The complaint I have is that they scrimpt on the sauce. I can make a ground beef or bean burrito. I do not order this for something I can make myself. I order it for the sauce and I think they should add at least an additional 1/4 cup to what they serve so loyal, long time customers feel like they are getting what they came for. I think the days of relying on the Broncos theme is over. Now showcase the quesorito as it should be and give your customers some sauce.

There are plenty of Mexican restaurants to choose from, but finding one that genuinely reflects our Mexican roots is much harder. As a Mexican from California, I've always believed California sets a very high standard when it comes to Mexican cuisine. This time, however, El Colima proved that Colorado absolutely has a place serving real, authentic Mexican food. The portions were generous and satisfying, the ingredients were fresh, and every dish was full of flavor. You can tell they take pride in both the quality of their food and the overall dining experience. The service was outstanding, and the atmosphere was warm and welcoming. The Doritos nachos are another favorite. I know how that sounds, but trust me. Order them. The chips and queso, pastor tacos, and asada tacos are all solid too. And if they have the coconut frozen margarita, get it. Add pineapple and suddenly you're mentally on vacation. I've been here for happy hour, brunch, and dinner, and I've always left happy.
