The food and service were excellent but the problem is the portion sizes were too small. You can buy, like, 5,000 eggs - probably a cargo van full of eggs - from CostCo for probably $3.37. For a $15 egg-centric dish, throw an extra egg or two in. It might cost an extra penny or two but the customer doesn't go away pondering whether or not to stop at Burger King for a $2 double sausage biscuit with egg. The overall interior environment is not what you'd expect. It has a bit of simplicity to it and does feel a like a quaint European cafe of sorts, as some of the other reviews have mentioned. The staff is small so don't expect a fast food/drink service. Coffee/Tea was fantastic however and the food dishes extremely unique. Overall flavor was great with spices I didn't recognize which was a bit of a surprise but the food is very evidently good quality. We popped in on Sunday for brunch and I was pleasantly surprised to find such a unique and delicious spot. The server was very attentive and the food was excellent. I loved the extra touch of edible flowers. The atmosphere was just right and the space cozy. I get the feeling the menu changes often so be sure to check if you have your heart set on a certain dish. We stopped by this cafe after the nearby farmer's market got cancelled due to a potential thunderstorm. I got the shakshuka and the drink "polar opposite," which is essentially a fancy undertow. Ok seriously how cute is this place?!!! I'm completely obsessed with it! I opened the door and felt like I magically stepped into a bistro in Europe. Not to mention the man who was working had very European vibes to him as well. I loved it. The atmosphere is relaxed, casual, but also very posh. I can't speak highly enough about the decor and atmosphere Eggshell Bistro provides. Now the good stuff, the food and drinks... I got the Kyoto iced coffee and it was the perfect amount of sweetness. I'm typically a black coffee type of gal, so I don't like a lot of sweetness, nor do I really like milk in my coffee. But I decided to go for it since it was organic milk and he said it pairs nicely with the shakshuka that I also decided to get. I was the perfect balance. I would definitely get this drink again. As I said, I got the Shakshuka for lunch. I didn't really know what it was but I vaguely remember a friend posting about this meal while she was in Morocco so I decided to try it. WOWWWW. So heavenly. Perfect balance of flavors. Its bold, in sends your tastes buds tingling, it finishes so nicely. It pairs really well with the grilled baguette too. I would get this over and over again. It's also the perfect portion size. Not too much, just enough to make you comfortable but not overwhelmingly full. This dish is irresistible, a must try! The prices are a little more than your typical lunch spot but WELL WORTH IT. I will pay more for quality all day every day. This is a hidden gem in Indy. I'm surprised it hasn't gotten more attention. Honestly, one of the best meals I've had here in Indy. I typically work through my lunch so I can leave work a bit earlier... but this place will make me keep taking lunch breaks. I'll be back again and again and again! Side note - thank you Eggshell Bistro for using paper straws instead of plastic :) EXTRA side note - After reading through some of the reviews I must comment on something. Many have said the service was poor. But I disagree. While yes, we are in U.S., I think this restaurant was a true European experience even down to the service. Europe has a much different view on service than we do here. They do not check in on you every 5 minutes, and they do not rush you with a bill. If you want to sit for hours then you sit, and you let the server know when you're ready. I love the relaxed culture that Europe has. We rush things and demand too much in the U.S. some times. Ayayaya. Please note, I rarely drop a two star review. I get what you're going for - a charming European style cafe with laid back service. Alas, I have never been to a European cafe with such terrible service. I'm the slowest eater I know, I totally get taking your time to enjoy the experience but when the server seems soooo laid back that he could give two poos if you get up and leave there seems to be a problem. For example, our check was dropped off on an ipad and we were expected to figure out how to split the bill and pay and he seemed ticked when we asked for help/didn't want to mess up the system. They make incredible drinks and food, don't get me wrong. I also appreciate that they off Kyoto cold brew coffee (which is both delicious and beautiful). Unfortunately, I know several other places in town with incredible drinks and food that don't have to write a pretentious disclaimer on their menu about how "hands-off" service will be. read more

A friend of mine is a regular here and I think I will become one too! My first visit was yesterday, a Sunday, at 1pm. My friend warned me that if we went earlier there would be a wait and it would be slow service (everything made to order). This is not the place that shovels people in and out! You need to not be in a hurry. Slow down like Europeans do and sip on a coffee, make great conversation with your table and server... in general, just mellow into the dining experience. And this experience is one you will want to savor slowly. Every morsel was so so good! I had the rosemary ham tart with guyere cheese. BOMB.COM. I almost ordered a second piece but I ran out of lactaid (I normally don't eat dairy. It is not my friend). It was a perfectly executed tart. Not too moist or dry. The crust was flaky and buttery. It was accompanied by fruit, and not 'filler' fruit but banana, raspberry, grapes and blueberries (filler = bland cantalope and that nasty, completely lacking in taste green melon). The service was attentive but I have read other reviews to the contrary. My guess is that those were visits during peak hours. I'll have to test it out and update accordingly. My friend ordered some sort of reuben tart that looked amazing! It even had sauerkruat. Lastly we ordered a small portion of grits that was sprinkled with moroccan spices (sumac I believe). It was an interesting and delightful combo. There were some sesame seeds too, adding a nice contrast in texture to the grits. Looking forward to visiting again to indulge in the carefully crafted coffee offering. This trip I had an oolong tea that was very freshing, and was served in a clear teapot. I probably had five cups and still had more to drink. Lovely interior too. You will have plenty of art to look at and be surrounded by greenery. A true Carmel delight! read more

I don't know if I should give Eggshell Bistro a full review because I didn't actually get to eat here. But, I will post this so that hopefully Stephen owners will take some constructive criticism to make their business better. Style-wise this place had everything going for it to emulate a classic French bistro -- vintage decor, gypsy-swing music playing in the background, Wait staff dressed in gray denim shirts with newsboy caps, and a fantastic French-style menu (complete with quiche, tartes, and pastries. Loved the vibe they were going for. But, the service is where they definitely need improvement. When we arrived, the restaurant wasn't busy (though I did notice that quite a few tables had not yet been bussed and cleaned.) We had a group of three people in front of us, waiting to be seated. There didn't seem to be a designated host for starters, so none of the wait staff felt the need to approach any of us waiting at the door to seat us, presumably because they assumed any other of their counterparts were on top of it. So we waited at the door for probably about 10 minutes. After they finally acknowledged us and indicated a table for us to sit in, the server did not indicate if he would be taking care of us or if there would be another person assigned to our table. Another server presented us with a bottle of water and glasses, but didn't ask us for drinks or if we were ready to order. We waited for another 10-15 minutes for someone to help us, and by this time I was quite hungry and we had another place to be. So, we got up and left. I can tell this place has put thought behind their image, and I bet the food is good based on the Yelp pictures I've seen and other patrons' more positive experiences. Had we had more time, I would have been fine waiting. But, Eggshell Bistro's service was just too slow for us. I hope they take this constructive criticism to heart. read more

My husband and I really enjoyed our first visit here! Thoughtful, well-presented dishes in a charming bistro atmosphere. I had Shakshuka and a wonderful coffee sourced from Rwanda. The Shakshuka was delicious with just the right amount of spice. The coffee was light, mildly sweet and floral. My husband had Shirred Dukkah Egg, and he showed his approval by quickly cleaning his plate. He also kept sampling my Shakshuka. This place offers a variety of dishes, coffee, and teas reflective of many cultures and cuisines. We will visit anytime we are in Indianapolis. P. S. I forgot the bread you get on the side. I'm declaring this as the Milktooth of Carmel that you don't hear about as much as you should. Think: modifications declined, relaxed service, thoughtfully prepared food, etc. Don't come here in a rush or particularly starving, as coffee and food are slow to arrive to your table. I ordered the shakshuka, one of Eggshell's most popular dishes (Moroccan-spiced tomato base, habanera, onion, garlic, kale, chèvre, baked hen's egg and grilled baguette). Though a small portion, it was worth the wait. And that grilled pretzel bread? Give me more! With tip, my bill came to ~$15, so I wouldn't dine here regularly, though. What a neat find! Definitely a place for the foodies out there. A few things to know before arriving: 1. The food is unique - I got a salmon dish with rice in an Indiana Curry mix. Very good. 2. There are several coffee/tea options, including cold drip brewed coffee 3. The restaurant will take you back in time - prepare for some antique decorations 4. There's not a lot of seating and the space is somewhat limited, so prepare to sit close to other parties The only thing I wish I could've changed about my experience was that they were out of a few items on the menu. Including main dish I was wanted to try and the type of tea I wanted. Not a huge deal because the substitutes were really good but I was kind of bummed. It's exceptional really on all fronts, and I love how it clashes with the rest of Carmel's Lego-Land design. Caveats? Sure, there's a couple. I'm going to start with the good as there is very little. Having been to Paris and fined extensively in Pigalle arrondisement, the interior brings back lots of pleasant memories. That's the end of that. We came in at 10:21am. Waited a while to be seated, and waited 20 mins to order. Another 10 mins just to get our coffee order. Latte and a cappuccino were mediocre, sour and under extracted. Unacceptable considering the price they ask for them. Well, it's now 11:20 and we still have not received our entrees. An hour after we came over. When asked about how much longer, the waitress snarking replied that she doesn't know and will check. She obviously never checked. Prices are ridiculous and if they're attempting to recreate Parisian relaxed dining experience, they've missed the mark by a mile. I would give zero if I could.
