I think the first thing you might notice is that a lot of their curries have a touch of sweetness, and pretty much all of their curries have a consistent texture. They do an amazing job making each curry silky and rich and flavorful. Every dish tastes fresh and unique in their own spice profiles and marinades. I highly recommend the paneer tikka masala, chicken makhani (very similar/the same as butter chicken I think), kitchen masala, and basil curry. Also, their actual restaurant experience is very nice too. The staff is very courteous and professional. The restaurant is large, vibey, and clean. There are two reasons I don't give Kathmandu a 5 star. The first that both me and partner almost always need to add salt to the dish. I could see why someone might write off Kathmandu if they went a few times and wrote it off because they never tried adding salt to their dish. The second reason is that the spice level isn't as consistent as I'd like. Sometimes, asking for medium spice level results in almost no heat, sometimes it borders on too much. Sometimes getting hot spice level is hot but enjoyable, sometimes it's very hot even for me. Mild is consistent but Id guess that's because they simply don't add extra hot chili powder or something like that.
