Don't do it, y'all. Just keep driving. The salsas are weirdly flavored with random bombs of heat that don't really make sense. The cheese enchiladas were hardly melted, served cool and way undersauced (dry). The ranchero sauce was weird- had celery in it for some reason? Refried beans had a sweetness to them I didn't appreciate. My brother got the tamales and they were so bad we're worried the rest of our trip down I-35 will be interrupted by tummy trouble. Stopped by on our way back from Waco and we could not be more impressed. This place is clean. The floors, the bathroom, the windows. We were immediately sat and the waiter took our drink order. We were brought chips and salsa that was just right. Big pieces of onion and cilantro with a really great taste a fresh chips. We ordered an 11 which is three chicken enchiladas with green sauce and rice and beans. We also ordered a 17 which is a taco and two cheese enchiladas with rice and beans. I am very picky when it comes to Mexican food since I am full Mexican but I when I believe something is good, I give them the credit it deserves. I am sorry but the food was awful and pricey. I asked for a milanesa and it was over seasoned and dry. My mom asked for the caldo de mariscos and there was no mariscos at all, not a single tiny shrimp, just vegetables. I asked for a bolillo and they gave me white bread. I asked for jalapeños and didn't get any. No straws. I am actually not mad, more like sad. The service was good, the girl who called me to update my order because they didn't have something I wanted was very nice and kept apologizing. And the girl who gave me the food was also very nice. Did the owner notice how our waitress went to refill my tea the first time and then walked around visiting other guest, she was gone so long that when another waitress brought out the food she ask where my drink was? Skip it! Wow, reading these reviews and they just could not be anymore opposite from our experience. It took a good five minutes for us to even be seated, it wasn't busy and several employees walked past us, completely ignoring us. After being seated, we were given chips and salsa immediately. This was the only good part of our experience. We were told our waitress would be by to take our drink order. After 18 minutes, my husband went to the counter to ask about a waitress. At that time, we were told someone would be by shortly. An employee came by to ask if we wanted more chips, but it took another five minutes to have a waitress to stop by because apparently the chip and salsa lady's duties don't extend to supplying drinks. I'm sure you're wondering why in the world we wouldn't have left already. I wanted to so bad, but it was our son's tenth birthday and he wanted to eat here. So, we placed our drink orders and ordered queso, an order of tortillas and bean and cheese nachos. By the time that we received our drinks and queso, we didn't have any chips left. Our waitress dropped off the queso clearly seeing that we had no chips. And, in a shocker to absolutely no one, no tortillas were brought with the order. (The nachos weren't brought either, but we knew that would be asking for way to much.). I assume that most patrons of this restaurant eat the queso with a spoon because she seemed confused that we would want chips (and tortillas) WITH the queso. It took at least another ten minutes for us to get the chips and tortillas. By that time our queso was cold. Now, you would have expected to get the chips and tortillas before the nachos, but the nachos actually beat them! Also, an order of flour tortillas consists of only two tortillas. So, yes we shared two tortillas between four people. And, as expected, my husband had to nearly go into the kitchen to get another order. As far as the food quality - the chips were good, very greasy, but good. The queso was melted generic velveta and lumpy. Nachos were bland, very, very bland. We decided that we had done enough to fulfill our son's birthday lunch request and left without ordering an entree. read more

We were on our way from Dallas to Austin when, after our second antique mall stop, we decided to stop off for some food. Initially, we took a spin around the massive, vacant outlet mall in Hillsboro but found nothing outside of chain fast-food joints. Since my girlfriend had been hankering for some Mexican food, I decided to turn to Yelp and discovered El Conquistador on the otherside of the highway. Thankfully, El Conquistador was closed. So we headed a little up the road to what I thought was a little taqueria. From the highway it had looked abandoned so I wasn't sure if we would be able to fulfill the wish of Mexican in Hillsboro. The interior is kitschy and simple and cheap but the food - wow. Now I've never actually been to Mexico but I can safely say this is some of the best I've had inside or outside of Texas. I had a barbacoa burrito and we split another chicken chalupa and a pork gordita. Everything tasted wonderful. And the dish sizes are very reasonable - just the proper amount of food, in my opinion. None of this burrito-looking-like-a-swollen-football nonsense you get at so many of these newer Tex-mex places. The chips were crispy and not too oily. The service was friendly but not overbearing. Be warned though, the place looks closed. Its weathered exterior and mirrored windows scream "methlab" but inside is a bounty of delicious, spicy treats (complete with tiny candy stand). read more

Who knew this area would have great Mexican food? Beef Fajita nachos & chicken quesadillas & 1 beer = aprox $20 before tip. Hellova good deal for great Mexican food! Salsa was definitely fresh, had a slight smokey flavor. Chips were clearly handmade and fresh. Ingredients in the meals were fresh and delicious! The fajita beef was chopped in super tiny chunks which was weird but it was still delicious! Service was FANTASTIC! Food is pretty good. It doesn't look like much on the outside. Queso probably needs some work as it looks like it came out of a can. We've been multiple times, including when they were in the old Dairy Queen. This time service was the worst. It didn't help that we'd be traveling a few hours and were ready to get home. We sat for 30min before our food showed up. The waitress sat and talked with another table for awhile, went to the back, then came back and said there was a problem with one of the orders - which delayed the meal even further. Then my daughters chicken strips didn't come out until the rest of us were done, my son didn't get his tortillas at all. At least they removed those from the check. To add to it, some people came in peddling banana nut bread for their charity and the restaurant gave them permission to solicit to the customers. Now, for the record, we donated to the organization later because it's a worthy cause, but to do so during our dining wasn't for the restaurant staff to decide. There were only a few tables so they weren't busy. A few of the staff were standing around and doing other things as we waited and waited. read more

Oh wow....where to start. My family stopped into today as we were passing through, went shopping, and were starving. I had never been here and was a little apprehensive based on the recent reviews. The "new" building is nice with plenty of parking. The confusion sets in when you step in the building. There is a "Wait to be Seated" sign, but no hostess stand. There is a cashier's stand that appears to be used for a hostess stand, however there is no acknowledgement when you walk in who is supposed to seat you. There is not really room to "wait" for a table. A couple benches, but the the place was very full when we arrived, so we stood outside. We were quickly seated and our waitress took our drink order. When she returned, we ordered food and queso. We literally saw her two more times all meal. By the time the queso arrived, our chips were gone. I walked up to the cashier's stand (where our waitress was standing) and requested more chips. Chip deliveries kept being delivered to literally every table around us. We asked a 2nd waitress for more chips as well......still nothing. Finally, one employee stopped by and came back with chips within a minute. This took about 15 minutes from original request to getting chips, after asking three people. Our food was delivered, however, they took my daughter's meal back to the kitchen without any explanation (my food was not delivered at that time). My wife and son started eating so that their food would not be cold. My daughter's meal came back out after about 5 minutes. The woman who delivered my daughter's meal asked "Is there anything else we can do for you?" I replied that my meal had not been delivered. About 5 minutes later, they delivered my meal. It was not "hot", so I do not know if they just forgot to bring it or if they had to remake it because they forgot to order it. After I finished my meal, I decided to go up and pay for the meal. The lady handling the register was oblivious to the two families waiting for a table (they had been standing there without anyone approaching them) and myself who was waiting to pay. I was trying to "wait" behind the two families as they were obviously there before me. As I was waiting, a different lady walked right in front of us to pay and the lady behind the desk serviced her without addressing the families waiting or myself. Finally, the woman who brought the chips addressed me and checked me out. She was the only person in this building who acted like they were in the service industry. I really do not understand how this place has been given anything over 3 stars. The food was 3 star quality as it is what you would expect for the price, wasn't great and wasn't horrible. However, the service WAS HORRIBLE. None of the staff acted rudely, but how oblivious can you be to serving your guests? I am not sure what happened to our waitress, but she literally disappeared for 15+ minutes. 3 star food plus 1 star service = 2 stars..... I assume this restaurant is shooting fish in a barrel, as there does not seem to be any motivation to change. Hillsboro is a small town with few options, so why provide great service? They really need to fix their check in/check out process. They basically need someone dedicated to each. read more

Ignore past reviews that mention their building being old and ugly...on August 23, 2016 they opened a brand new and beautiful building at the same address. I love authentic Mexican food, not just the Tex-Mex version. El Taco Jalisco is the best Mexican food in Hillsboro. My go to dish is the Milanesa (it's like a Mexican version of a German wienerschnitzel). Their refried beans and tortillas are delicious. Be sure to order an Horchata to drink. read more

I was following my friends to dinner and they pulled up to a pretty janky looking establishment but they assured me it was going to be great. I'm glad I believed them. Inside had a homely interior and we were greeted by an extremely friendly waitstaff that never let our chips and salsa run empty. I ordered the combo platter and it didn't disappoint either. I'm not entirely sure which was which, but all three meat tubes (tamale, burrito, ???) were tasty and completely covered with cheese. It was awesome.
