My friend and I went to the Valentine's day pop up! They had crafted cocktails and the food was definitely a reason to come back. Our waitress was wonderful, and our bartender Toni was fantastic! It was such a fun place to hang out with girlfriends or a romantic date. Sean the property manager even came over and checked in on us. I always appreciate when the staff truly cares about your experience. Will definitely be returning for the brunch next time!

It's the holiday season & we had the chance to preview Hilton Denver Inverness' Blazing Bright pop-up experience. This cozy & oh-what-fun limited time Christmas experience is open to the public from November 25th to December 31st (Tuesday-Saturday). Reservations are recommended. We arrived at Hilton Denver Inverness & valeted our car. We headed inside the hotel and made our way to the Fireside Bar & Lounge on the first floor (this is where the Blazing Bright pop-up is being held). Oversized ornaments, wreaths & festive décor were donned throughout the space making it the perfect place for a holiday gathering. We were seated on a sofa & lounge chairs by the fire. It was snowing outside and the setting couldn't have been cozier. We got comfortable & began enjoying all that Blazing Bright has to offer. I'm talking sleigh shots, holiday inspired cocktails, decked-out charcuterie boards & light bites. The Fireside Bar & Lounge/Inverness staff were everything during our visit. The valet staff were friendly and quick on their feet. Our server, Danielle was the brightest light & made us feel that true holiday spirit of positivity & kindness throughout our visit. Hotel & Restaurant managers, Tammie, Stevie & Kyle were actively assisting all pop-up patrons with big smiles & helping hands. We were so impressed with this staff in their entirety. We started our night with Bad Santa Spritzers. The Bad Santa Spritzers were made with Titos cranberry & tarragon infused vodka, house grenadine & ginger, lime & La Marca. The tangy cranberry and herbal pine of the tarragon infused vodka went nicely with the effervescence of the La Marca prosecco. The Holiday Charcuterie Board was made with sopressala salami, Boar's Head salchichon, prosciutto, grana Padano, manchego, grapes, berries & dried fruit. The charcuterie board was great for sharing. The traditionally seasoned dry cured meats were salty, the hard cheeses mild yet savory & the fruits sweet. The "Bah Humbug Hot Cocoa" bar featured boozy holiday delights and more toppings & trimmings than one could imagine. This was our favorite feature of the night! The hot chocolate bar included numerous, festively rimmed mugs to choose from (chocolate, peppermint or nuts). We selected peppermint mugs and filled them to the brim with piping hot, hot cocoa. The hot cocoa topping options included house made marshmallows, donut holes, whipped cream, caramel sauce, holiday sprinkles, coconut shavings, chocolate shavings, crushed peppermint, gold croquant, silver croquant & chocolate dipped pretzel sticks. We had the choice to add alcohol to our hot chocolate and those choices included Titos ginger & mint infused vodka, Reposado tequila, Breckenridge Spiced Rum, Amaretto or Rumplemintz. The Nightmare Before Christmas Margarita was made with Suerte Reposado, J.M. Shrubb, acidulated blood orange juice & saffron simple. This cocktail was too cute. We poured the drink from the Jack Skellington ornament into the art-deco coup glass & enjoyed. The Angry Elf Peppermint Martini was made with Cruzan, heavy cream, Crème de Menthe, egg, brown sugar simple & cacao bitters. This cocktail had a strong cooling peppermint finish & was velvety on the tongue - it reminded me of an Andes Chocolate Mint. For bites we had the Duo of French Fries & Angus Beef Sliders and the Spicy Tuna Tartare. The Duo of French Fries & Angus Beef Sliders were made with parmesan truffle and rosemary garlic fries, aged cheddar, bacon & onion jam, house sauce and Irisee' (this can be made into a vegetarian/vegan option). The sliders were great bites of savory angus beef on slightly sweet buns. The Spicy Tuna Tartare was made with unagi, Sriracha aioli, jalapeno, ginger & cilantro. The tuna tartare was fresh and a unique blend of Asian flavors. The pieces of tuna were generously coated in Sriracha aioli which made for subtle spicy bites with underlying notes of umami. The Salted Caramel Brownie Trifle was made with dark chocolate mousse, salted caramel, brownie bits & gold croquant. Yum - this sweet and salty dessert was an elegant mini serving of fudgy brownies & fluffy mousse. The Seasonal Crème Brulée was made with eggnog crème brülée & ginger molasses cookie The Santa's Sleigh Shots were made with peppermint paddy. This was a minty, cooling Christmas shot to finish our meal.

    Pretty In Pink cocktail

Recently went to the Fireside Bar & Grill's Bar Cupid pop-up (open until March 2) and think it would definitely be a cute date night or Galentine outing, especially if you live around Englewood. To kick the night off, my friend and I ordered the Lavender Love Bomb and the Pretty In Pink cocktails and toasted to our (non-existent) love lives. For our dishes, we tried the vanilla bean squash soup (which was admittedly very vanilla-y), scorched fennel quinoa cake (a great vegetarian option) and pan seared salmon (the fish was cooked perfectly). But the star of the show was the duck fat frites. Fried in duck fat, coated in cayenne sugar and served with a creamy tarragon aioli, I think these might be the best fries I've had in Denver. For dessert, we ordered the chocolate dipped strawberries, white chocolate creme brulee and the milk chocolate mousse bar (which had a nice crunch thanks to the hazelnut praline and wafers it's served with). We washed all of that down with their Espress My Love and Some Like It Hot cocktails, which were our favorite drinks of the night. The space was also decked out floor-to-ceiling in pink and red roses and heart-struck decor. Totally recommend for a romantic evening or girls night!

My niece and I went to the Blazing Bright Holiday Pop-up Bar before Christmas and absolutely loved it! The drinks were very festive and delicious and we truly enjoyed the hot coca bar. Our server Soumia was spectacular! We will definitely return next year!

Came here for a small holiday celebration with family. Delightful ambiance with festive decor without over doing it. Their drinks were excellent and the food was amazing as well. Olivia was our server and she was absolutely fantastic, took great care of us the whole evening. I look forward to coming back again next Christmas!

    No reservations available.

Advertised as a Christmas bar in the same category as the holiday Miracle Bar was their first mistake. It's a hotel bar, decorated. Othing special. We debated leaving, but decided to support our server in an almost empty restaurant. ( even though no reservations available through open table?). Ordered an Ugly Sweater Weather mule which was delicious. Split the sliders, calamari and fries with the hubs as dinner. Good, not great. If you go, order the hot chocolate. Self serve bar was well stocked, order boozy and fill a plate with all kinds of accouterments.

    Ho ho ho martini

I'm so glad my friend and I picked this pop up bar for Christmas this year! The service we received from Danielle was incredible but also everyone else was so kind too. Everyone kept asking how we were doing. The ambiance was perfect, the decor was beautiful and the volume of the restaurant was at a great level. The drinks and food were incredible! We will definitely be back

Colleagues and I had lunch at The Fireside Bar & Grill inside the Hilton in Englewood, Colorado. I prefer vegan cuisine and so ordered a side of fries and the KALE AND MUSHROOM RAVIOLI - with roasted garlic, heirloom tomatoes, mushrooms, white wine, olive oil. It was well prepared, well presented, flavorful, well portioned, and delicious! The atmosphere is clean and open, with large windows looking out on the nearby patio and golf course. The wait staff is friendly, attentive, and helpful. I recommend The Fireside Bar & Grill confidently to anyone. Good food.

My companion had the soy citrus glazed salmon and the glaze was a little bit too sweet but otherwise the salmon was good. The couscous was crunchy and tasty done, but the raisins were an interesting and unexpected addition that didn't pair great with the salmon.
