First off, I've never seen a Mexican restaurant this packed. The place is super colorful with all the traditional décor, murals, and fun wall art. We were seated right away, and the staff was hustling the entire time. Even with how busy they were, our food came out pretty quickly. The portions were huge, and everything had great flavor. My only complaint was the mango margarita, it tasted more like mango juice than a margarita, they were skimping on their tequila apparently. They also have out several different hot sauces, which was a nice touch if you like a little extra heat. If you're visiting the Ark Encounter and craving Mexican food, I'd definitely recommend stopping here. Great food and fast service, plenty of parking too.

Both of the highchairs there were broken and did not have functioning buckles. Then, when it came time for a diaper change, there was no changing table and we had to put our diaper mat on the floor -- which clearly had not been cleaned the night before because they had just opened and it was a mess. When ordering, several of us were told that our preferred dishes were unavailable. So, after changing my order to something they actually had, our server then brought me the wrong order and proceeded to argue about it. They also alarmingly stored their beer in the middle of the dining area. So, after this experience, we will not be returning.

Perfectly deep fried catfish filet in a cornmeal crust served over a beautifully seasoned jambalaya with a crawfish etouffe sauce with crispy brussel sprouts. The fish was so moist and full of flavor. I think this will be a spot we definitely come back to. There are some growing pains. They were beautiful with the beef, bacon, cheese, sliced onion and tomato and special sauce. We could just get our mouths open enough for a bite. Wonder how that works with the double burger.
