go if you want to impress a business client, for a work dinner, or potential employee recruitment dinner. Before this bad review, I will say the manager was very nice and took off one order of ribs and gave me a discount on the 2nd rack because they were horrible, along with the rest of the meal. All of the sides were a disaster. Potatoes au gratin was the worst, while the watery Mac and cheese was a close 2nd. The ribs were burnt and dry and the blue cheese tasted like all mayonaise. I never got a birthday cake and we were seated in a terrible place before having to move. Also, don't sweep the floor while I'm eating your fancy dinner. After waiting 45 minutes for the orders, It came out raw TWICE, and my wife's chicken on her wedge salad was cut and then fried (yes fried after they were cut). What once was a primer steak house isn't even average. The turnover on management and lack of experience in the kitchen has definitely added to the down fall of Cheyenne's Rib and Chop. I also order the sauté mushrooms. Solid thumbs up. Very very tasty. Now the baseball steak, not my favorite cut, I prefer ribeye which was not an option??? Anyways, I was extremely surprised in a good way. Tender, not over cooked, juicy. Everything I had hoped for in this steak. I guess I could have gone down to my hotel's restaurant to get silverware, however, if I wanted to go down to the restaurant, I would've just eaten there instead of ordering DoorDash. We were limited to a 3 item menu (steak, chicken Marsala and Salmon) and were told we could not order anything outside of this limited menu. Apparently this is the new general managers decision. The party arrived at 6pm, they started taking our order at 6:30 and we did not get our food until 8:30 even though we only had THREE entrees to choose from! I ordered the chicken Marsala and the chicken was so dry I couldn't even eat it. Immediately after getting my food I asked for a box to which they told me I had to wait till the end. Visiting Cheyenne and we had to stop by this steakhouse n downtown Cheyenne. Our server, Ray, was wonderful and very attentive - huge props to her! They have TVs everywhere at the bar and plenty of open seating. We got some wine (Malbec and a Pinot Noir) and the mandarin mule; the mule was very good. We ordered Caesar salads as the starter and the 36 oz Côte de Boeuf French cut ribeye and the chicken Marsala for our meals. They cook the ribeye in front of you and it ended up being absolutely delicious. Wonderful spot and would recommend a visit here, especially if you are looking for a good steak. read more
