This week we were able to get into Tulsa and have lunch at Doctor Kustom. Thursday is the Picanha Sandwich day, and the line starts forming around 10:30am. My husband and I initially joined a line at the front, but a kind worker came and told us all that the line actually begins in the back as they open the back door for customers ordering. So, we all walked around and waited patiently until the doors opened at 11am. We were about number 10 in line and were able to order their famous sandwich before it sold out! The Picanha sandwich is probably one of the best sandwiches we've ever had! It comes with steak fries, which were also very tasty! It's perfect to share because the portions are plentiful and it's very filling. We also ordered one of the chicken pastels to share. Everything was wonderful! If you haven't tried this place out, I highly recommend trying it out! read more

I've been dying to try Doctor Kustom after the Yelp top 100 came out in 2025. I finally dropped in for a Friday lunch. Since I wasn't there on a Thursday to try the famous sandwich, I got a chicken pastel. It was a pretty short wait and it was fried fresh and delicious. I had corn and jalapeños added to mine. I should have added all of the add ins available. The filling is creamy and good. The interior of the building is beautiful bright and airy. Next time, I'm getting a Thursday sandwich. And my only complaint is the tiny chimichurri sauce that comes with it. I definitely should have ordered more because it's delicious! I could have used another couple because the Pastel is big! You can definitely share it. But I love how creative and authentic the vibes are. Doctor Kustom himself was there when I was there, and he's so nice. I see why the chef was a James Beard award finalist. Doctor Kustom is a Brazilian kitchen inside Tulsa's Mother Road Market. I ordered the Chef Pastel with ground beef, onions, jalapeños, boiled egg, green olives, and cheese. It was killer to begin with, then you add the house-made chimichurri... The crust is perfect: crispy and flaky. The fillings were great. You could taste everything without anything being out of balance. It's seriously one of the best things I've had in a long time. I went in after hearing about the steak sandwich. When seeing it was $36 on the board I was annoyed, but figured it must be a hero/sub sized sandwich and must be as excellent as advertised. Well it's not. It was a good sandwich, not a great sandwich, and it's the size of a large burger bun. It comes with a side of fries and they suggest the garlic aioli for dipping for an extra $1 bc you haven't paid enough yet. That said, the fries and dip were more worth it than the sandwich. Nobody puts Doctor Kustom in the corner. Well... except for Mother Road Market. That's where you'll find Dr. K. Sandwiched between Pure Food + Juice and Metropolis Cheesesteaks. I finally made it a priority to escape from the office and experience the Picanha sandwich. And I'm so glad I did. I placed my order at 11:10 am. Only one person in line ahead of me but I could see the kitchen was working on several to go orders. Mine would take about :30 minutes. No big deal. I wasn't in a hurry and I actually prefer waiting for a fresh quality product instead of rushing thru the mass-produced heat 'n eat food you get at most places. The Picanha came a perfect medium rare on a nicely toasted bun. I asked for the fries instead of the fried polenta. These were hot, crispy, and nicely seasoned. Sandwich and fries were $24.00. And of course a cold Guaraná (Google is your friend) to quench my thirst. $ 3.50. OMG! I now understand why these guys are killing it! The sandwich was a hot juicy flavor bomb. Soooo good. I came to MRM to try Doctor Kustom. When I arrived the kitchen was closed and all they had left was desserts. Of the limited options, the chocolate eruption looked the best. It was chocolatey but also very sweet. It was good, but definitely nothing spectacular. To finish that thing, the whole time I had to think of that stolen cheesecake on Friends from Little Mama's Bakery in Chicago, IL. I was not able to try their food so I can't really rate it fairly. But based on the dessert, I would have given it 3 stars. read more

Service was terrible. We drove 30 mins to try their famous steak sandwich. We walked in and stood at the register for 10 mins, while the staff completed ignored us. Another customer came in after us from the street side of the business and they were told they needed to go to the other side of the counter where we were standing. When the get they round the counter the staff ask them for their order (a steak sandwich). Fine no big deal. Then the staff run around again for another 5 mins, before even acknowledging us. Finally I order the $36 steak sandwich. "Sorry sir we don't anymore available". We walked out. I understand running short on supply, but some common courtesy would go along way. read more

I understand food cost, cost to pay employees, cost to lease a space etc. I just can't get my mind around the fact that it's $36 bucks just for the sandwich which does includes either french fries or yucca fries. It's a rather large portion. Arrived 30 minutes prior to opening as I heard that these Thursday sandwiches go quick and by 11 when they open the line can be long. My favorite restaurant in MRM! Authentic Brazilian food! The chicken/cheese and the plain cheese pastels are my go-to, and they are both offered on the menu all the time. But the stars of the show are definitely the picanha sandwich, the picanha cheese bites and the picanha steak pastel. ALL THINGS PICANHA! Unfortunately, these items are not on the menu every day (assuming they're more labor intensive?), but you can follow on social media to see when they are available. Usually Thursday, Friday and Saturday are good days to keep an eye out. Doctor Kustom is a food stall at Mother Road Market in the Tulsa Market District along historic Route 66. Mother Road Market is a community space, where guests can shop & enjoy diverse food & retail concepts under one roof. In addition to nearly two dozen food stalls is Kitchen 66, Tulsa's kickstart kitchen + food incubator, which features a rotation of food entrepreneurs. Mother Road Market is situated in an industrial warehouse-type building leading into a bright & colorful food hall. The food court is clean w/ ample seating space both inside the hall & in its covered patio. Doctor Kustom Thursday's menu features the Picanha Sandwich. Customer service was solid. The staff was welcoming & fielded questions regarding the menu. There was a 30-minute wait for food, and I appreciate the staff informing me of the wait prior to paying for my meal. Believe me, it was worth the wait. I ordered the Picanha Sandwich w/ Fried Polenta, Passionfruit Mousse, & a Guaraná Antarctica. I generally steer away from polenta, but I am now a fan of fried polenta. The polenta had a nice balance between the exterior crispiness & the interior creaminess. The finely grated parmesan cheese on top made it hard for me to stop eating. The steak was prepared a perfect medium rare & was tender & juicy. Every ingredient had a purpose, from the creamy, spread to the greens to the generous amount of Havarti to the Ciabatta bun. I would have waited double the time to savor this meal. I enjoyed the passion fruit mousse. It was creamy & just sweet enough with a nice tartness. I would have preferred my mouse seedless, but that is solely a personal preference. The Guaraná Antarctica reminds me of a tart berry-flavored ginger ale. I would happily come back on a Thursday for the Picanha Sandwich or anyday to try a pastel. Doctor Kustom also hosts a Chef's Table on Tuesday evenings - but plan to book well in advance as they are booked for 2024. Doctor Custom was the best of the bunch in my book The focus of Doctor Custom is Brazilian Street Food. The main event is called a Pastel. This is a meat or cheese pocket in fried dough. The dough is similar to the old fried version of McDonalds Pies. Careful, contents will be hot, and delicious! It was great. Lots of filling options and we had a couple. Both were great. Oh my, Doctor! Give me all the beef options here! If I'm at MRM through the week, there's a good chance I'll get a beef pastel- a lightly fried pie with a thin crispy crust and cheesy goodness, right here. IF and that's a big if, I'm here early enough on a Thursday, I will splurge for the picanha sandwich. It's is 8oz of delicious beef with some baby lettuce and melted cheese in between ciabatta bread. I easily get 2, sometimes 3 meals out of it. If I want something liter, they make great açaí bowls. They will make it vegan if you want them to swap the condensed milk for agave. Tried them when they first visited the MRM at the pop-up kitchen...had the Picanha sandwich then and it was incredible...juicy savory steak cooked to order (strongly suggest medium rare) then sliced and stacked on a ciabatta bun with cheese and OMG it was incredible....hands down the best steak sandwich I have ever had...served with a stack of plantain fries with shaved Parmisian cheese...and we've been back since they opened a regular spot a couple of times for the same edible ecstasy. Upon biting into the sandwich, my taste buds were instantly stimulated with an intense rich beef flavor that is so juicy it is truly incredible. While biting, you cannot help but slip into heaven. Pros: My husband and I really like the coxinha. That filling is so satisfying. The beef pastel is a meat pie that can be customized! I didn't know that the first time I went there. The first time I went, it came with olives (yuck). The next time, they were able to do it without the olives and added jalapenos. I love pastry, and it's difficult to find savory pastry in the Tulsa area. I am so glad to learn about coxinha and pastels. Coxinha is a great appetizer. It was like eating chicken salad that's covered with a crispy outer layer. We like both the chicken and beef pastel. You can ask to add jalapeños, onions and even an egg to your pastel. I'm giving this place 5 stars for great food and amazing service! (Wonderful people own this place). I didn't know what to order so I said surprise me, I like everything! I ended up getting the Calabresa Pastel, a Coxinha along with a can of Guarana. The Calabresa is a light crisp pocket of cheese and meat deliciousness. The Coxinha remind me of hush puppies only not sweet and filled w/chicken and then you dredge them through a yummy cream sauce. The drink was wonderful and completely different, a must have. I'd go again for sure. The only drawback is the name. I have passed them more than once because at a glance I had no idea what they were. I've been told that a name should tell what your business is.
