When you do need to put them in th fridge when you are ready to eat let them sit out for an hour but if you can't wait put them in the microwave for a minute to warm them up for the squeak. They have lots of different Ellsworth cheese products, along with a bunch of other Wisconsin made items. We were on our way home from Thanksgiving in Minneapolis. The snow was coming down, and we decided to take a break and grab some lunch. Perfect timing to stop in at the creamery and try one of their famous grilled cheese curd sandwiches. It was noon and a few other people had the same idea. The several staff members we interacted with were all friendly and helpful. I got the sandwich and my wife got the Hot Chicken Tortilla soup. Both were very good. The bread was a thicker Texas toast and nicely grilled. The cheese curds had been melted, but you could still make out the curd shapes. There was a small amount of BBQ sauce that gave it a bit of a tangy flavor. I would have liked a bit more of that. Next time, I would like to get there earlier to check out the actual curd and cheese making process.
