Yum! Breakfast sandwiches here are great! We loved the croissants and strawberry pop tarts, too. This place is small and casual, and the perfect place to have a filling breakfast or sweet treat if you don't feel like getting dressed up or don't want to spend a ton or cash. We love Edelweiss Bakery in Prior Lake, so when it came time to order a small wedding cake, my first thought was of them. I worked closely with Laurie, the owner, to create something we would love. We wanted chocolate upon chocolate with candy and chocolate covered strawberries. We also wanted pretty. And wow did Edelweiss deliver! We were thrilled with how pretty it was, going over every detail and ooo-ing and ah-ing before our meal was over and it was time to dig in. The cake was moist and the frosting not too sweet, creamy and delicious. The chocolate covered strawberries on top were beautiful and very tasty and the other pieces of candy were wonderful too. There were many yummy noises at the table while we were devouring it. I can't recommend Edelweiss Bakery in Prior Lake more highly. I used to like their pastries when I ate sweets. Today my mom treated my sister and I to lunch. We were going out for supper later so I opted for creamy tomato soup. This was very good with bits of tomato throughout. Also comes with some baguette slices. Why the 4 stars? The temperature of soup was lukewarm. Granted its nice not to burn the roof of your mouth but right at noon this soup should be hot. I thought of a fellow yelper Jim L and how he might like this soup as he seems to have tomato soup with croutons almost everyday for lunch. read more

Get the donuts but save the honey buns for me!!! These are the best I've ever had. Divinely sticky and gooey. A total mess to eat, and worth the bath you'll need afterwards. A cute little town with plenty of free parking. Come early as I'm sure they run out fast. read more

Although the line was out the door it was worth the wait. I ordered the French Toast with a side of bacon and it was perfect. The regular black coffee was great as well, which I appreciate a quality blend. The only reason I went 4 stars is that I was underwhelmed by the cream cheese danish, which is one of my favorite pastries. I feel like lunches have really gone downhill. They never have soup available and last time I was there my grilled cheese was the end of the bread loaf and very small. I would love to see them up their lunch game, more options then just a few ok sandwiches. I would come more often if they had soup and better salad. Update: new owners have done a great job! This bakery is absolutely fantastic. Who would have thought it would be so hard to find round pumpernickel bread for spinach dip in Minnesota. I called all my local bakeries in Bloomington, the specialty bread shops and the big name and chain grocery stores to no avail. Although Edelweiss doesn't normally carry the round bread I wanted they were very happy to make it for me. Price was very reasonable and the bread is deliciously fresh. Best part is when you go to pick it up you can treat yourself to their fabulous cookies! By the way, this review was typed as I ate their bread with my spinach dip. read more

To all the haters mentioning how they run out of a certain product: you have no idea how a restaurant or bakery. Of course the most popular item would get sold out at a SMALL BATCH, ARTISAN BAKERY. Nothing should get thrown out or wasted. There needs to be time to prepare and proof each item. Even the cinnamon rolls at a gas station run out first eventually. Best advice? Get there first. Super charming little place! Great service as well. I have a giant sweet tooth and hopped in here to pick something up for it. The girl behind the counter was very enthusiastic about helping me select my cronut. I was agonizing over the other case and she suggested the peanut butter brownie, which is right up my alley. So lucky to have stumbled onto this place. We were driving from Mystic Lake Casino home to Austin and found this little gem for breakfast. I had the granola parfait. The first time that I have been here and it definitely won't be the last!! Ordered a large coffee with 2 shots of espresso & sugar free marshmallow syrup. Place can get pretty busy but I really love the fresh pastries here. I usually order them by the box. Favorites are the apricot danish and the raisin danish.
